Perfect Chicken Breast with Roasted Broccoli and Cauliflower

So I am working really hard to be healthy and get in tip top wedding shape.  I am feeling good about my workout routine, but people keep giving me desserts!  I have some serious issues saying no to free desserts...

This weekend I had a wedding shower, and the hostesses gave me the leftover cake to take home.  It was HUGE!  So, I brought the cake into school and my fellow teachers ate it for me.  It was a really tough decision, but I feel like it really shows growth on my part for doing that...

This dinner is another way that I am working at being healthy and awesome.  This dinner is also crazy yummy so that is even better!  I made some perfectly cooked chicken breast and then I roasted some broccoli and cauliflower.  It was an overall great move on my part!  

Pan Seared Chicken - take a chicken breast and sprinkle both sides with some salt and pepper.  Then, place it between two sheets of saran wrap and pound it with a pan so that it flattens.  Then, heat some olive oil in a pan over medium-high heat.  Add the chicken and cook for about 3 minutes.  Flip the chicken, lower the heat to medium-low, cover and cook for 20 minutes.  Test the chicken and continue to cook if it is not done.  It should be 160 degrees on a meat thermometer or have NO pink in the middle.  

Roasted Veggies -  Place veggies on a pan.  Drizzle with olive oil, salt, pepper, and garlic powder.  Toss and place in the oven at 400 for 20-30 minutes.  

That's it!  This dinner is simple, good for you, and quick!  Go home and make it!

My Nashville Adventure

I went to Nashville for a Marathon recently and here is a photo reel of everything I ate...

The best donuts I've ever had from 5 Daughters Bakery. My favorite was the Maple one, but all of them were crazy delicious and the perfect treat to have the day after a marathon! 

A celebratory Bloody Mary from The Frothy Monkey.  This was our day-after-the-race brunch spot.  Breakfast was delicious and it is located on a super cute street to walk around.  

Jackalope Brewery had the cutest taproom...go there! 

A trip to Nashville wouldn't be complete without some Hattie B's Hot Chicken! I went for medium, it was delicious,  and it was the first thing I really ate after the run so it was life-saving as well.  We also got all the sides because Bri is a vegetarian and he loved them! 
Not that special, but we carb-loaded at Bucca de Beppo and I just couldn't believe the size of this dish and the tastiness of those meatballs!

The Rock n' Roll Marathon Expo was super cute! 

This was a crazy good PB&J that I got at this amazing sandwich shop!  Clawson's Pub and Deli has great sandwiches and a ton of local beers.  This was the day before the race so I did not take part in the drinking, but I would love to go back and try some! 

On the way to Nashville we stopped at the Louisville Slugger Museum.  Bri had a blast and you get to see them making baseball bats! Plus, you get to take a miniature bat home with you! 

We also just walked around the city which is super adorable and we made a pit stop at Acme to check out some Honky Tonk and get a drink.  Overall, the weekend was fantastic and I can't wait to go back another time to check out more that this fabulous city has to offer!

Triple Mustard Chicken and Brussel Sprouts

Today is Good Friday and I am pretty sure I am the only teacher in Chicago working today.

With that being said, I also only have about 1/2 my students in class today.  So, today is a pretty silly day.  The students are catching up on any work that they have going on and I have been able to catch up on all of my grading.  It is a nice and relaxing day, but I am really excited for it to be over.

Tonight, Wisconsin is playing in the sweet 16 basketball tournament.  I am not a huge sports fan, but since I went to Wisconsin for college and my cat is named after one of the players I am pretty excited.  We have big plans to order in some delicious pizza and then just sit around and watch the game.  I can't wait!

Last night, I made this delish chicken dinner.  I am trying to use up all of the food in our place because we are moving in two weeks!  I was inspired by THIS recipe and then I just adapted it to work for what I had lying around and what I wanted to get rid of.  The result was super yummy.  I just love brussel sprouts and they tasted so good alongside the chicken.  I just had some of the leftovers for lunch and it was just as amazing a day later!


Triple Mustard Chicken and Brussel Sprouts

Ingredients:
2 tbsp extra-virgin olive oil
3 chicken breasts (about 1.5 pounds)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
1 cup red wine
1 cup chicken stock (I actually used veggie stock)
2 tbsp honey mustard
2 tbsp dijon mustard
1 tbsp yellow mustard
2 tbsp honey
1 lb brussel sprouts, stems cut off and halved

Directions:1. Preheat oven to 400 and heat 2 tbsp of olive oil in a cast iron skillet over medium heat.
2. Wash chicken and pat dry with a paper towel.  Mix the spices in a small bowl and then sprinkle generous amounts of the spices over both sides of each piece of chicken.  Use your hands to rub in the spices.  
3. Place the chicken in your skillet and let cook for a few minutes on each side.  
4. Add in the red wine and let cook for another few minutes.  
5. In a small bowl, stir the stock, mustards, and honey.  Pour this over the chicken.  Then place the whole skillet (covered) in the oven for 15-17 minutes or until the chicken is cooked. 
6. Place the cooked chicken on a plate to rest.  Place the skillet (with the juices) back on the stove over medium heat.  Add in the brussel sprouts and allow to cook for about 8-10 minutes.  Serve with the chicken.

Guest Blogger! A story of Fresh Pasta, Eggplant Involtini and Braised Chicken Thighs

My good friend, Shantanu, is an excellent chef. Last Friday, he invited us over for dinner because he "felt like making fresh pasta." I was super excited about this and I readily agreed to come over and help. We made:
  • Fresh Pasta

Sigh...it was a lovely meal and although it wasn't ready for 2 hours, it was a super fun night with some great friends and amazing food. So, without further ado, here is Shantanu:



Full disclosure: I’m the reason we didn’t have dinner ready until 9:30 last Friday, but to be fair, it was a weeknight, dinner was delicious, and I had a food craving to take care of.

Food cravings are definitely a thing, one that I experience way too often. Usually, it’s something that’s full of grease and flour, of minimal nutritional value, and almost always involve fried chicken. This time though, while being a bit heavy on the carbs, the food I was craving was just indulgent enough to be worth all the extra calories. And then after a long week of the chicago cold, nothing really warms you up like a bowl of fresh, homemade pasta.

Fresh pasta is one of those foods that’s incredibly simple, it’s four ingredients including the water to boil it in and some salt for seasoning, and yet so eye opening. How making a giant mess with flour and eggs leads to flowing, delicate strands, with just the right amount of bounce to each bite is almost magical (although really, it’s more science, but I’m done with work for the week and don’t have to do any more science until Monday).

While I very well could have just sauteed some shallots, garlic, red chili flakes, and tomatoes in olive oil and tossed in batch after boiled batch of freshly cut spaghetti, cracked open a beer and called it a night, pasta is more fun to share with friends. Especially friend’s that I’d planned to make dinner for but haven’t gotten around to it. Double-especially when one’s a vegetarian and you have the perfect reason to make a vegetarian meal.

As often as I cook for friends, I rarely have to cook for vegetarians. I’d always felt a bit of pity for Brian, often times the vegetarian part is merely a collection of side dishes, or is presented as the “option” while meat is the focus of the dish. Therefore, I decided to make this meal a vegetarian meal, that happens to have a meat option, because if you don’t some of your non vegetarian friends will text you asking if they can bring a steak for you to make for them. To be fair, I was flattered, because I can make a pretty mean steak.

If there was a vegetable equivalent of flank steak, I’d say it’s the eggplant. It responds well to being heavily salted, can be grilled, or rolled and stuffed, and has a nice meaty quality to it. I’d also say both are equally nutritious, although a bavette might be more nutrition for your soul whilst eggplant is actually nutritious. One of my favorite ways to prepare eggplant that goes well with pasta, while avoiding breading and frying it, is to make eggplant involtini.

Since I did have to have a meat option, I went with the foolproof chicken thighs. Because I planned to cook them sous vide, I started preparing those first. I was hoping to get them into the water bath before everyone arrived, but sadly Brian had to witness me deboning, stuffing the thighs with rosemary and basil, and folding them tightly in the skin. 

Once vacuum sealed, they still look pretty unappetizing; if he had any doubts about being vegetarian, I think they were gone at that point.

Once that was started, I could focus on the next longest item to prepare, the pasta dough. Preparing the dough itself is quite quick, however I could use time productively to drink wine and eat some cheese, which has the side benefit of letting the dough relax and develop some gluten. To make the dough, I heavily flour my counter (and my floor, and my apron) and pour about two cups of flour in a mound, making a crater in the middle large enough for four egg yolks and two whole eggs. Swirling the yolks and whites around brings the eggs together, and slowly pulls in more and more flour. The swirling goes on until the liquid resembles more of a batter, at which point flour can be added in a bit more aggresively, and once it comes together, the kneading can begin. I’m not much of a baker, but to knead my dough I do a simple fold, push, and quarter-turn. Fold, push, quarter-turn; fold, push, quarter-turn. This goes on, until the dough feels like the sticky part of a post-it, at this stage it’s almost done, so I let Jodie handle the kneading while I went off to make some tomato sauce. Incorporate a bit more flour until the dough is just tacky, and put aside. To store the dough, I wrap in plastic wrap and set on the cleanest part of the counter



With the dough done, I got the guests going to make the filling. Some lemon zest, ricotta cheese, and fresh basil all came together in what could make a pretty decent dip on it’s own. But then after I fried up the eggplants a little to soften them, they got stuffed with the cheese and placed in a pan with the tomato sauce, with some more drizzled on top and fresh mozzarella slices to melt all over them, and got tossed into a hot oven.

Meanwhile, I consumed enough wine and cheese for a bit so it was time to roll out the pasta. Again, flour absolutely everything and cut the dough into quarters. I slowly run it through the machine at the widest setting, tri fold, rotate, and pass through again. I do this a few times, helping knead the dough, developing it a bit before stretching it out. As the rollers get closer, the pasta gets longer, eventually ready to be cut into linguine. Arrange in little nests after it’s cut, and then toss them into boiling water.

While getting the water boiling, I sauteed some garlic and red chili flakes in olive oil, keeping it warm. Once the pasta is cooked, taking only a few minutes, I toss it into the pan with a nice ladleful of starchy pasta water, helping to bind the now flavored oil to the noodles.

Last thing to be finished off is the chicken, which I pulled out of the vacuum bags, perfectly cooked, and quickly seared it off, with a bit of help from the searzall. True fact: almost everything is improved by a blast with the searzall.

And at that point, I think we were all had enough wine and were hungry enough to not give much of a damn about plating, and just dove in. It came out pretty great, hopefully the rest of the crew thought so as well! And if it wasn’t, I don’t think Jodie will ever let me post on this blog again. (Jodie here...this is totally untrue :))

Crock Pot Buffalo Chicken Sliders

Last night I made breakfast nachos for dinner.  Yep, it has been one of those kind of weeks...However, that means that you all will learn how to make amazing breakfast nachos in the near future!

This week have been really busy, but full of good things!  On Monday, I did not have school so, of course, I went for a 12 mile run.  It had snowed recently and so that 12 mile run left me feeling very sore.  This led to me not wanting to run indoors for the rest of the week.  Something about a treadmill just makes me so angry.  So, I decided to bundle up and run my 2 other runs outside.  I left early in the morning (5:30) and it was actually quite pleasant.  I sort of like being the only one out and about in Chicago.  It is peaceful and left me feeling calm and relaxed.

School has also been going pretty well this week.  We are graphing sine and cosine in the precalculus group and in AP Calc we are looking into applications of integration.  Volume is a tough one, but today one of the calc students took a quiz on it and killed it!!! I am so proud and excited for her.  Planning for both of these courses has been a lot of work, but the students are so great and I really love working with them.  It is totally worth the effort!

Otherwise, the condo stuff is still moving along.  We are signing a boat-load of forms, showing our apartment to potential subletters, and trying to work out and manage all of our funds.  It's stressful, but I am so excited to move towards closing on our place.  I LOVE it!

So, one thing that has helped me get through this week has been the fact that I had a mountain of leftovers from that time I made Crock Pot Buffalo Chicken Sliders.  This was one of the rare times that I made a non-vegetarian meal.  This means that I have a ton of leftovers and no one to help me eat them.  So, I have had some pretty delicious school lunches all this week.  The chicken came out great and super tasty.  Then, I mixed some Yogurt Blue Cheese Dressing into some Broccoli Slaw and I used that to put on top of my phenomenal chicken.  YUM!  I am obsessed with this recipe and I can't wait to make it again for some sort of sporting event!  March Madness is quickly approaching and it would be perfect!

Crock Pot Buffalo Chicken Sliders with Blue Cheese Broccoli Slaw

Ingredients:
6 chicken breasts
2 bottles buffalo sauce (I used Sweet Baby Rays)
1 1/2 packets of ranch seasoning
Broccoli Slaw, 1 bag
2-3 tbsp blue cheese dressing (I used a Yogurt/Light one)
whole wheat dinner rolls (24-36)

Directions:
1. Place chicken, buffalo sauce, and ranch seasoning in your crock pot.  Cook on low for 7-8 hours.  After chicken is done, shred the chicken using two forks and leave on warm until you are ready to serve.
2. Pour the broccoli slaw into a large bowl and toss with the blue cheese dressing.
3. Serve with your whole wheat dinner rolls!

Happy New Year!

Happy New Year everyone!

Last night we had friends over to ring in the new year and it was a blast!

My little brother bartended (he even made his own menu!) and we had a potluck sort of dinner!  I made my Build Your Own Nachos with Crock Pot Salsa Chicken and my Lightened up Spinach Artichoke Dip.  Everything was a huge hit.  We also had Crock Pot Barbacoa, Baked Mac n Cheese, and, of course, tons of desserts.

We watched the ball drop, played funny charade games, and had an amazing time.

This morning, I made some french toast for my brother and his friend who stayed at our place and now, after some advil :), I am getting ready to hit the treadmill for a bit.

I'm not a huge fan of new year's resolutions, but I do think it is nice to reflect and refocus at the beginning of a new year.  2015 was great.  I ran my second marathon, got a new job that I love, and did a TON of wedding planning.  That being said, 2016 is going to be crazy epic.  First and foremost, I AM GETTING MARRIED!  I can't wait to say "I do" to my best friend and see all my hard work from wedding planning finally play out.  I am also planning on running marathons 3 and 4 and just generally staying fit and eating healthy.  Finally, tomorrow Bri and I have plans to talk with a mortgage broker about moving forward in the process of buying our own place!! I can't believe all this very grown up things are just around the corner and I could not be more excited.  So, here's to an amazing 2016!  Happy New Year!

Smokey Chicken Avocado Roll-Ups

I have one excellent lunch today.  I hosted book club this past weekend and I decided to make these cute chicken roll-ups for the ladies.  I also made a dip and a Caramel Apple Cake, but you will just have to wait on those recipes.

The Chicken Roll-Ups were super tasty, a huge hit, and I secretly made way too many with the plan of keeping some hidden away in the fridge for myself.  Now, I have an awesome school lunch!

Last night we had cheer practice and I just have to talk about it here.  It was an amazing practice.  The team members who were at practice did a phenomenal job learning three new cheers.  Plus, we reviewed a fairly complicated dance that I taught them and they looked great!  This team is getting better every day and it is so incredibly exciting to see and be a part of.  I am super proud of them.  With basketball season just getting started, I can't wait to see what these girl's can do and where they end up.  We're also working on planning bonding activities, team fundraisers, and a cheer clinic.  I just love how into it the team is and it is so much fun.  I was nervous about becoming a coach because it is so time consuming, but I know I made a good choice because it is so fun and I just love all the girls!

Smokey Chicken Avocado Roll-Ups

Ingredients:
4 Flat-Out wraps
1/2 lb smoked chicken breast, sliced thin
1 avocado
1 tsp lime juice
1 tsp siracha
salt and pepper, to taste
1 container roasted red pepper pesto
8-12 slices light, sharp cheddar

Directions:
1. Place avocado pieces, lime juice, siracha, salt and pepper in a food processor and pulse until you have a smooth paste.
2. Start with one Flat-Out wrap and spread some avocado spread over the first 2/3 of the wrap.  Use 2-3 pieces of cheese and lay them over the avocado.  You may have to break up slices to get a nice layer.
3. Lay slices of chicken over the cheese.
4. Drizzle the roasted red pepper pesto over the chicken.  Then, start with the end of the wrap that is not empty and roll tightly towards the other end until the wrap is completely rolled.  Cut into about 6 slices. Repeat this process with the other wraps.

Crock Pot Chicken Burrito Bowls

School has been going really well.  Cheer practice has started, we are already starting Unit 3 for math, and it has been so much fun getting to know my students.  I even got the chance to chaperone a field trip to a college fair with the juniors.  They were super into it and it was really great to see.  I love that I get to help them out and be part of the whole picking out colleges experience.  

I have also been busy with wedding planning, as the days count down, we are starting to get more and more into the smaller details.  This means lots of decision making, which is not always my strong suit.  However, it also means lots of fun and excitement which is what I am focusing on. 

And on top of all that, the marathon is right around the corner! I have 4 training runs left and 11 days until the big race!  I am super pumped, but also starting to get nervous! 

Now, for this recipe.  It was one of the easiest meals I had ever made and it made for some really great school lunches.  All you have to do is dump all the stuff into your crock pot, wait, and then enjoy! Can it get any easier?  Plus, it was really tasty.  I would put some of the chicken mixture into my school pyrex container, sprinkle a little cheese on top, and then add some avocado slices if I was feeling really fancy.  Yum! 

Crock Pot Chicken Burrito Bowls
(adapted from The Kitchn)

Ingredients:
1 1/2 pounds chicken breast
1 14.5 oz can diced tomatoes
1 cup chicken stock (I used vegetable stock because it was what I already had in the fridge)
2 tsp chili powder
2 tsp salt
2 tsp cumin
1 cup brown rice
1 15 oz can low-sodium black beans, drained and rinsed
1 cup frozen corn
Optional: Salsa, Guacamole, Avocado, Sour Cream, Shredded Cheese, Greek Yogurt, Green Onion...etc.

Directions:
1. Wash chicken and pat dry.  Place in the crock pot.  Put tomatoes, 1/2 cup stock, chili powder, salt, and cumin in as well.  Cook on low for 4 hours.
2. After about 4 hours, add in the black beans, brown rice, and corn.  Cook on low for another 3-4 hours.
3. Serve with a little melted cheese, guacamole, salsa, and sour cream or greek yogurt! It's really up to you!

Southwest Salad

Camp training is off to a great start.  We got to move into the schools yesterday and start decorating.  I'm really excited to see what this summer has in store!  

In general, this week has been really great.  Bri and I were in the Wicker Park area a few days ago and we decided to check out Mindy's Hot Chocolate for a special dessert.  Now, I know I'm trying to avoid desserts, but we had a special occasion to celebrate so I figured it didn't really count...that works right?  This place is super cute.  The atmosphere is great and although we didn't eat dinner there, the food that came out of that kitchen looked fantastic.  And then the desserts, wow.  I mean, we split a Chocolate Chip Cookie Tart and a Chai Hot Chocolate and both were just fantastic.  They even have these amazing homemade marshmallows!  If you are ever in the area, you gotta stop by.

I'm pretty excited to eat this for lunch today.  I have this goal of eating healthier this summer by watching my portions and avoiding desserts.  This salad was the springboard for the whole plan.  This salad is super delicious, full of nutrients, and it fills me up.  I found some Chili Spiced Chicken Breast at the grocery store which really inspired me to make a southwest style salad.  So here you go! 


Southwest Salad
Ingredients:
2 cups baby spinach
1/2 cup black beans, drained and rinsed
1/2 cup whole kernel corn
1/2 red pepper, chopped
1 Chili Chicken Breast, chopped
Directions:
Toss all ingredients together and then toss with the dressing.  You can use any kind of chicken that you want and any kind of dressing, but this combination is really great!

Happy Mother's Day!

Happy Mother's Day! 

Every day is mother's day.  I mean, what would we do without mom's?  Literally, no one would exist!  My mom is pretty amazing and I just wanted to say, I love you!  Bri and I are planning on having brunch with my mommy today and then dinner with his mommy later.  It is going to be a really nice day!

Crock Pot Honey Chipotle Chicken Wings

It was my school mentor's birthday last weekend and therefore chicken wings are on my mind.  I know that sounds a little crazy, but both of us love chicken wings so there you go!  I got to see her on her birthday weekend since we both live in the city and she had a really nice dinner!  

We went to Piccolo Sogno, which is this amazing Italian place that I have heard all about, but I had never been.  I was pretty pumped about going and it did not let me down.  This place is in the heart of the West Loop in Chicago and has unbelievable food.  We tried things such as seafood pasta, kale salad, spaghetti bolognese, and of course, molten lava cake for dessert.  It is a great place to have a special event at and it was awesome for a birthday dinner.  

This Friday, in honor of the birthday festivities,  I wanted to share this recipe for real chicken wings.  I had never cooked with chicken wings before and they were really yummy.  After a dip in the crock pot, these wings were incredibly tasty and the chicken fell right off the bone.  This is a great recipe for an easy dinner option.  Just make sure you leave yourself enough time to let the chicken cook!  I was inspired by Creme de la Crumb who used homemade chicken bites instead of wings.  If that interest you head on over! 

Crock Pot Honey Chipotle Chicken Wings



Ingredients:2 lbs Chicken Wings (or really any chicken part!)
2/3 cup honey
1/2 cup sugar
1/2 cup brown sugar
4 heaping tsp of adobo sauce (Just the sauce that Chipotle peppers are in)
1 tbsp hot sauce (I used Frank's)
1 tsp salt
1 tsp garlic powder
1/2 cup ketchup
2 tbsp white vinegar
2/3 cup water with 4 tbsp of cornstarch 

Directions:
1. Wash and pat dry your chicken.
2. Whisk all the ingredients from honey to white vinegar in your crock pot.  
3. Place chicken in the sauce and cook on low for 6 hours.  Start checking the chicken around 5 hours to see if it is done.  
4. Once cooked, mix the water and cornstarch together and mix into your crock pot so that the sauce thickens.  
5. Serve with any dipping sauce that you want!

Crock Pot Chicken Marsala

This morning I went for a run.  It started off great. I had planned out 9.5 miles and it was a beautiful morning.  Around mile 6, I totally wiped out because I tripped on the uneven pavement.  I proceeded to limp/run my way home and cut my run short by about 1 mile.  Now, I am sitting here with bandaids all over my knees, elbow, and palms and all I can think about is: "Only 17 more miles!"

I just signed up for the Chicago Marathon and I am very nervous and excited about it.  Right now, I'm in a little bit of pain due to my tripping injuries, but once I am better I am going to start training! I can't wait!

Today I am sharing with you one of my family's favorite chicken recipes.  In honor of Passover where we don't eat bread, this is a great dish! It is really yummy and the chicken comes out great in the crock pot!

Crock Pot Chicken Marsala

Ingredients
  • 2  cloves garlic, finely chopped
  • 1  tablespoon vegetable oil
  • 8  boneless skinless chicken breasts
  • 1/2  teaspoon salt
  • 1/2  teaspoon pepper
  • 2  jars (6 oz each) Green Giant® sliced mushrooms, drained
  • 1  cup sweet Marsala wine or Progresso® chicken broth (from 32-oz carton)
  • 1/2  cup water
  • 1/4  cup cornstarch
Directions

  1. 1Spray 4- to 5-quart slow cooker with cooking spray. In cooker, place garlic and oil. Sprinkle chicken with salt and pepper; place in cooker over garlic. Place mushrooms over chicken; pour wine over all.
  2. 2Cover; cook on Low heat setting 5 to 6 hours.
  3. 3Remove chicken from cooker; place on plate and cover to keep warm. In small bowl, mix water and cornstarch until smooth; stir into liquid in cooker. Increase heat setting to High; cover and cook about 10 minutes or until sauce is slightly thickened.
  4. 4Return chicken to cooker. Cover; cook on High heat setting 5 minutes longer or until chicken is hot.

Build Your Own Nachos with Crock Pot Salsa Chicken

Hi! I have so much to tell you all! I am on Spring Break and therefore I am able to seriously catch up on some of this blogging stuff :).  On Friday, I brought in lunch for Payday Friday for the math department, we had an early release, and then I was FREE! I have a week off from school to relax and finally catch up on sleep.  I am very excited about this.  My little brother ended up with the same Spring Break from college and so my whole family decided to go out to Arizona for the break.  We are staying in beautiful Scottsdale and having a great time.

Today I wanted to share some big news, as well as a "big" recipe.  My big news: I just registered to run the Chicago Marathon in October!!! It's something I've been dreaming of for a while and I am very nervous and very excited about running my first marathon.  I will be sharing my training experiences here and I am excited for the support and comments from all of you that helped me stay motivated when I was training for my half marathon.  I can't wait and I hope it goes well!

And now, my "big" recipe.  I had to cook lunch for a crowd this past Friday.  I went with a crock pot recipe and I doubled it so that I would have enough to feed at least 20.  This is half of the recipe and it will still make quite a lot of food, which is great because this is a recipe where you will want leftovers, its so good! I made a salsa chicken recipe in my crock pot, then shredded the chicken and served it on top of tortilla chips with all the toppings could could think of for nachos.  It was really yummy and a huge hit with my math department! In fact, it was all gone before I got any good photos! You will just have to use your imagination.

Build Your Own Nachos
(adapted from this recipe)

Ingredients:
Salsa Chicken:
3 lbs. chicken breasts, thawed
2 cans black beans, drained and rinsed
2 cans whole kernel corn, drained
2 jars salsa (use your favorite)
1 8 oz block low-fat cream cheese
2 packets taco seasoning
Toppings:
shredded sharp cheddar cheese
shredded lettuce
guacamole
sour cream
tortilla chips

Directions:
1. Place chicken in crock pot.  Pour salsa over chicken.  Top with the black beans, corn, cream cheese, and taco seasoning.
2. Cook on high for 5-6 hours, stir occasionally to mix in the cream cheese and taco seasoning.  After 5 hours, shred chicken and let cook for an additional 30 minutes or so.
3. Serve on top of tortilla chips with all your nacho toppings.

Plated! Apricot Chicken with Almond Green Beans

I had a great opportunity recently.  I was able to try Plated for free! It is a fantastic organization where you can order meals online, they send you all the ingredients, and then you cook the dinner.  All the menus are created by different chefs and the menu options change weekly.  It is so fun to look through the yummy recipes! Plus, this was a great way for me to make a non-vegetarian meal.

Bri is a vegetarian and I love coming up with yummy dinner options, but sometimes I just really want a good piece of chicken or salmon.  Whenever we go out for dinner, I order something with meat because I know that it isn't something I get at home a lot. This has also helped me always have a variety of foods and I love that.  I ordered a great salmon dish and chicken dish from Plated.  Both were amazing, but my favorite was the chicken.  It was Apricot Chicken with Almond Green Beans.  This light and healthy meal came with enough food for two meals and so I was able to make myself dinner on a night where Bri was out with his mom and I had a ton of work to do and then I had another meal for lunch one day at school! It was such a great deal and I think you should all check out this fun site!
