The Chicago Marathon and Chocolate Chip Cookies

After a long weekend running and recovering from the Chicago Marathon, I decided to make some cookies to bring into school.  Now, I decided to make my "famous" Inception Cookies because you cut each cookie in half and you get double the cookies.  It makes baking for my advisory or other classes so much easier! I wanted to celebrate the marathon a little with them and we have a pizza party at the end of the day today and so I figured it was an excellent time to bake some cookies.

A few weeks ago, I decided to try out a new recipe and it was a huge success.  Now, this recipe doesn't have you putting oreos inside of cookies so it's not as cool looking, but it did turn into a really great chocolate chip cookie.  

I found the recipe over at Cook's Country.  I didn't do much to change it up except add a pinch of cinnamon to the dry ingredients.  However, the cookies came out really great! They were chewy with a bit of a crunch, flavorful, and stayed soft for a long time.  Everyone loved them!  Try it out! 

The Chicago Marathon was also a crazy success and a great reason to bake (and eat) some cookies.  It was my third Chicago Marathon and 4th marathon.  I finished with a PR of 4:18:39.  This is 12 minutes faster than my last best time!  I was so excited.  I finished with my best running buddy, Jana, and we were both so happy!  I celebrated with Brian and my family and it was a great day.  

Now, I need to recover and get ready for the New York City Marathon on November 6th!  I'll keep you posted on my ongoing training!

Cookie Dough Stuffed Cupcakes

Today is a very special day! It is on of my best friend and bridesmaid's birthday!  I celebrated with Tamara this weekend up in Oconomowoc, Wisconsin where we went out to a fabulous dinner and then had a good old-fashioned sleepover back at her place.  Tamara and I share a deep appreciation for cupcakes and so for her birthday I baked this outrageous Cookie Dough Stuffed Cupcakes.  Everything is homemade!  I made yellow cake, homemade egg-less cookie dough, and dark chocolate frosting.  Check it out:

Cookie Dough Stuffed Cupcakes

Ingredients:
For the cupcakes:
2 cups flour
1 1/2 cups sugar
1/2 cup powdered milk
1 tbsp baking powder
3/4 cup water
1 tsp vanilla
1/2 cup butter, softened
3 eggs
For the cookie dough filling:
1/2 cup unsalted butter, at room temperature
3/4 cup light brown sugar
1 tsp vanilla
1 1/4 cup flour
1/2 tsp salt
2 tbsp skim milk
1 cup mini chocolate chips
For the frosting:
1/2 cup unsalted butter
3 oz low-fat cream cheese
1 cup dark chocolate chips
1/4 cup skim milk
3-3 1/2 cups powdered sugar
1 tsp vanilla

Directions:

1. To make the cupcakes, whisk dry ingredients together.  Beat in wet ingredients.  Pour into prepared cupcake pan with liners.  Bake at 350 for 15-17 minutes or until an inserted toothpick comes out clean. Let cool.
2. To make the cookie dough filling,  beat the butter with the brown sugar.  Then, ad in the vanilla.  Then, add in the flour and salt until just combined.  Beat in the milk until you have a desired consistency one tablespoon at a time.  Finally, stir in the chocolate chips.  Chill in the fridge for at least 30 minutes. Then, core the cupcakes using a knife or cupcake corer and put the cookie dough inside.
3. To make the frosting, beat the butter and cream cheese together until light and fluffy.  Beat in the powdered sugar and then slowly add the milk and vanilla.  Melt the chocolate in a microwave safe bowl on high, stirring after 30 seconds, until melted.  Beat in the chocolate.  Frost cooled cupcakes!

Today is Brian's Mom's Birthday!  Happy Birthday!  Brian's mom is awesome and I am so excited to celebrate with her later!  I also can't wait to become part of her family later this summer! #LegallyPflaumed (yes that is our wedding hashtag and yes it is super amazing).

To celebrate, we are going to get some delicious pizza at Lou Malnati's for dinner.  I was also asked to make my chocolate chip banana bread.  I was really excited to bake this because I haven't in ages and it is so good! I seriously have the best banana bread recipe ever.  Of course there are chocolate chips in it and for this birthday celebration I went with some milk chocolate chips.  This recipe holds nothing back.  It has white flour, sugar, and chocolate chips.  There are also TONS of bananas in it.  This is actually the only way I will eat bananas.  If you want, you can substitute the flour for whole wheat or add in other mix-ins like fruits or nuts, but if you want something just plain yummy, I would stick with the original.  We are celebrating a birthday so you need to get a little crazy!

Cheesecake Brownie Cupcakes

Now there is a blog title to get excited about!  These brownies are crazy yummy and they were sort of an accident.

So, on Wednesday my students took a practice ACT during school.  This meant that I just proctored all day and I was able to go home early!  What a win!  Plus, the students did really well!  They started with an average of about 18 on the math section and now their average is above 20!  That is great growth!  I was super proud of them and I had extra time so I decided to bake something for my advisory.  I was also asked to bake for an upcoming Oscar party this weekend.  I figured I would just bake a double batch of something and have enough desserts for both events!

My students told me that they would like brownies or cheesecake.  I decided to just combine the two!  I started baking, but then I realized that I didn't have enough sugar!!! I was feeling super lazy and so instead of going out to buy more sugar, I decided to take a risk and use brown sugar instead.  My laziness ended up being a good thing since these brownies were super tasty and a huge hit!

Now, I am sitting in school and my students just had the brownies.  They loved them and there is only one left!  (Well, actually there is 13 left...I just kept 12 at home for that Oscar party I mentioned earlier).  These brownies are yummy and you should make them!

Cheesecake Brownie Cupcakes

Ingredients:16 tbsp unsalted butter
8 oz unsweetened baking chocolate, chopped
1 plus 1/3 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp cinnamon
2 tsp espresso powder
1 cup sugar
1 1/2 cups brown sugar
4 eggs
2 tsp vanilla
8 oz light cream cheese
1 cup nonfat, plain greek yogurt
4 tbsp sugar
2 tbsp flour

Directions:
1. Preheat oven to 325 and line your cupcake pan with liners.
2. In a small saucepan, place the butter and chopped chocolate.  Heat over medium-low, stirring constantly, until melted and combined.  Remove from heat.
3. In a medium bowl, whisk the flour, salt, baking powder, cinnamon, and espresso powder.
4. In a large bowl, beat the sugars with the eggs and vanilla.
5. In a separate bowl, beat the cream cheese with the greek yogurt, sugar and flour until well combined.
6. Beat the chocolate mixture into the sugar/egg mixture until well combined.  Mix in the flour mixture until just combined.
7.  Place about 2 tbsp of brownie mixture into each cupcake well.  Place about 1 tbsp of cream cheese mixture on top.  Then place about 1 tsp of brownie mixture on top of the cream cheese.  Using a toothpick, swirl the cream cheese and brownie batter.
8.  Bake for 35-40 minutes or until an inserted toothpick comes out clean.  Cool.

Triple Chocolate Mousse Cake

Guys, I am such a grown up.  Bri and I had a meeting last night with our REAL ESTATE AGENT.  We are officially starting our new home search and we couldn't be more pumped about becoming first time homeowners!!! No more of this renting silliness.  We are using words like invest and mortgage.  It's super crazy and I feel old.  

I am also a little fascinated by the fact that I am super excited to have an in unit washer and dryer.  I think this may actually be the determining factor on if you are an adult or not.  Do you get excited about having an in unit washer or dryer? If yes, then congrats, you are an adult.  Seriously, I couldn't be more pumped up about it.  I keep saying things like "I've made it!" and "I can't wait to leave things in the dryer and just grab them as needed."  I feel that this is both adorable and sad, but I am okay with it.

So, to celebrate the beginning of this house hunting journey and my path towards laundry-ease, I am sharing a recipe for Triple Chocolate Mousse Cake.  YUM! Plus, this cake has NO flour.  Just three layers of chocolatey goodness with a dense flourless dark chocolate cake-like base, chocolate mousse center, and white chocolate mousse top.  

This cake was a huge hit.  I brought it in for a staff potluck, and people told me that it was so good I should get paid to make it.  I should start charging people for the delicious things I make.  But, then I would think of it like a job instead of fun, so I am going to stick to making people happy with free treats.  

Today is also my half birthday and while I know that is not actually a thing, it is another small reason to celebrate so here you go:




Follow the link for the recipe at Tastebook since I barely changed anything.  Here are the few suggestions/things that I did to make this cake a success:

1. Find good quality chocolate.  It makes a difference.
2. CHILL.  Let things chill for a LONG time.  Then, putting the cake together works so much better.  
3. I found that my white chocolate layer didn't firm up like it should so in the future I would add a pinch more gelatin and let it cool even longer. 
4., Whenever the recipe said to whip something until soft peaks formed, I whipped until stiff-er peaks formed.  This makes the mousse more airy and light which I love.

Marathon Training Mondays: New Chocolate Protein Shake Recipe!

Sorry this is a little late...but I have the day off! Yes!  It's MLK Day and so there is no school today.  I actually slept in (ok so only until 6:30, but still) and then I had my New Chocolate Protein Shake and ran 4 miles.

This week's mileage really starts to build.  This past Saturday was our cut-back run and it was only 5 miles.  This week I have 3/4/3 and then 9!  I feel like anything over an hour is a long run so 9 miles will for sure feel more intense than five.  I also did my 4 mile run today instead of my 3 mile run because I figured with the extra time it would be nice to do my run and then relax.

It is also crazy super cold right now.  The high today is like 9 degrees and when I walked downstairs to the treadmill in our apartment, it said the temperature outside was -1.  Yuck!  It is way too cold to run outdoors.  I have been today that it is dangerous to run if it is 0 or below.  So, don't do it :)  Find a way to run indoors or skip the run.  You run so much while marathon training that it is okay to skip a run once in awhile. If you had told me that 2 years ago when I was training for my first run it would have stressed me out, but seriously it is okay to not run once in awhile!

So, today I am going to tell you about a great protein shake recipe!  I feel like this is sort of amusing considering I am currently making some cinnamon rolls in honor of my day off.  However, for the most part I have been all about the protein shakes for breakfast and I have already lost a few pounds over the last few weeks!  Protein powder in smoothies is a great way to support muscle gain and weight loss.  You can check out this article at DbolMuscleSecret for more information and to help you choose the best protein powder for you!  Incorporating protein and into your breakfast is the best way to satisfy any morning hunger you might feel and help you get to lunch without snacking unnecessarily.  I do my workout in the morning, drink my protein smoothie and some coffee and I am good to go until my lunch later in the day!

Chocolate Protein Shake

Ingredients:
1 cup unsweetened almond milk
1/2 tsp vanilla
1 scoop chocolate protein powder (find one with no fat or sugar)
1 tsp almond butter
1 tsp cinnamon
5-6 ice cubes

Directions:
1. Place everything into a blender and blend until smooth!

New and Improved Cookie Dough Frosted Brownies

Happy Friday! Today I have a really fun recipe to share!  I made Cookie Dough Frosted Brownies a while back, but I changed up the recipe a bit this time and they came out even better than before! Last time, I had way too much cookie dough.  Now, I know that typically doesn't sound like a problem, but it actually overpowered the brownies and I love my brownies.  So this time, I cut the recipe in half and cut out a few other things and it was awesome.  I still had plenty cookie dough frosting to cover those brownies, but you got a good balance of brownie and cookie dough in every bite.  

In other news, I have also been having one great food week.  Last night, I went with my family and Bri to the Little Goat Diner.  This place is so good! If you are ever in Chicago and looking for a casual meal that is also incredibly delicious, this is a great place to go.  My mom and I split their Springy Veggie Quesidillas and the Chinese Chicken Sandwich.  Both items were great and it was one amazing meal.  Today, (after a much needed workout and zumba class) I am going to Budacki's Drive-In where I actually LOVE the veggie dogs.  Plus, if you really want to splurge, get cheese fries, do it.  And then, I am headed to Lizzie McNeill's for some drinks with a few of my teaching buddies.  School hasn't even been out for a week and I already miss them like crazy.  It should be a great day!

Cookie Dough Frosted Brownies

Ingredients:
1/2 cup brown sugar
1/4 cup powdered sugar
6 tbsp unsalted butter, melted
3 tbsp light cream cheese
2 tsp vanilla
skim milk, as needed
pinch of salt
1/2 cup mini chocolate chips

Directions:
1. Make the brownies according to directions and let cool.
2. Make the frosting by beating the melted butter, brown sugar, and powdered sugar together in a bowl.  Beat in the cream cheese and vanilla.  Add in 1 tbsp of milk if the mixture is too thick.  Mix in the salt and the chocolate chips.
3. Frost the cooled brownies with the cookie dough mixture.  Let set in the fridge.  When ready, cut into pieces and serve.

Cream Cheese Brownies

I had a bit of a rough day at school the other day.  It's the end of the year and more students than usual are restless and not putting forth their best efforts/behavior.  It is frustrating for me because I want to see them finish the year strong and get good grades.  However, that is  just not happening with some of them.  I was feeling sad, so when I got home I decided that I needed to bake brownies.

I also went for a 6 mile run so I felt like brownies were a good way to motivate myself to run the full 6 miles and then also have a little treat to help make me feel better.  It helped!  Plus, the next day was better.  Sometimes I guess there is just something in the air at high school that makes students act a little crazy.

These brownies were delightful.  I got the idea for them from browsing the website at America's Test Kitchen.  I adapted their recipe a tad, but overall I followed similar instructions.  They had really great ideas for making the brownies look beautiful and to make sure that the brownie and cream cheese swirls nicely and the cream cheese doesn't sink.  They were pretty tasty and I am pretty excited about having even more brownies waiting for me when I get home!  Bad day or not, these brownies are a great recipe to have for special occasions or just to enjoy a little treat after dinner! 

Cream Cheese Brownies


Ingredients:
2/3 cup flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 tsp espresso powder
4 oz 70% cacao chocolate
8 tbsp unsalted butter
1 1/4 cups sugar
2 eggs
1 tsp vanilla
4 oz light cream cheese
1/2 cup greek yogurt (I used 0% Fage)
2 tbsp sugar
1 tbsp flour

Directions:
1. Preheat oven to 325 and line a 9 by 9 inch pan with foil.  Spray the foil with non-stick cooking spray.  
2. In a medium bowl, beat cream cheese for a few seconds and then microwave for 30 seconds.  Beat in the 1/2 cup greek yogurt, 2 tbsp sugar, and 1 tbsp flour until creamy.  Set aside.
3. In a small bowl, place butter and cut up chocolate.  Microwave at 50% powder for about 1-2 minutes or until the chocolate is melted.  Stir every 30 seconds to check.  
4. In a seperate bowl, whisk the flour, baking soda, salt, cinnamon, and espresso powder.
5. In a large bowl, beat the sugar, eggs, and vanilla until combined, about 2 minutes.  Beat in the chocolate mixture until well combined.  Then, mix in the flour mixture until just combined.  Set aside 1/2 cup of the brownie batter.
6. Spread the brownie batter into  your prepared pan.  Then, spread the cream cheese mixture over the top.  Finally, use the 1/2 cup of reserved brownie batter and place 6 spoonfuls on top of the cream cheese layer so that they are spread out.  Using a knife, swirl the batter by cutting through the layers horizontally and then vertically.  
7. Bake for 40 minutes or until an inserted toothpick comes out clean.  Use the foil to remove the brownies from the pan and let cool for about 1 hour before cutting.

Red Wine Chocolate Cake with Red Wine Chocolate Ganache

It's Thirsty Thursday and the Scandal finale is on tonight!  What better way to celebrate than with a recipe for Red Wine Chocolate Cake!  I found this recipe over at Food & Wine and I adapted it slightly.  It was the perfect way to celebrate a recent birthday and it was an amazingly decadent chocolate cake!  

In other news, I went to my second Cubs game of the season last night.  My brother is in town and it was so fun to hang out with him.  Plus, the cubs won!  It was a pretty chilly night for a game, but we still had a great time.  It was a little weird to be out late on a Wednesday and I'm a little sleepy today, but I'm sure I'll be fine! I guess I should also mention that tonight there is a pretty big basketball game involving a Chicago team...if you're into that...I just can't wait for Scandal :).  I'm sure my sport-loving fiance will keep me updated on the sporting world anyways! 


I hope that you all enjoy this recipe!  Get out a good bottle of red wine, try not to drink too much while you bake, and have fun! 

Red Wine Chocolate Cake with Red Wine Ganache
Ingredients:
Cake:
1 1/4 cups dry red wine (I used a Cabernet Sauvignon)

3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups sugar
2 eggs
1 tsp vanilla
Ganache:1 cup chocolate chips (I used a mix of dark and milk)
3 tbsp heavy whipping cream
2 tbsp red wine




Directions:
1. Preheat oven to 350 and grease a bundt cake pan.
2. In a medium bowl, whisk the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy.  Beat in the eggs and vanilla until well combined.
4. Add in 1/3 of the flour mixture to the wet ingredients and mix until just combined.  Then, add in 1/2 of the wine and mix until combined.  Continue with another 1/3 of the flour, then the rest of the wine, and finally the rest of the flour until just combined.  Pour the batter into your prepared pan and place in oven for 45 minutes.
5. While the cake is baking, make the ganache: In a heat-proof bowl, place the chocolate with the cream.  Let the bowl sit over a pot of boiling water and stir once the chocolate starts to soften.  If your mixture doesn't come together, you can add a little more cream.  Once smooth, stir in the red wine and remove from heat.
6. When your cake is done, let cool for 15 minutes and then frost with the ganache.  Let cake cook completely and ganache set.

Happy Mother's Day!

Happy Mother's Day! 

Every day is mother's day.  I mean, what would we do without mom's?  Literally, no one would exist!  My mom is pretty amazing and I just wanted to say, I love you!  Bri and I are planning on having brunch with my mommy today and then dinner with his mommy later.  It is going to be a really nice day!

Monster Cookie Layer Bars

We just had parent-teacher conferences this past week and I can't believe that this means there are only 6 weeks until finals!!! My second year of teaching has just flown by!  Along with that, I have been having a great year with my co-teacher in Geometry and my Algebra Advance students are pretty awesome.  I can't believe they started off as freshmen and now they are like "grown up" sophomores!  This year has been so much smoother than my first one and I have been working hard to incorporate new lessons that are more investigative and model based.  I love that I feel confident enough to try new things and evaluate if they are successful.  I even brought in a GIANT gummy bear to show my students and talk about similarity ratios between the little gummy bears and the big guy.  Today, I am even presenting one of these lessons to a group of teachers!

Along with school ending, I am also getting ready for camp to begin! This is crazy!  I am so excited that summer is right around the corner.

To celebrate this excitement, I am going to share with you all a recipe for one yummy treat.  I love the idea of Monster Cookies because it means you can basically throw whatever you are craving into a cookie.  This recipe, which I adapted from The Girl Who Ate Everything, takes that idea to a whole new level.  Instead of all that work to drop cookies onto a cookie sheet, lets just dump it all into a pan and go with layers! I love combining salty with sweet so I went with some chocolatey things and pretzels and peanut butter.  You can use whatever toppings your little heart desires!

Monster Cookie Layer Bars

Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter
1 14 oz can of sweetened condensed milk (I used light)
3/4 cup old-fashioned oats
1 1/2 cups of the toppings you want

Directions:
1. Preheat oven to 350 and line a 9 by 13 inch pan with foil or parchment paper.  Spray the foil of parchment paper with nonstick cooking spray.
2. In a microwave safe bowl, melt the butter.  Mix the butter and graham cracker crumbs together and press evenly into the bottom of your pan.
3. Pour the sweetened condensed milk over the graham cracker crust and then sprinkle the oats and your toppings over the top.  Gently press this down into the sweetened condensed milk layer.
4. Bake for 20 minutes.  Let cool for 20 minutes and then use the foil to take the layers out of the pan to cool completely.

Irish Car Bomb Cupcakes

Yesterday was the St. Patrick's Day celebration in Chicago.  It was also buddy, Lauren's, birthday and some of my best friends from college are in town as well! In fact, one of my friends is named Patrick so I was pretty pumped to celebrate St. Patty's day with my very own Patrick.  Last year, we went and saw the dyed green river and all of that so this year we decided to just hang out.

I started the day off with a nice 8 mile run outside!  I am so excited that spring weather is here and it no longer hurts to be outdoors.  It was fantastic.  After a much needed shower, my friends all got together and kicked off the day with green mimosas and cinnamon rolls!  We ended up hanging out on the porch enjoying the beautiful weather and it was just awesome.  After some pizza for lunch, we walked to a nearby Irish bar and saw some Irish step dancers.  This is something that I've always wanted to be able to do and I just can't figure out.  I mean, I am a decent dancer, but I just can't get my feet to do anything that resembles Irish step dancing and so I give those girls a lot of credit and I think it's crazy cool.  For dinner, we went to Cheesie's by the Belmont Red Line stop.  That place is so bad, but so good.  If you are ever in the area and respect a great grilled cheese sandwich, you have to go.  And then, we ended our night at Cesar's having some "killer" margaritas along with some delicious nachos.  Overall, it was a really fun day.  It's days like these where I am so grateful for the fantastic friends I have and the great city I live in.

Because it was the St. Patricks Day celebration and because it was a birthday celebration.  I decided to make Irish Car Bomb cupcakes.  I have tried a similar cupcake before and it was really yummy.  So, I wanted to make my own.  I was inspired by the Brown Eyed Baker and I made some adjustments to the recipe.  Here is what I came up with!

Irish Car Bomb Cupcakes

Ingredients:
Cupcake:
2 cups flour
2 cups sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 cup unsalted butter, at room temperature
1/2 cup canola oil
1 cup Guinness beer
3/4 cup cocoa powder
2 eggs
2/3 cup non-fat, plain greek yogurt (I used Chobani)
Filling:
8 oz bittersweet chocolate
2/3 cup heavy cream
2 tsp Irish whiskey
2 tbsp unsalted butter, at room temperature
Frosting:
1 cup unsalted butter, at room temperature
3 cups powdered sugar
6 tbsp Bailey's Irish Cream

Directions:
1. Make the cupcakes: preheat oven to 350 and line 24 cupcake wells with liners.  Or, if you want, I made 6 giant cupcakes in my silicon cupcake holders and 24 mini cupcakes in a mini cupcake pan.  Then, in a medium bowl, whisk the flour, sugar, baking soda, and baking powder.  In a small saucepan, place butter, canola oil, Guinness, and cocoa powder.  Heat until butter melts and stir to combine.  Let cool while you beat the eggs and greek yogurt in a large bowl.  Beat in the chocolate mixture until well combined.  Beat in the flour mixture until just combined and fill your cupcake wells so that they are about 3/4 full.  For mini cupcakes, bake for about 12 minutes, for regular, bake for about 17 minutes, and for giant, bake for about 19 minutes.  Let cool completely.
2. Make the filling: chop the chocolate and place in a microwave safe bowl.  In a separate, microwave safe bowl, pour the cream and heat for about 30-45 seconds.  You want it to be warm, but not boiling.  Pour the cream over the chocolate and stir until the chocolate completely melts.  Stir in the whiskey and the butter and then let sit so that the ganache starts to set.
3. Make the frosting: beat the butter in a large bowl until it is light and fluffy.  Beat in the powdered sugar, about 1/2 cup at a time, until it is well combined.  Beat in the Bailey's and continue to beat until your frosting because light and fluffy.  Add in more powdered sugar as needed.
4. To assemble: using a knife or a cupcake corer, cut out the centers of your cupcakes.  Spoon in the ganache to fill the centers.  Then, using a piping bag or an offset spatula, frost your cupcakes.  Serve immediately, or store in the fridge in a container.  Before serving, let the cupcakes sit at room temperature for about 30 minutes.

Happy Pi Day! 3.141592653...

Happy Pi Day everyone! Today is an especially epic Pi day as it is March 14th of 2015!  Since Pi starts with 3.1415 this is the first time this has happened in 100 years and I am pretty excited about it!  For school, I brought in oreo pie and chocolate chip cookie pie for my students and a ton of my kiddos brought in their own circular treats to share.  It was pretty great!

It also happens to be the St. Patricks Day celebration in Chicago and my friend Lauren's bday celebration.  Can today get any more epic?

The answer is yes.  Here is an epically delicious pie for you all!  This is like a "better than sex" pie and it was truly AH-mazing.  I hope you all have a fantastic Pi/St. Pattys/Whatever day and enjoy your weekend!

The Epically AH-mazing Pi Day Pie


Crust:
1 1/4 cup flour
1/2 tbsp sugar
1/4 tsp salt
1/2 cup cold, unsalted butter
1 tsp white vinegar
2-3 tbsp cold water
Filling:
Your favorite hot fudge
1 1/2 cups dark chocolate chips
8 oz light cream cheese
1 cup heavy whipping cream
Your favorite caramel sauce (I recommend salted caramel)
2 cups cool whip topping
Mini PB cups, M&Ms...and whatever other toppings you want!

Directions:
1. Make the crust: place flour, sugar, and salt in a food processor and pulse a few times to combine.  Cut cold butter into cubes and place in food processor with vinegar.  Pulse until you have a sand like combination.  Pour water in, 1 tbsp at a time, while pulsing, until your dough comes together.  Wrap in plastic wrap and chill for at least 1 hour.  Once chilled, heat oven to 400 degrees and roll out pie dough so that you have a large circle.  I usually try to go for a circle with a 12 inch diameter.  Then, place pie dough into a 9 inch pie pan and form crust to your liking.  Place in preheated oven and cook for 10-12 minutes or until dough starts to brown.  Cool
2. To make the filling, melt the dark chocolate in a heat proof bowl.  Once melted, whip with the cream cheese and heavy cream until you have a light and fluffy filling. 
3. To assemble the pie: spread hot fudge into your cooked pie crust so that it covers the bottom.  Then, spread the chocolate mixture on top.  Next, drizzle caramel sauce over the chocolate filling.  Finally, top with the whipped topping and sprinkle extra hot fudge/caramel/other toppings on top.  Place in fridge to chill until you are ready to serve.

Beer Brownies with Spent Grain Flour

Oh jeez, it's been over a month since I posted here! Sorry! I have been so busy with school, grad school, and wedding planning!  Life just gets in the way, you know?

However, I have still been cooking/baking up a storm over here. In fact, I have made some pretty great recipes recently.  For example, for the Super Bowl, I decided to make a bunch of stuff that I was craving and just sit around and eat while I watched the commercials (err...I mean the game?).  I made Vegetarian Buffalo Dip, Homemade Soft Pretzel Bites, and Beer Brownies.

Yep...Beer Brownies!  Also, they just happened to be the best brownies I'd ever consumed.  I adapted the recipe from Joy the Baker and used my own Spent Grain Flour and new favorite, dark beer.  They are just AHHHMAZING!  Finch's Stout for the beer, Spent Grain Flour from the time I homebrewed, and lots and lots of gooey chocolate. How can you go wrong?  I even made this again for Valentine's Day!

Let's talk beer.  I am usually not a Stout kinda girl, but this beer from Finch's is pretty fantastic.  It has this amazing coffee flavor that I just adore.  Plus, Finch's is local (right in the heart of Chicago) and so the Mariano's grocery store down the street carries their beer!  If you are not a beer fan, you can also use coffee and the brownies will still be fantastic, you just can't call them Beer Brownies then!

Beer Brownies with Spent Grain Flour

Ingredients:
1/2 cup flour
1/2 cup spent grain flour
1/4 cup cocoa powder
1/2 tsp salt
4 oz bittersweet chocolate chopped
1/2 cup unsalted butter
1/2 cup dark beer (I used Finch's Stout)
4 large eggs
1 cup sugar
1 cup brown sugar
2 tsp vanilla
1 cup dark chocolate chips

Directions: 
1. Preheat oven to 350 and line a 9 by 13 inch baking pan with foil.  Spray the foil with cooking spray.
2. In a medium bowl, whisk the flour, spent grain flour, cocoa powder and salt.
3. Place a heat-proof bowl over a pot of boiling water with the butter and bittersweet chocolate.  Stir until melted.  Remove from heat and stir in the beer.
4.  In a large bowl, beat the eggs with both sugars until pale yellow and well combined.  Pour in the warm chocolate mixture while continuing to stir.  Beat until combined and then mix in the dry ingredients until just combined.  Stir in the chocolate chips.
5. Pour the batter into your prepared baking pan and bake for 40 minutes.  Let cool for 20 and then cut into pieces.

Homemade Moose Tracks Ice Cream

So, I am sitting in the cafeteria because it is finals week and I am supposed to "supervise" aka babysit the children who do not have a first period final and do not want to go to the library to study.  It's times like these where I just love my job....

After this awful time of doing nothing, my finals actually begin and I have a geometry final and algebra final later today.  Although this morning time is pretty much the worst, I am excited to see how my students do on their finals today.

To pass the time, I am sitting with my English teacher friend and we are grading/chatting.  This is really not as bad as it could be.  I could be the person who has to walk around and ask students to settle down even though  it is a totally free time in the cafeteria...I mean, do we really expect them to study in here?

Of course, I am also sitting here thinking about food.  If I wasn't, I wouldn't be writing this blog post.  When I was thinking about what to write, I realized that on a cold day like today, it would be nice to think of something awesome like ice cream!  I can't put into words how much I miss summer and therefore how much I miss ice cream.  A while back, I decided that I wanted Moose Tracks because it is the best and so I made homemade Moose Tracks Ice Cream.  It was freaking amazing.  I spent a day eating it while watching a Sex and the City marathon on HBO and I truly don't have any regrets about it.  I forgot to share the recipe here, but I figured that its never too late or too cold to talk about ice cream.

Moose Tracks Ice Cream

Ingredients:
1 egg
2/3 cup sweetened condensed milk
3 tbsp sugar
3 tbsp brown sugar
2 1/2 cups half and half
1/2 cup skim milk
1/8 tsp salt
1 1/2 tbsp vanilla
20 mini peanut butter cups, halved
1-2 cups fudge sauce:
1/2 cup sugar
1/3 cup light corn syrup
1/2 cup water
6 tbsp cocoa powder
1/2 tsp vanilla

Directions:
1. Make the fudge sauce: place the sugar, corn syrup, water and cocoa powder in a medium pot.  Heat until the mixture comes to a rolling boil while whisking constantly.  Cook while boiling for about 1 minute while continue to whisk.  Remove from heat and stir in the vanilla.  Transfer to a container and let cool completely in the fridge.
2. In a large sauce pan, pour 1 1/2 cups of half and half and heat over medium until steamy and then remove from heat.
3. In a separate bowl, whisk the egg with the sugar, brown sugar, and sweetened condensed milk.  Pour in 1/2 cup of the warm half and half and beat until combined.  Pour the entire mixture back into the half and half saucepan.  Heat over medium, stirring constantly until the mixture thickens and coats the back of your spoon. Don't let it boil.
4. Pour the mixture into a separate bowl and whisk in the rest of the half and half, skim milk, salt, and vanilla.  Cover and place in fridge to chill for at least 4 hours.  
5. Once your ice cream mixture is chilled, freeze in ice cream machine according to directions.  Once down, pour into a bowl and stir in the fudge sauce and peanut butter cups.  Place in freezer to harden.

Slow Cooker Fudge

Well, it's time to go back to school and I don't know about you, but I needed a little something sweet to brighten my day.  The Monday after winter break is typically pretty rough, so whip up a batch of this yummy fudge so that you can shake off the blues a bit.  For high school, the Monday after Winter Break also marks the beginning of getting ready for finals.  Let me tell you, it is not pretty.  Student minds are still on break (and lets be honest, so are teacher minds) and we all have to get ready to start studying pretty intensively.  I try to make class as interactive and fun as possible so that students actually want to come to class....we will see how it goes!

This fudge was absolutely delish!  It was the perfect mixture of chocolate and with the sea salt sprinkled on top it became truly special.  I made this for my new years party and everyone was raving about it.  Plus, it is crazy easy to make! You don't need a candy thermometer or anything.  simply dump the ingredients into a crock pot, stir, and then pour into a pan to set and cool!  Done! When, I saw the recipe over at Creme de la Crumb, I was skeptical.  I thought this fudge was going to take forever, but then I saw that you only have to wait an hour and I was thrilled! I don't like waiting for dessert...

Slow Cooker Fudge

Ingredients:
1 cup milk chocolate chips
1 cup dark chocolate chips
1/4 cup heavy whipping cream
1/3 cup honey
1/2 cup white chocolate chips
sea salt for topping (optional)

Directions:
1. Place milk chocolate, dark chocolate, honey and cream into your crock pot and cook on high for 1 hour.
2. Line an 8 by 8 baking dish (or a smaller pan for thicker fudge) with foil.
2. After 1 hour, stir in the milk chocolate chips until you have a smooth and creamy mixture.  Pour your chocolate mixture into your baking pan, sprinkle with salt if you are using it, and let the fudge set at room temperature.  Once set, cut into squares.

Happy Thanksgiving! French Silk Pie

I know, I know, I'm a day off.  However, I was too busy celebrating Thanksgiving yesterday, to really sit down and write a post.  So, today, I am taking the opportunity to say what I am thankful for and share with you this amazing French Silk Pie.

I have so much to be thankful for.  I am incredibly thankful for my family, Bri, and Benny.  The amount of love that surrounds me makes me feel grateful and blessed.  Last night, I went to Bri's thanksgiving with his amazing family and then, also my sister's house for thanksgiving with my family.  The fact that we have so many people in our life that are there for us is just amazing.  It was so great to see all the family (plus the food was fantastic!).  This brings me to my next point, I am pretty thankful for food.  I love how food has the power to bring people together and I love making food that can do that.  In addition, I am thankful for my school, the teachers I work with, and my students.  I love everything about my job and I am so happy that I am at this point in my life.  My second year of teaching is going great and makes me so relieved that I am living out the career of my dreams.  And finally, we can't forget about all my crazy, amazing, silly friends that stick by me no matter what.  I love them all.  So yep, I have a ton to be thankful for and I just hope that I can so everyone how special they really are to me.

Last weekend, I went to a "Friendsgiving" and I brought this French Silk Pie.  It was so cool to be part of this evening and see how we can really put together an amazing Thanksgiving dinner.  I had a ton of fun and I hope that this is a new tradition that continues through the years.

French Silk Pie

Ingredients:
For the Crust:
1 1/4 cups flour
1/2 tbsp sugar
1/4 tsp salt
1/2 cup cold, unsalted butter, cut into cubes
1 tsp apple cider vinegar
2-3 tbsp ice water
For the Filling:
2/3 cup sugar
2 eggs
2 oz unsweetened chocolate, chopped
1 tsp vanilla
1/3 cup unsalted butter, softened
2/3 heavy whipping cream
2 tsp powdered sugar
Whipped Cream Frosting:

8 oz light cream cheese
1/2 cup sugar
1 1/2 tsp vanilla
2 cups heavy whipping cream
semi-sweet chocolate curls or chips for the topping

Directions:
1. Make the crust.  In a food processor, place flour, sugar and salt.  Process to mix.  Keep processing and add cubes of butter until you have a mixture that resembles wet sand.  Add in the vinegar and 1 tbsp of water at a time until dough forms into a ball.  Wrap in plastic wrap and refrigerate for 1 hour. 
2. Preheat oven to 450.  Once dough is chilled, lightly flour a surface and roll dough out until you have a circle about 12 inches in diameter.  Lightly grease a 9 inch pie pan and, place in pie pan and trim edges.  Cover with foil  Place in oven and bake for 5 minutes, remove foil and bake for another 5 minutes or until dough is lightly browned.  Remove and let cool.
3.  Make the filling.  In a small saucepan, combine eggs and sugar.  Cook over low heat until mixture thickens and coats the back of a wooden spoon, about 10 minutes.  Remove from heat and stir in vanilla and chocolate until chocolate completely melts and is well combined. 
4. In a medium bowl, beat butter until light and fluffy.  Beat in chocolate mixture and beat on high for 5 minutes.  Mixture should be light and fluffy.
5.  In a separate bowl, beat whipping cream with powdered sugar until it forms a stiff peak.  Fold the whipped cream into the chocolate mixture.  Pour into pie crust and let chill while you make the topping.

6.  For the whipped cream topping, in a large bowl, beat sugar, cream cheese, and vanilla until well combined.  Slowly pour in the cream while beating and whip until stiff peaks form.  Frost the chilled pie.  If you are using chocolate curls, heat up a chocolate bar in the microwave on 50% power for about 1 minute.  Use a peeler and gently scrape off edges of the chocolate bar to make your chocolate curls.  Place finished pie back in the fridge to chill and set.

Cookie Dough Frosted Brownies

I can't believe I am a month away from race day! I just finished an "easy" 14 miles.  You may be wondering...easy?  Well, after running 18 last week, today seemed like a breeze.  Plus, the weather was chilly and beautiful.  This made the run a whole lot more pleasant than those others that were in 80 degree heat with crazy humidity!  I feel great right now! I can't believe that next week is the 20 mile run! 20 miles is the longest run before the actual marathon and I am only one week away!

Today I figured we should celebrate!  I am pumped about my running going so well, but I am also grateful for an amazing start to the school year.  So far classes have been great, I love my co-workers, and my students have been a joy so far!  (Let's hope it stays that way!)  I'm also excited about the fact that I have finally finished reading all the current Game of Thrones books.  This was a HUGE project as each book is about 1000 pages, but I finally finished and I can't wait for the next book to be released!  All in all, a celebration is in order and what better way to celebrate than with delicious brownies?  I made my typical Dark Chocolate Brownies, but then I topped them with a layer of cookie dough frosting.  YUM!!!! Bri has already asked that I make these for his birthday this year and thats not for another 3 months!

Cookie Dough Frosted Brownies
Ingredients:
Brownie Recipe
Frosting:
1 cup brown sugar
1/2 cup sugar
12 tbsp unsalted butter, melted
2 tbsp skim milk
2 tsp vanilla
3 tbsp low-fat cream cheese
pinch of salt
3/4 cup chocolate chips

Directions:
1. Make brownies according to directions (or make your own favorite recipe). Let cool completely.
2. In a large bowl, beat sugar, brown sugar, and melted butter until well combined and sugar starts to dissolve.  Beat in the milk, vanilla, cream cheese, and salt until well combined.  Stir in the chocolate chips.  Spread the frosting over the brownies.  You will have a very thick layer.
3. Cover in tinfoil and place in fridge for a few hours to ensure that the frosting sets.  Once chilled, cut into squares.

Nutella Muddy Buddies

Today is my first day off since Memorial Day! It feels so great to finally be on summer vacation and I have filled today with a whole lot of nothing!!!

I slept in, went for a run, attended a yoga class, and went grocery shopping.  Now, this may sound like a lot for a morning of "nothing," but these are all things that I love to do and so I consider them to be basically nothing.  Now, I am attempting to make homemade moose tracks ice cream! It is my favorite flavor and I will certainly be updating you all on how it goes!

In honor of my fun day off, I am going to share a super fun recipe! I love making puppy chow because it is 1. delicious and 2. gluten free.  I have a lot of gluten free friends and this treat is always a winner.  I saw a recipe for Nutella Muddy Buddies and I figured that could only make the traditional treat even better!!!

Nutella Muddy Buddies
(adapted from Tracy's Culinary Adventures)

Ingredients:
4 cups Chex cereal
1 1/2 oz semisweet chocolate chips
1/2 cup Nutella
4 tbsp unsalted butter
1/2 tsp espresso powder
pinch of salt
1 tsp vanilla
powdered sugar

Directions:
1. In a microwave safe bowl, combine the chocolate chips, butter, and Nutella.  Microwave for 30 seconds and then stir.  Repeat this process until chocolate is melted and smooth.  Stir in the espresso powder, salt, and vanilla.
2. Put Chex into a large bowl.  Pour the chocolate mixture over the Chex and toss to coat.
3. Put about 1/4 cup of powdered sugar into a plastic bag.  Scoop some of the Chex into the bag and seal the bag.  Toss to coat the Chex in the powdered sugar.  Repeat this process until all the Chex has been coated.  You may need more or less powdered sugar depending on your preference.  I usually end up using 3/4-1 cup.

Note: I think these taste the best when you freeze the batch afterwards.  They become delicious and crunchy!

Gluten Free Chocolate Peanut Butter Banana Muffins

Yay Passover! I just love not being about to eat bread for a week...

Okay, I am very excited to eat bread again! In fact, every year, I take a break from Passover to enjoy Easter! My mom's side of the family has an Easter party every year and it is a lot of fun.  I love doing the colored eggs and sharing a big family meal.  She even brings a Lamb Cake! It's really cute and then we fight over who gets the butt (typical).  So, today I am off to my cousin's to celebrate Easter and I am very excited to enjoy the food and take a little vacation from Passover.

If you didn't see yesterday, I fell while running, and today I am still feeling very sore and beaten up.  My knee has developed a small bump this morning and I am not sure if I am going to make it through my Sunday morning Jillian Michaels work-out.  Wish me luck because I am going to try!

After my work out, I have homework to do for an online class that I am taking and then I am going to attempt to cook a few meals so that we are all ready for the week.  This is all before we drive to my cousins (about an hour away) for Easter.  So, I am up bright and early to share this with you all and then get to work!

Keeping with the Passover theme, today I am telling you about some amazing Gluten Free Chocolate Peanut Butter Banana Muffins.  They are crazy simply and crazy yummy.  I have made these multiple times and I even brought them in to school to share with my fellow teachers.  Everyone loved them!

Gluten Free Chocolate Peanut Butter Banana Muffins

Ingredients: 
1 medium ripe banana
1 egg
1/2 cup creamy, natural peanut butter
3 tbsp honey
1/2 tbsp vanilla
1/4 tsp baking powder
pinch of salt
1/2 cup semi-sweet chocolate chips (mini or regular)


Directions:
1. Preheat oven to 400 degrees.
2. Place everything except the chocolate chips into a bowl and beat with an electric mixer until smooth and creamy.  Stir in the chocolate chips.
3. Spoon into a greased mini-muffin pan until about 3/4 full, or regular muffin pan.  Bake for 7-8 minutes if a regular muffin pan and 8-10 minutes for a mini muffin pan.
