Rosh Hashanah Apple Challah

Happy New Year! Well, the Jewish new year that is.  Today is Rosh Hashanah and I took the day off from school so that I could go to services with my family and then have lunch with them.  It is going to be a lovely day and I am excited for some family time.

I kicked off the day with a nice 3 mile run.  This week also happens to be the week before the Chicago Marathon and therefore my final week of taper before the big race!  This will be my fourth marathon!  I can't believe it and I feel so positive and strong.  Running has become so important to me and I love that I have accomplished so much.  It was especially nice to run 3 miles this morning after sleeping in a little longer than usual because of my day off!

Last night, we went to my brother's house for a Rosh Hashanah dinner.  I have been obsessed with my new bread maker and so I decided to make a challah to bring to the dinner.  On Rosh Hashanah, you eat round challah because it represents the end of a year meeting the beginning of a new year.  You also eat apples and honey because you want a "sweet" new year.  So, I made a Round Apple Challah!

Round Apple Challah

Ingredients:
Dough:
3/4 cup water
2 eggs
3 tbsp canola oil
3 cups bread flour
3 tbsp sugar
1/2 tsp salt
2 tsp SAF yeast
Filling:
3 granny smith apples, peeled, cored and chopped
3 tbsp lemon juice
2 tbsp honey
1/2 tsp cinnamon

Directions:
1. I used a bread machine to make the dough and all you have to do is add the dough ingredients, in order, and then press start.  If you don't have a bread machine, you can add all the ingredients to a stand mixer and mix everything together and then knead for 8-10 minutes, let it rest for about 30 minutes, then knead again and let rise in a warm place for an hour.
2.  To make the filling, toss the chopped apples with the lemon juice, honey, and cinnamon in a bowl, and place in the fridge until you are ready to use it.
3.  Once your dough is ready, place it on a lightly floured surface.  Using a rolling pin, roll it out until you have a rectangle about 18 inches by 12 inches.
4.  Place the apple filling on the dough rectangle and press it into the dough.  Then, starting with the long side, roll the dough into a long log.  Make sure the seam side is facing down.  Roll the log out so that it becomes a few inches longer.  Then, wind the log around so that you have a circle.  Tuck the end of the dough under the circle.  Place your round challah in a 9 inch cake pan and let rise for another hour.
5. About 15 minutes before your challah is done rising, preheat the oven to 325 and make sure the rack is in the center of the oven.   Sprinkle some sugar over the challah and then, bake the challah for 40-45 minutes.  Let cool for about 20 minutes before removing from pan.

Clean Out Your Pantry Cookie Bars

I'm moving in THREE days!  I can't believe it!  We are buying our own condo and I couldn't be more excited.  This past week we have been packing up boxes, cleaning, and getting things in order.  I decided that I was going to cook/bake things that I had all the ingredients for already so that I could clean out the pantry/fridge.  This was the inspiration behind these cookie bars and I've gotta say, it was a great plan.

I only had white whole wheat flour left in the pantry so I used that.  I had more brown sugar than regular sugar, so I used more brown sugar.  And, I already had open bags of peanut butter chips and dark chocolate chips.  I figured that with that combo, I really couldn't go wrong.  Then, just for kicks, I threw in some old-fashioned oats as well.  Why not, right?  These cookie bars are super yummy!!!! I may have to host my own edition of chopped: clean-out-your-pantry-style.   It could be the next big reality show!  I would go to different houses of people who are moving and you would have to cook with whatever they had.  The Goal: make something amazing that uses as many ingredients as possible so that the pantry is clean when you are done.  I feel like I am onto something big here.  Feel free to contact my agent...

Anyways, I have been really busy getting ready for the move and I am grateful that I decided to take off half of Thursday and all of Friday so that I can just focus on moving and getting all settled in our new home.  I have an amazing kitchen waiting for me and I can't wait to beak it in!

Clean Out Your Pantry Cookie Bars
(Whole Wheat Dark Chocolate Peanut Butter Bars)

Ingredients:
3 cups white whole wheat flour
3/4 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon
2 tsp cornstarch
1 cup old-fashioned oats
3/4 cup unsalted butter, room temperature
1/2 cup canola oil
1 egg
1 egg white
1 cup brown sugar
3/4 cup sugar
2 tsp vanilla
1 cup peanut butter chips
1 cup dark chocolate chips
sea salt

Directions:
1. Lightly grease a 13 by 9 inch pan and preheat the oven to 350.
2. In a medium bowl, whisk the flour, baking soda, salt, cinnamon, cornstarch, and oats.
3. In a large bowl, beat the butter, oil, brown sugar and sugar until light and fluffy.  Beat in the egg until well combined.  Beat in the egg white until well combined.  Beat in the vanilla.
4. Slowly incorporate the flour mixture into the wet ingredients until just combined.  Stir in the peanut butter chips and dark chocolate chips.
5. Spread the batter out in your prepared pan and bake for 20-25 minutes.  The cookie bars should be slightly browned around the edge of the pan.  Let cool for 20 minutes.  Cut into bars!

Crock Pot Cinnamon Rolls

Happy Friday!

I am so excited that it is Friday, my students are taking a test, and I have my friend's engagement party to go to tonight!  I am so excited for Caryn and Max and I can't wait to celebrate with them.

Last night, I went to La Principal in Evanston with some of my friends from my old school.  It was so nice to see them and it really made me miss them!  Plus, La Principal was amazing!  I really hope that we continue to have outings like that in the future!

Today, before the engagement party, a bunch of teachers from my current school are going to a restaurant to celebrate the fact that it is Friday.  I'm excited to hang with them and it will be a nice way to kick off the weekend.

You know what is also a nice way to kick off the weekend?  Cinnamon rolls!!! Cinnamon rolls are my ultimate favorite breakfast pastry.  I just can't say no to them.  I know that the world is on a donut kick, but I still say that cinnamon rolls are the best.  I made crock pot cinnamon rolls recently and they came out great!  I made them a little "healthier" so they are probably not as crazy delicious as they could be, but I thought they were delish and it made me feel better to know that they were lightened up.

Crock Pot Cinnamon Rolls

Ingredients:
3/4 cup almond milk
1 packet instant yeast
1/4 cup + 1 tsp sugar, divided
1 tsp salt
3 tbsp unsalted butter
1 egg
2 and 3/4 cups bread flour
Filling:
5 tbsp unsalted butter, softened
1-2 tbsp cinnamon
1/4 cup sugar
Icing:
2 tbsp milk
1/4 cup powdered sugar
dash of vanilla


Directions:
1. Warm the milk in the microwave for 1 minute.  Pour the milk into a stand mixer or large bowl with a dough hook.  Add in the yeast and 1 tsp sugar and let sit for 8-10 minutes.  Yeast should make the mixture frothy.
2. Once the yeast mixture is frothy, add in the remaining 1/4 cup sugar, butter, egg and 2 cups of flour.  Beat on a low speed until dough comes together and pulls away from the sides of the bowl.  Add in more flour as needed.
3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes.  Then, place the dough back into the bowl, cover with a towel and let rest for 15 minutes.
4. Line a slow cooker with a lightly greased piece of parchment paper.
5. After 15 minutes, roll the dough out into a long rectangle about 1/4 inch thick.  Spread the softened butter over the dough, sprinkle with cinnamon and sugar.  Then, starting with the longer side, roll it up towards the other long side.  Cut into about 12 pieces and place in the slow cooker.
6. Place a paper towel on the inside of the slow cooker right under the lid.  Turn the cooker on to high and let cook for 2 hours.
7. Make the icing by mixing the powdered sugar and milk together in a small bowl.  Once the cinnamon rolls are done, spread with icing or just dip the cinnamon rolls in the icing!

Marathon Training Mondays: New Chocolate Protein Shake Recipe!

Sorry this is a little late...but I have the day off! Yes!  It's MLK Day and so there is no school today.  I actually slept in (ok so only until 6:30, but still) and then I had my New Chocolate Protein Shake and ran 4 miles.

This week's mileage really starts to build.  This past Saturday was our cut-back run and it was only 5 miles.  This week I have 3/4/3 and then 9!  I feel like anything over an hour is a long run so 9 miles will for sure feel more intense than five.  I also did my 4 mile run today instead of my 3 mile run because I figured with the extra time it would be nice to do my run and then relax.

It is also crazy super cold right now.  The high today is like 9 degrees and when I walked downstairs to the treadmill in our apartment, it said the temperature outside was -1.  Yuck!  It is way too cold to run outdoors.  I have been today that it is dangerous to run if it is 0 or below.  So, don't do it :)  Find a way to run indoors or skip the run.  You run so much while marathon training that it is okay to skip a run once in awhile. If you had told me that 2 years ago when I was training for my first run it would have stressed me out, but seriously it is okay to not run once in awhile!

So, today I am going to tell you about a great protein shake recipe!  I feel like this is sort of amusing considering I am currently making some cinnamon rolls in honor of my day off.  However, for the most part I have been all about the protein shakes for breakfast and I have already lost a few pounds over the last few weeks!  Protein powder in smoothies is a great way to support muscle gain and weight loss.  You can check out this article at DbolMuscleSecret for more information and to help you choose the best protein powder for you!  Incorporating protein and into your breakfast is the best way to satisfy any morning hunger you might feel and help you get to lunch without snacking unnecessarily.  I do my workout in the morning, drink my protein smoothie and some coffee and I am good to go until my lunch later in the day!

Chocolate Protein Shake

Ingredients:
1 cup unsweetened almond milk
1/2 tsp vanilla
1 scoop chocolate protein powder (find one with no fat or sugar)
1 tsp almond butter
1 tsp cinnamon
5-6 ice cubes

Directions:
1. Place everything into a blender and blend until smooth!

Pumpkin Mousse

Is it still pumpkin season? I'm gonna say yes since it's so weirdly warm this winter that it still sorta feels like fall.  I mean, I just went for a run and got way to sweaty for this time of year.  Also, I got really cute cold weather running gear for Hanukkah and I can't even wear it since it's too warm!  I know I shouldn't complain.  I love that there is no snow and that I can still make pumpkin things.  What more could a girl ask for?  

I was playing around with the idea of a pumpkin-like pie but without the pie crust.  I found a recipe for a pumpkin mousse and I just loved that idea!  So, that is what I am sharing with you today!  

Today is also a pretty exciting day for me (besides the pumpkin mousse).  I have a lunch date with Bri's Aunt to talk about a wedding shower and then I have a dinner date with Bri's whole family to celebrate his and his twin's birthdays!  I get to go to Cheesecake Factory and Portillo's...all in one day!  This is why I went for a 5.75 mile run this morning.  Gotta prepare myself for all the delicious eating!  

Pumpkin Mousse
(adapted from Pastry Chef Online)


Ingredients:
1 cup sugar
1/4 cup water
2 1/2 cups heavy cream, divided
1 15 oz can pure pumpkin (not pumpkin pie filling)
1 tbsp honey
1/2 tsp sea salt
1 tsp cinnamon
pinch of nutmeg
pinch of cloves
1 tsp vanilla

Directions:
1. In a saucepan, heat the water and sugar until boiling.  Continue to boil until the sugar has deeply caramelized.  Once this happens, immediately remove it from the stove and pour in 1 cup of the heavy cream and stir to combine.  Pour this mixture into a metal bowl.
2. Add in the pumpkin, honey, salt, cinnamon, nutmeg, cloves and vanilla.  Cover with a sheet of plastic wrap and place in the fridge to chill for at least 1 hour.
3. Pour the rest of the heavy cream (1 1/2 cups) into a metal bowl and beat until stiff peaks form.  Pour 1/3 of this mixture into your cold pumpkin mixture and beat to combine.  Then pour the the rest and use a spatula to fold in the cream until no white streaks remain.
4. Place back into the fridge to keep cold, or serve!  I served mine with a little whipped cream on top!

Autumn Minestrone Soup

Today is the first official day of winter break! I stuck to my typical schedule of going to boot camp class at 5:45 am because I figured it was good for me.  I know I'm a little crazy.  However, it was a nice way to start my day and now I have the whole day ahead of me!  

What is really weirding me out is the fact that it is raining...on December 21st...in Chicago.  What???

So, I figured it would be lovely to share this soup recipe with you all because it is a soup kinda day.  

I made this soup as part of Bri's and my vegetarian Thanksgiving.  This was just a dinner for the two of us where I went all out and made a ton of delicious vegetarian things.  This Autumn Minestrone was super easy to make and it was amazing!  If anyone else out there is looking out the window and thinking today is going to be one dreary Monday, make this soup!  It will totally brighten your day!

Autumn Minestrone Soup
(adapted from Cooking Classy)

Ingredients:
15 baby carrots, chopped
1 medium sweet onion, chopped
1 tbsp extra virgin olive oil
4 cloves garlic, minced
6 cups vegetable broth
2 - 2 1/2 cups 1 inch cubed sweet potato, peeled first
2 - 2 1/2 cups 1 inch cubed butternut squash
1 zucchini, quartered
1 14.5 oz can diced tomatoes
1 tsp dried rosemary
1 tsp dried oregano
2 tsp dried thyme
1 tsp cinnamon
2 bay leaves
salt and pepper to taste
2 cups kale and spinach mix
1 14.5 oz can red kidney beans, drained and rinsed
parmesan for topping

Directions:
1. In a large pot, heat the olive oil over medium and add in the carrots and onion.  Cook for about 5 minutes and then add in the garlic and cook for another minute.  
2. Add in the vegetable broth, sweet potatoes, butternut squash, zucchini, rosemary, oregano, thyme, cinnamon, and bay leaves.  Season with salt and pepper.  Bring mixture to a boil and then reduce heat and let simmer, covered, for about 15 minutes or until sweet potatoes can be pierced with a fork.  
3. Add in the kale/spinach and the kidney beans.  Cover and let cook for an additional 5 minutes.  Remove the bay leaves and serve with parmesan if you want!

Roasted Butternut Squash Black Bean and Goat Cheese Dip

Who doesn't love dip?  A good dip is just the best!  I made this one for my book club girlfriends and they found it to be delicious.  I think it has a surprising taste, but it really good and you just can't stop eating it.  In fact, I'm thinking about making this dip for a girl's night I have coming up!

My girlfriends organized a secret santa exchange.  I like to call it a secret snowman exchange, but whatever.  How cute are we? My friend Caryn organized it and I am super pumped.  I can't wait to see what I get and I'm pretty excited about the gift I got for my secret person!  Hanukkah is happening right now and I am excited to do some gift giving :)

This week is also actually flying by!  Today all the students are taking a practice ACT exam.  I am excited to see how my students do.  The school was able to get graphing calculators for every student that did not have one (of the 200ish 11th graders, 110 did not have one).  It was really nice and I am excited to see if they perform better today with the extra help and confidence from the graphing calculator!  We spent the last week integrating calculator skill education into our class so they should be totally ready to use them today!

Cheer is also going great! We had a clinic on Saturday and we had a college cheerleader come in to help support our team and teach them some new cheers and jumps.  The team worked so hard and they learned so much.  I was super proud of all of them!  Plus, our uniforms are finally here! So, on Thursday when we perform at the basketball game, we will be in our uniforms and we will have a bunch of new cheers to debut! I can't wait.

Now, back to that dip!

Roasted Butternut Squash Black Bean and Goat Cheese Dip

Ingredients:
1 butternut squash, peeled, de-seeded and chopped into 1 inch cubes
2 tbsp olive oil
1 tsp cinnamon
1 tsp garlic powder
pinch of nutmeg
salt and pepper
1 15 oz can black beans, drained and rinsed
10 oz goat cheese
3 tbsp chopped herbs (thyme, parsley, cilantro)

Directions:
1. Preheat oven to 425 and line a baking sheet with parchment paper.  Toss the cubed squash in a bowl with the olive oil, cinnamon, garlic powder, salt and pepper to taste, and nutmeg.  Spread out in one layer on your lined baking sheet.  Bake for 30 minutes, tossing occasionally. Once done, remove from oven and lowder the temp to 350 degrees.
2. Place the cooked squash in a food processor and pulse until you have a smooth puree.  Add in the goat cheese and herbs and process until smooth.  Add in the black beans and pulse a few times to combine and smash.
3. Place mixture in a oven-safe dish (I used my adorable mini skillet) and place in oven for 15-20 minutes.  Serve with tortilla chips, veggies, or whatever else you feel like!

Caramel Apple Cake

Today is my last day of school this week!!! Plus, it's a test day!  I know...I'm a little evil.  I'm a math teacher and I'm excited about giving a test.  Actually, I'm really excited about this test because my students are going to do amazing on it and that is pretty awesome.

I'm also pumped because after school I am leaving for NYC with my family!  We are DRIVING there.  So, if we don't kill each other, by Wednesday night, we will be in NYC to meet up with my little brother and the University of Illinois Marching Band.  My brother is a proud member of this band and they are performing in the Macy's Day Parade on Thanksgiving!! How cool is that?

I'm excited to go to New York, see my New York family and see the Macy's Day Parade in person for the first time.  It is going to be so fun.

To celebrate, I'm sharing a cake!  This Caramel Apple Cake was inspired by the Brown Eyed Baker.  I made it for the ladies of my book club and they thought it was one of the best cakes they had ever had.  I made my cake with two layers of apple spice cake and then spread some "to die for" cinnamon, caramel cream cheese frosting over the whole thing.  Finally, I topped it off with some fresh slices of a granny smith apple.  YUM!  This dessert is super tasty and it is a great option for a Thanksgiving dessert that celebrates fall flavors.

Caramel Apple Cake

Ingredients:
4 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1 1/2 cups unsalted butter, at room temperature
2 1/2 cups sugar
2 eggs
4 cups unsweetened, plain applesauce
Frosting:
12 oz light cream cheese
1 cup unsalted butter
3-4 cups powdered sugar
1 tsp cinnamon
2 tbsp caramel sauce
1-2 tsp heavy cream (optional)

Directions:
1. Preheat oven to 350 and line two 9 inch circular cake pans with parchment paper.  Grease generously.
2. In a medium sized bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves together.
3. In a large bowl, beat the butter with the sugar for a few minutes.  Beat until it is light and fluffy.  Beat in both eggs until well combined.
4. Alternate adding the flour mixture with the applesauce mixture to the butter and sugar.  Start and end with the flour. Divide the batter into the two prepared pans. Bake for 55-60 minutes.  Let cool completely.
5. To make the frosting, beat the butter and cream cheese together until well combined.  Add in the powdered sugar, 1/2 cup at a time until you have a desired taste and consistency.  Add in the cinnamon and caramel sauce and beat well.  Add in the cream if needed.
6. Once your cake is totally cooled, you can spread a layer of frosting over the top of one layer and the place the other layer on top.  Frosting completely and top with some apple slices.

Brown Sugar Butterscotch Oatmeal Bars

I go through some weird phases.  The most recent one has been a butterscotch phase.  Bri's dad is big fan of butterscotch and it was just his birthday!  So, I made some butterscotch bars.  And now, I am really into butterscotch!

Butterscotch is super weird.  I mean, what is it?  So, my friend and I looked it up and found out that it is a delightful combination of brown sugar and butter! No wonder it is so delicious!

These butterscotch bars are super easy and I adapted them for a previous time by swapping the sugar for light brown sugar.  Brown sugar, butter, and butterscotch all combined in a great oatmeal bar!  You have to make these!

Brown Sugar Butterscotch Oatmeal Bars

Ingredients:
1 cup flour
1tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup unsalted butter
3/4 cup brown sugar
2 eggs
1 tsp vanilla
3 cups old-fashioned oats
12 oz butterscotch chips

Directions:
1. Preheat oven to 350 and lightly grease a 13 by 9 inch pan
2. In a medium bowl, whisk the flour, baking soda, salt, cinnamon, nutmeg, and cloves together.
3. In a large bowl, beat the butter with the brown sugar until well combined.  Add in the eggs and vanilla and beat until combined.  Add in the flour mixture and slowly mix until just combined.  Add in the oats and chips and stir to combine evenly throughout the mixture.
4. Spread the batter into your prepared pan and bake for about 20-25 minutes.  The edges should be slightly browned.  Let cool completely and then cut into bars.

Apple Cinnamon Coffee Cake

Happy Saturday everyone! Today is one of my besties birthdays so I gotta give her a shout-out: Happy Birthday Tamara! Tamara, is also one amazing chef and we became really good friends after discovering our mutual love and appreciation for cupcakes :).  She is pretty awesome and she is one of my bridesmaids!  I hope you have a great day, Tamara!

Today is also pretty exciting in that I am picking up my race day swag for the Rock and Roll Half Marathon.  I am going to be running that tomorrow and I am keeping my fingers crossed for a cool morning and no thunderstorms...Even though the weather is pretty awful right now, I am still very excited!  

Today, Bri and I are also going to see the new movie, Trainwreck.  After that is when we are gonna head over to the half marathon expo, and then we have to scurry back to get ready for dinner at Due Lire with my parents.  My birthday is coming up, so we are starting the celebration tonight with dinner.  I have never been to this restaurant, but I have heard amazing things and I will for sure report back.  

I figured that today was a great day to share this Apple Cinnamon Coffee Cake.  I made this a while back, but I was in a coffee cake mood this morning.  I mean, it's Saturday, I'm running 13.1 miles tomorrow, and my birthday is this week.  Is there a better way to celebrate than with a good, ol' coffee cake? 


Apple Cinnamon Coffee Cake

Note: Please go check out her blog for some amazing photos and the recipe.  I changed a few things, so I will tell you about that, but she did a really lovely job with the dough and has some amazing photos of it! 

Ingredients:
2 cups flour
1 cup whole wheat flour
1/4 cup sugar
1 package of yeast (I used regular as opposed to quick rise)
1/2 tsp salt
1/2 tsp cinnamon
3/4 cup skim milk
1/4 cup unsalted butter, cold and cubed
2 eggs
Apple Filling
4 large apples (I used Granny Smith)
1/2 cup sugar
1 tsp cinnamon
1/4 cup lemon juice
3 tbsp unsalted butter
Streusel Topping
1/3 cup brown sugar
1/3 cup flour
1/4 cup old-fashioned oats
1/2 tsp cinnamon
pinch of salt
3 tbsp unsalted butter, melted
Icing
1 cup powdered sugar
1 tbsp skim milk

Directions:
1. In a large bowl, beat 1 cup flour, 1 cup whole wheat flour, sugar, yeast, salt, and cinnamon.
2. Place butter and milk into a microwave safe bowl and microwave for 1 minute.  Add warm milk to the flour mixture and mix until combined.
3. Lightly flour a clean surface and remove dough from the bowl to knead.  Knead for about 8-10 minutes or until dough is smooth and springy.  Place into a lightly greased bowl and place bowl in a warm location.  I turn on my oven to 100 degrees and then leave the bowl in there with the door open.  Let the dough rise until doubled in size.  This took a little over 1 hour.
4. While the dough is rising, peel and chop apples.  Place apples, sugar, cinnamon, and lemon juice in a bowl and toss to combine.  Pour mixture into a pan and add the butter.  Saute the mixture for about 10 minutes so that the apples start to soften.  Let cool.
5. To make the streusel topping, combine the brown sugar, flour, oats, cinnamon, and salt in a bowl.  Add the melted butter and combine until your mixture forms small clumps.  Set aside.
6. Prepare two 9 inch cake pans.  Place parchment paper in the bottoms of the pans and generously spray with non-stick spray.
7. Once the dough is ready, divide in half.  Take one half and divide that into two pieces.  One piece should be about 2/3 of the dough and the other should be about 1/3 of the dough.  Take the large piece and roll it out so that it fits into the bottom of a cake pan.  With the small piece, roll it out so that it looks like a long rope.  Use this to wrap around the edge of the pan.  You are basically creating a wall to go around the bottom of the pan.  Repeat this with the other half of the dough for the second pan.
8.  Divide the apple filling into each of the pans and then sprinkle the streusel over the tops.  Cover with plastic wrap and let rise until doubled.  This took about 1 hour.
9.  Preheat the oven to 350 and once the cakes are ready, bake for about 20 minutes.
10.  When you are ready to serve, mix the powdered sugar with the milk to create your icing and drizzle over the tops of the cakes.

Cinnamon Bars with Cinnamon Cream Cheese Frosting

The Blackhawks won the Stanley Cup!!!!! Oh my gosh, last night was so exciting! My buddy, Lauren, is also a huge hawks fan so she came over to watch the game with us.  We debated going out somewhere to be part of the festivities, but the weather was super horrible (like tornado warning, horrible) so we ended up staying in.  I think this was a good choice because we were able to see the game better and I got to wear comfy clothes :).  

After some sleep, I am ready to start CAMP TRAINING! Woo! Summer job officially starts today and I am pretty pumped.  

To celebrate, I have a yummy recipe for delicious cinnamon bars.  Plus, these cinnamon bars are topped with an amazing cream cheese frosting.  I adore a good cream cheese frosting, and this one has extra cinnamon in it to complement those bars.  Yum! 

Cinnamon Bars with Cinnamon Cream Cheese Frosting

Cinnamon Bars
Ingredients:
Bars:
3/4 cup unsalted butter, at room temperature
3/4 cup brown sugar
1 egg
1/3 cup molasses
2 1/2 cups flour
2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
Frosting:
16 oz light cream cheese
1 cup powdered sugar
1 tsp cinnamon

Directions:
1. Preheat oven to 350 and line a 13 by 9 inch baking pan with foil.  Grease the foil.
2. In a small bowl, whisk the flour with the baking soda, cinnamon, and salt.
3. In a large bowl, beat the butter and brown sugar together until well combined.  Beat in the egg and the molasses until well combined.  Beat in the flour mixture until just combined.
4. Pour the batter into your prepared pan and back for about 18 minutes.  Let cool for about 15 and then use the foil to remove the bars from the pan.  Let cool completely.
5. To make the frosting, beat the cream cheese with the powdered sugar and cinnamon until well combined.  Spread over the cooled bars.

Red Wine Chocolate Cake with Red Wine Chocolate Ganache

It's Thirsty Thursday and the Scandal finale is on tonight!  What better way to celebrate than with a recipe for Red Wine Chocolate Cake!  I found this recipe over at Food & Wine and I adapted it slightly.  It was the perfect way to celebrate a recent birthday and it was an amazingly decadent chocolate cake!  

In other news, I went to my second Cubs game of the season last night.  My brother is in town and it was so fun to hang out with him.  Plus, the cubs won!  It was a pretty chilly night for a game, but we still had a great time.  It was a little weird to be out late on a Wednesday and I'm a little sleepy today, but I'm sure I'll be fine! I guess I should also mention that tonight there is a pretty big basketball game involving a Chicago team...if you're into that...I just can't wait for Scandal :).  I'm sure my sport-loving fiance will keep me updated on the sporting world anyways! 


I hope that you all enjoy this recipe!  Get out a good bottle of red wine, try not to drink too much while you bake, and have fun! 

Red Wine Chocolate Cake with Red Wine Ganache
Ingredients:
Cake:
1 1/4 cups dry red wine (I used a Cabernet Sauvignon)

3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups sugar
2 eggs
1 tsp vanilla
Ganache:1 cup chocolate chips (I used a mix of dark and milk)
3 tbsp heavy whipping cream
2 tbsp red wine




Directions:
1. Preheat oven to 350 and grease a bundt cake pan.
2. In a medium bowl, whisk the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy.  Beat in the eggs and vanilla until well combined.
4. Add in 1/3 of the flour mixture to the wet ingredients and mix until just combined.  Then, add in 1/2 of the wine and mix until combined.  Continue with another 1/3 of the flour, then the rest of the wine, and finally the rest of the flour until just combined.  Pour the batter into your prepared pan and place in oven for 45 minutes.
5. While the cake is baking, make the ganache: In a heat-proof bowl, place the chocolate with the cream.  Let the bowl sit over a pot of boiling water and stir once the chocolate starts to soften.  If your mixture doesn't come together, you can add a little more cream.  Once smooth, stir in the red wine and remove from heat.
6. When your cake is done, let cool for 15 minutes and then frost with the ganache.  Let cake cook completely and ganache set.

Butternut Squash Mac and Cheese

I just submitted my last final and my classes are over! My grad classes that is...My high school classes are done as of June 4th.  I am so excited to be done with these grad classes I can't even explain.  It is a great feeling and now I can officially start the countdown to the end of the school year and the start of camp!  I am going to be working as a camp director again and I am really excited about it.  I can't wait for another summer filled with art projects, playing on playgrounds, and going to waterparks!  

I made this super yummy macaroni and "cheese" recipe recently and it has been on my mind ever since.  I have seen a ton of recipes that sub out cheese for some sort of veggie to make the dish a little lighter and healthier.  This recipe uses mashed butternut squash mixed with some cheese to create a delicious and creamy "cheese" sauce.  You would never know that there are veggies in this!  Bri and I had this for dinner, but then there were enough leftovers for me to have lunch at school the next day too! 

I had a squash lying around so I decided to experiment with a new recipe.  I wanted to make something quick so I went with a stove-top style recipe.  I cooked some pasta, cooked/mashed the squash, and came up with this awesome cheese sauce.  You can use your cheeses of choice, but I went with some sharp cheddar and gorgonzola.  It was awesome!  I can't wait to try other variations of this dish in the future! 

Butternut Squash Mac and Cheese 

Butternut Squash Mac and Cheese

Ingredients:
12 oz whole wheat macaroni noodles
1 medium butternut squash, peeled and cubed
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp cinnamon
3/4 cup vegetable broth
1 1/2 cups skim milk
8 oz of cheddar and gorgonzola (4 oz each), shredded/cubed
1 tsp hot sauce (or more to taste)
1 tsp mustard (or more to taste)

Directions:1. Make the pasta according to directions to al dente, drain and set aside.
2. Heat olive oil over medium in a pot and place butternut squash in.  Let cook for 5 minutes or so then add the salt, pepper, cinnamon, and vegetable broth.  Cover and cook for 15 minutes or until squash can be easily pierced with a fork.  Using two forks or a potato masher, mash the squash until you have a smooth paste.  Pour in the milk and cheeses and mix until cheese melts.  Stir in the hot sauce and mustard and season with more salt and pepper if desired.  Pour the the pasta and stir to coat.

Quick Whole Wheat Cinnamon Rolls

Today I am feeling nostalgic about my marathon training.  I just went for a brisk 9 mile run, and it just wasn't the same without my running buddies in my running group.  About 3 weeks after the marathon, I did the Hot Chocolate 15K with some friends and that was a blast because it got me back into running and it was such a fun race.

Then, I did the Turkey Trot 5K with a friend and that was fun too!  Now, I am trying to stay motivated to go for runs because I love how they make me feel, but I also get sad that I don't have running buddies all the time to chat with.  Last weekend, I decided to run 13 miles just for the hell of it.  Around mile 8 though, I was so bored!  I decided to call my mom to talk to her while I was running.  That helped, but she couldn't talk to me forever!  I am going to have to look for some awesome playlists if I am going to keep myself entertained!  Anyone have any suggestions?  

In honor of my nostalgia, I am sharing a recipe that I made for myself for my post-marathon breakfast.  I woke up the next day looking to eat everything in sight.  I am also a huge sucker for a good cinnamon roll.  They are definitely one of my guilty pleasures.  I found a recipe for a small batch of easy cinnamon rolls and I just had to have them!  Then, I modified the recipe to be a little lighter and whole wheat!  I felt like this made the cinnamon rolls into a healthy breakfast...right?

Quick Whole Wheat Cinnamon Rolls
(adapted from Dessert for Two)

Ingredients:
3/4 cup whole wheat flour
2 tbsp sugar, divided
1/2 tsp baking powder
1/4 tsp baking soda
pinch of salt
5 tbsp skim milk
1 tsp apple cider vinegar
4 tbsp unsalted butter or margarine, melted
3 tbsp brown sugar
1 1/2 tsp cinnamon
Glaze:
2 tbsp light cream cheese
1/4 cup powdered sugar
1 tsp skim milk

Directions:
1. Preheat oven to 375 and spray a muffin tin with nonstick cooking spray.
2. In a bowl, whisk flour, 1 tbsp sugar, baking powder, baking soda, and salt.
3. In a small bowl, combine milk, vinegar, and 2 tbsp of the melted butter.  Pour this into the dry ingredients and stir until just combined and a dough forms.  
4. Roll the dough out so that you have a long and thin rectangle.  Spread the rest of the melted butter on the dough and sprinkle the rest of the sugar and the cinnamon so that it is thoroughly covered.  Take the long edge of the rectangle and roll the dough up.  Cut into 4 pieces and place into your muffin pan.
5. Bake for about 14 minutes.  While baking, stir the ingredients for the glaze together.  When cinnamon rolls are done, frost!

Oatmeal Cookie Apple Pie

This is my 500th blog post! Can you believe that?  I can't!  I love posting here and although and don't post as frequently as I used to, I still love documenting a little about my life and all the fun food I make!

Last night, I had a great time with some of my teacher buddies.  We ran a 5K and then hung out after for dinner and drinks.  It was so much fun!  Plus, I cam in first in the 5K for my age group!  That was pretty funny and exciting.  We also played Cards Against Humanity which is just hilarious.

In honor of my 500th post and Thanksgiving being right around the corner, I have a yummy recipe for Apple Pie with an Oatmeal Cookie Crust!  I found the recipe on How Sweet It Is and then adapted it a bit to fit what I wanted.  I hope that you enjoy this amazing recipe and (hopefully) another 500 posts to come.

Oatmeal Cookie Apple Pie

Ingredients:
Crust:
1 1/4 cups flour
1/2 tbsp sugar
1/4 tsp salt
1/2 cup cold, unsalted butter, cubed
1 tsp apple cider vinegar
2-3 tbsp ice water
Filling:
6 large apples peeled and sliced thin (I used Granny Smith)
2 1/2 tbsp flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1 cup apple cider
1/2 cup brown sugar
3 tbsp unsalted butter
1 tsp vanilla
Topping:
1 1/2 cups old fashioned oats
3/4 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
1/4 tsp salt
6 tbsp unsalted butter

Directions:
1. Make the crust: place flour, salt, and sugar in a food processor.  Let pulse and add in the butter until mixture starts to combine.  Add in the vinegar and then the water, 1 tbsp at a time, until the mixture forms into a ball.  Wrap in plastic wrap and place in fridge to chill.
2. Make the filling: In a medium saucepan, combine the apple cider, brown sugar, butter and vanilla.  Bring to a boil and then simmer for 6-7 minutes or until mixture thickens.
3. In a large bowl, toss apple slices with the flour, cinnamon, nutmeg, and cloves.  Pour the cider mixture over the top and toss to combine.
4. Once dough has chilled, place on a lightly floured surface and roll out until you have a crust that is about 1/4 inch thick.  Place in a lightly greased pie pan.
5. Preheat oven to 375 degrees.
6.  Place apples in the prepared pie pan.
7.  Make the topping: In a large bowl, whisk the oats, flour, cinnamon and salt.  Using a pastry cutter or your hands, cut in the butter until you have a streusel like topping.  Sprinkle the topping over the apples and press down to make sure that it stays in place.
8.  Bake pie for 45-50 minutes.

Pumpkin Chai Cupcakes

So yesterday I ran a marathon.  I can't believe I get to say that now!  I completed the Bank of American Chicago Marathon.  My toes really hurt right now, but I am so excited and proud of myself.  My finishing time was 4 hours and 37 minutes and I ran the entire time at about a 10 minute mile pace.  I walked through water stations and stopped for the bathroom, but other than that, I ran the entire freaking thing.  It was so cool.  If you want, check out my thoughts on this whole thing here: My First Marathon.

I was so nervous going into this weekend, that I baked cupcakes for no reason at all.  I just needed something to do.  However, now I am really happy that I did because these Pumpkin Chai Cupcakes are super delicious and a well-deserved treat after the 26.2 miles I ran yesterday.  Make these delicious cupcakes for a yummy fall treat!

Pumpkin Chai Cupcakes (I call them Chumpkin Cupcakes)

Ingredients:
Chai Syrup:
1 cup water
6 tbsp sugar
4 chai tea bags
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
Cake:
2 1/2 cups flour
2 1/2 tsp baking powder
1 1/2 tsp cinnamon
1 tsp ginger
1/2 tsp pumpkin pie spice
1/4 tsp cloves
1 cup brown sugar
1/2 cup sugar
3/4 cup + 2 tbsp canola oil
4 eggs
3 tbsp chai syrup
1 tsp vanilla
15 oz pumpkin puree (plain)
Frosting:
1 cup unsalted butter, at room temperature
2 1/2 cups powdered sugar
2 tbsp chai syrup
1/2 tsp vanilla

Directions:
1. To make the chai syrup:  Place water, sugar, spices, and tea bags in a medium saucepan.  Stir and bring to a rolling boil.  Lower heat and let simmer for about 10 minutes or until water is reduced and you have a syrup texture.  Remove tea bags and place syrup in a container.  Place in fridge until cool.
2. Preheat oven to 350 and place cupcake liners in your cupcake pan.  I made regular cupcakes and mini cupcakes.
3. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, ginger, pumpkin pie spice, and cloves.  In a large bowl, place brown sugar, sugar, and canola oil.  Beat until well combined.  Beat in eggs, chai syrup, and vanilla.  Slowly add in the flour mixture until just combined.  Stir in the pumpkin puree until combined.
4. Fill cupcake wells about 2/3 full.  For regular cupcakes bake 20-23 and for mini cupcakes bake for 15-18 minutes.  An inserted toothpick should come out clean.  Let cool before frosting.
5. To make the frosting, beat butter until whipped and then beat in the powdered sugar, chai syrup and vanilla.  Beat until well combined and frost!

Sea Salted Caramel Brown Butter Cookie Cups

I feel like I've been slacking.  I know I don't post as much anymore, but what I really mean is that I've been totally skimping on sharing my amazing Chicago experiences.

I've been living in my apartment in Chicago for over a year now, and I really haven't shared all the amazing times I've had around the city.   I will be at an event thinking, "I should totally post about this," and I'll even take pictures so that I'm ready for the post.  But then, I forget, or get busy, or just get lazy.  So, I have ended up with tons of photos of amazing times that have never ended up here.  

This issue ends today.  I am going to start actually informing you all about how great Chicago is.  Starting with: Breweries.  Bri and I are huge fans of going to various breweries to take tours and sample beer.  Chicago is a fantastic place to do that!  So far, we have hit up two spots: Revolution and Half Acre.  Both breweries have great beer and we even had dinner at Revolution which was also fantastic.  If you are ever in town, try to find a brewery tour to take.  There are so many in Chicago and it is a really fun way to spend an afternoon.  


Today I also have an amazing dessert recipe to share!  I made these, brought them to school, and was told they were the best thing I've ever made.  Now, I get told that a lot, but truly these guys are delicious.  They also go along with the theme of amazing things that I am currently into because I am currently obsessed with carmel and sea salt.  I can't get enough.  I just ordered some dark chocolate sea salt caramels to support the school's band, and I bought the Dove ones from the store to keep in my desk.  I can't get enough! Sweet, salty, and delicious, these Sea Salted Caramel Brown Butter Cookie Cups are just divine!  

Sea Salted Caramel Brown Butter Cookie Cups

Ingredients:
3 cups flour
3/4 tsp baking soda
3/4 tsp salt
1 cup unsalted butter
1/2 tsp cinnamon
3/4 cup sugar
1 cup brown sugar
1 tbsp vanilla
1 egg
1 egg white
2 cups mini chocolate chips
24 caramels
sea salt

Directions:
1. Preheat oven to 350 and lightly grease a mini muffin pan.
2. Place butter in a small sauce pan and melt over medium heat.  Continue to swirl the butter around over medium heat until it browns.  Remove from heat.
3. In a medium bowl, whisk the flour, baking soda, salt, and cinnamon.  
4. In a large bowl, beat the brown sugar, sugar, and browned butter until well combined.  Beat in the egg and egg white until combined and then the vanilla.  Slowly mix in the flour mixture until just combined.  
5.  Fill each muffin well about halfway with cookie dough.  Press a caramel into each well and sprinkle sea salt over the top of each caramel.  Scoop cookie dough on top of each salted caramel and press into the muffin well.  
6. Bake for 12-15 minutes or until cookie dough just starts to brown. Let cool and remove from muffin pan.

5 Courses to Celebrate 5 Years

August, 3rd: Bri and I had a really great year.  One year ago, we moved into our apartment and celebrated our 4-year anniversary.  Now, we have been living together for a year and are on year 5 of our relationship!  It has been really great and I am so appreciative for all the amazing times we have experienced together.  To celebrate year 5, I thought it would be cute to cook dinner together and have 5 courses in honor of 5 years.  We shared this amazing meal and watched a movie and it was a quiet and lovely anniversary.

Ingredients:
Pastry Cream Frosting:
1 cup heavy cream
2/3 cup skim milk
2 tsp vanilla
pinch of salt
4 egg yolks
3 tbsp cornstarch
8 tbsp sugar, divided
1 tbsp unsalted butter
Cupcake:
1 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup unsalted butter
3/4 + 2 tbsp sugar
2 egg whites
1 egg
1 1/2 tsp vanilla
1/2 cup skim milk

Directions:
1. To make the pastry cream, in a medium saucepan, combine the cream, milk, 6 tbsp sugar, vanilla, and salt.  Heat over medium heat until you just start to see bubbles.  Turn heat to medium-low.  While cream is warming up, in a bowl, whisk the egg yolks with 2 tbsp of sugar and the cornstarch.  (Save 2 of the egg whites for the cupcake batter).  When cream mixture is warm, take about 1/2 cup and slowly pour it into the egg mixture while whisking.  Continue to whisk and pour the egg mixture into the cream mixture.  Whisk until cream thickens.  Turn off heat and whisk in the 1 tbsp of butter.  Pour pastry cream into a bowl and cover with saran wrap so that the saran wrap is pressed against the pastry cream.  Cool in fridge for 2-3 hours.
2. To make the cupcake batter, in a medium bowl whisk flour, baking soda, baking powder, salt and cinnamon.  IN a large bowl, beat butter with sugar until light and fluffy.  Beat in the egg whites and egg, one at a time, until well combined.  Measure out the milk in a liquid measure cup and stir the vanilla into the milk.  Alternate adding the flour and milk to the butter/sugar starting with the flour and ending with the flour.  Beat until just combined.  Divide batter into 6 jumbo or 12 regular cupcake wells.  Bake at 350 for about 23 minutes.  Let cool completely.
3. To assemble cupcakes, spread the pastry cream over the tops of the cupcakes.  Sprinkle sugar on top and, using a kitchen torch, burn the sugar until it just starts to brown and harden.

Stacy's Chocolate Chip Banana Bread

Last year, my cooperating teacher gave me a recipe for Banana Bread.  It was the best banana bread I had ever had! I just had to share her recipe here since it didn't seem fair that I was one of the only people who knew such great banana bread existed! I tweaked the recipe a tad the last time I made it to use half whole wheat half all-purpose flour, but you can use all all-purpose if you want.  Here it is!

Chocolate Chip Banana Bread

Ingredients:
2 cups flour (I used half whole wheat and half all-purpose)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
5-7 ripe bananas, mashed
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup canola oil (I used 1/4 cup oil and 1/4 cup greek yogurt)
1 cup semi-sweet chocolate chips

Directions:
1. Preheat oven to 350 and grease a 9 by 5 inch loaf pan.
2. In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.  Whisk to combine.
3. In a large bowl, beat bananas until well mashed.  Beat in sugar, eggs, vanilla, and oil.  Beat until well combined.  Slowly beat in the flour mixture until just combined and then stir in the chocolate chips.
4. Bake for 55 minutes or until and inserted toothpick comes out clean. Let cool.
