Roasted Vegetable Lasagna
Is it summer yet? I feel like I am just trudging my way towards summer. I swear each school day is a little longer than the previous one. Any other teachers out there feel me? I know you do because this facebook link keeps getting shared:
Now, don't get me wrong, I love my job and I love my students and I love my fellow teachers. I just am also super freaking excited for this summer. I have a pretty big summer ahead of me and with my first wedding shower (there are 3) this weekend, I just can't focus on anything else.
The weather is also (finally) getting nicer and that makes it extra hard to focus. The longer days and warmer weather are making me so much happier. I have also been cooking more because when it is lighter out I just feel less tired. This lasagna happened because of one of those nights.
You are going to love this. You roast a TON of vegetables and then you layer them with some pasta and a TON of cheese. Then you bake it and someone it magically becomes a crazy good lasagna. Even the vegetable haters out there are going to love this! I was inspired by How Sweet It Is and then I just used my own vegetables and cheese and had way too much fun with it.
Roasted Vegetable Lasagna
Ingredients:
8 oz sliced portobello mushrooms
10 oz broccoli florets
1 sweet onion, chopped
1 red pepper, chopped
1 zucchini, quartered
1 pint red grape or cherry tomatoes
1 pint yellow grape or cherry tomatoes
olive oil
salt and pepper
2 cups light ricotta cheese
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
pinch of pepper
1 burrata ball
1 8 oz container of pearl mozzarella balls
1 8 oz container shaved parmesan cheese
8 oz smoked provolone cheese, shredded
1 24 oz jar of marinara sauce (your favorite)
1 box no-boil lasagna noodles
Directions:
1. Line 3 pans with parchment paper and preheat oven to 425.
2. Place mushrooms, broccoli, onion, pepper, and zucchini into a bowl and toss with 2 tbsp of olive oil, and salt and pepper (to taste). Spread out the veggies onto two pans.
3. Place all the tomatoes in a bowl and toss with 2 tbsp of olive oil and some salt and pepper. Spread these guys out on the third pan.
4. Place the pans in the oven and roast for 25-30 minutes. Take out from oven.
5. While the veggies are roasting, in a medium bowl, mix the ricotta with half the parmesan, half the provolone, and the basil, oregano, salt and pepper.
6. In a 13 by 9 inch pan, spread a thin layer of marinara sauce. Place three long lasagna noodles on this. Spread some ricotta mixture on top and then sprinkle a few mozzarella pearls. Then, take about 1/3 of the veggies and sprinkle on top. Drizzle with marinara sauce, and in a few roasted tomatoes, and then shred about 1/3 of the burrata ball and sprinkle over the top. Place more lasagna noodles over this and repeat with two more layers. For the final layer, drizzle some marinara sauce on top and then sprinkle the remaining Parmesan and provolone. Also add the remaining tomatoes on top.
7. Reduce the heat of the oven to 400 and bake the lasagna for 45 minutes. Let sit for about 30-60 minutes.

Guest Blogger! A story of Fresh Pasta, Eggplant Involtini and Braised Chicken Thighs
My good friend, Shantanu, is an excellent chef. Last Friday, he invited us over for dinner because he "felt like making fresh pasta." I was super excited about this and I readily agreed to come over and help. We made:
- Fresh Pasta
- Eggplant Involtini
- Braised Chicken Thighs
Sigh...it was a lovely meal and although it wasn't ready for 2 hours, it was a super fun night with some great friends and amazing food. So, without further ado, here is Shantanu:
Full disclosure: I’m the reason we didn’t have dinner ready until 9:30 last Friday, but to be fair, it was a weeknight, dinner was delicious, and I had a food craving to take care of.
Food cravings are definitely a thing, one that I experience way too often. Usually, it’s something that’s full of grease and flour, of minimal nutritional value, and almost always involve fried chicken. This time though, while being a bit heavy on the carbs, the food I was craving was just indulgent enough to be worth all the extra calories. And then after a long week of the chicago cold, nothing really warms you up like a bowl of fresh, homemade pasta.
Fresh pasta is one of those foods that’s incredibly simple, it’s four ingredients including the water to boil it in and some salt for seasoning, and yet so eye opening. How making a giant mess with flour and eggs leads to flowing, delicate strands, with just the right amount of bounce to each bite is almost magical (although really, it’s more science, but I’m done with work for the week and don’t have to do any more science until Monday).
While I very well could have just sauteed some shallots, garlic, red chili flakes, and tomatoes in olive oil and tossed in batch after boiled batch of freshly cut spaghetti, cracked open a beer and called it a night, pasta is more fun to share with friends. Especially friend’s that I’d planned to make dinner for but haven’t gotten around to it. Double-especially when one’s a vegetarian and you have the perfect reason to make a vegetarian meal.
As often as I cook for friends, I rarely have to cook for vegetarians. I’d always felt a bit of pity for Brian, often times the vegetarian part is merely a collection of side dishes, or is presented as the “option” while meat is the focus of the dish. Therefore, I decided to make this meal a vegetarian meal, that happens to have a meat option, because if you don’t some of your non vegetarian friends will text you asking if they can bring a steak for you to make for them. To be fair, I was flattered, because I can make a pretty mean steak.
If there was a vegetable equivalent of flank steak, I’d say it’s the eggplant. It responds well to being heavily salted, can be grilled, or rolled and stuffed, and has a nice meaty quality to it. I’d also say both are equally nutritious, although a bavette might be more nutrition for your soul whilst eggplant is actually nutritious. One of my favorite ways to prepare eggplant that goes well with pasta, while avoiding breading and frying it, is to make eggplant involtini.
Since I did have to have a meat option, I went with the foolproof chicken thighs. Because I planned to cook them sous vide, I started preparing those first. I was hoping to get them into the water bath before everyone arrived, but sadly Brian had to witness me deboning, stuffing the thighs with rosemary and basil, and folding them tightly in the skin.
Once vacuum sealed, they still look pretty unappetizing; if he had any doubts about being vegetarian, I think they were gone at that point.
Once that was started, I could focus on the next longest item to prepare, the pasta dough. Preparing the dough itself is quite quick, however I could use time productively to drink wine and eat some cheese, which has the side benefit of letting the dough relax and develop some gluten. To make the dough, I heavily flour my counter (and my floor, and my apron) and pour about two cups of flour in a mound, making a crater in the middle large enough for four egg yolks and two whole eggs. Swirling the yolks and whites around brings the eggs together, and slowly pulls in more and more flour. The swirling goes on until the liquid resembles more of a batter, at which point flour can be added in a bit more aggresively, and once it comes together, the kneading can begin. I’m not much of a baker, but to knead my dough I do a simple fold, push, and quarter-turn. Fold, push, quarter-turn; fold, push, quarter-turn. This goes on, until the dough feels like the sticky part of a post-it, at this stage it’s almost done, so I let Jodie handle the kneading while I went off to make some tomato sauce. Incorporate a bit more flour until the dough is just tacky, and put aside. To store the dough, I wrap in plastic wrap and set on the cleanest part of the counter
With the dough done, I got the guests going to make the filling. Some lemon zest, ricotta cheese, and fresh basil all came together in what could make a pretty decent dip on it’s own. But then after I fried up the eggplants a little to soften them, they got stuffed with the cheese and placed in a pan with the tomato sauce, with some more drizzled on top and fresh mozzarella slices to melt all over them, and got tossed into a hot oven.
Meanwhile, I consumed enough wine and cheese for a bit so it was time to roll out the pasta. Again, flour absolutely everything and cut the dough into quarters. I slowly run it through the machine at the widest setting, tri fold, rotate, and pass through again. I do this a few times, helping knead the dough, developing it a bit before stretching it out. As the rollers get closer, the pasta gets longer, eventually ready to be cut into linguine. Arrange in little nests after it’s cut, and then toss them into boiling water.
While getting the water boiling, I sauteed some garlic and red chili flakes in olive oil, keeping it warm. Once the pasta is cooked, taking only a few minutes, I toss it into the pan with a nice ladleful of starchy pasta water, helping to bind the now flavored oil to the noodles.
Last thing to be finished off is the chicken, which I pulled out of the vacuum bags, perfectly cooked, and quickly seared it off, with a bit of help from the searzall. True fact: almost everything is improved by a blast with the searzall.
And at that point, I think we were all had enough wine and were hungry enough to not give much of a damn about plating, and just dove in. It came out pretty great, hopefully the rest of the crew thought so as well! And if it wasn’t, I don’t think Jodie will ever let me post on this blog again. (Jodie here...this is totally untrue :))

Spring Veggie Pasta
I only have 6 miles left to do on my marathon training plan. The race is super close and I figured I would share a yummy pasta dish in honor of all the carb loading I've been doing. I ate this for dinner the night before my big 20 mile run and I felt great. It was a pasta dish filled with great flavors and I loved the way the roasted broccolini and tomatoes came out. I used whole wheat pasta and the whole thing ended up being a really healthy way to get some good carbs in your diet.

Tomorrow I have a 4 mile run and then Thursday is a 2 mile run and then that is it! I am ready to run Chicago's fantastic 26.2 mile route!
School this week is also somehow flying by. I'm not sure if it is excitement or nerves, but the time is just slipping right by me. Plus, Wednesday is a testing day where I am proctoring the ACT and Friday is an Institute Day with no students. Then, we also have Monday off for Columbus Day. All this is making this, plus the marathon is making this week feel extra special and super strange. Today my students are starting some graphing work for precalculus and my AP guys are getting ready for a test on Thursday. I am trying real hard to stay focused, but I honestly feel a bit all over the place! Then, I also have cheer practice, but that is mostly just a lot of fun and the team is getting really good!
So to wrap up, this week is crazy, this pasta is crazy good, and I am a bit of a scattered-brained, mess. So head over to Food & Wine for this pasta recipe, it is really yummy. I followed everything pretty exactly except for the fact that I used whole wheat linguini and instead of shaved ricotta salata cheese (my grocery store did not have any), I used a hard goat cheddar cheese (which was super delish). Vegetarian Brussel Sprout Carbonara
School has been going pretty well. Yesterday, the students were all taking the ACT test and so I had a chance to catch up on some work! This made me feel slightly less overwhelmed. Now, when I say overwhelmed, I mean I am just really busy. I am also really happy! I can't wait to get cheerleading started and I feel like I am finally getting a good grasp on what I need to do for my classes. I have a ton to do this weekend, but I think I am in a really good place over all!
One of my favorite parts about my new schedule is that I am able to work out before school. I still wake up at the same time that I would have in order to commute to my old school, but since my commute is 1 hour (I KNOW!) shorter, I am able to get in a workout and a shower before heading over to school. This means that when I come home, I have more time to actually make dinner because I already did my workout!
Vegetarian Brussel Sprout Carbonara was one of the meals I was able to make when I got home from school. I was inspired by the recipe over at Skinny Taste, and then I adapted it to make it vegetarian. It was very yummy. I loved the combination of the brussel sprouts with the parmesan pasta. Plus, there was plenty for me and Bri to have for dinner as well as leftovers to bring for lunch. It was a great weeknight meal!
Vegetarian Brussel Sprout Carbonara
Ingredients:
2 eggs
3/4 parmesan cheese, shredded
a handful of basil, chopped
1/4 tsp red pepper flakes
12 oz whole wheat spaghetti pasta
2 tbsp olive oil
2 cloves garlic, minced
1 shallot, chopped
12 oz shaved brussel sprouts
salt and pepper, to taste
Directions:
1. In a small bowl, whisk the eggs. Add in 1/2 cup of the parmesan cheese, basil, and red pepper flakes.
2. Bring a large pot of water to boiling and cook pasta according to directions until al dente. Reserve 1 cup of pasta water. Drain and set aside.
3. While pasta is boiling, in a separate, large skillet, heat olive oil over medium heat. Add in the garlic, shallots, and brussel sprouts. Cook for about 10 minutes or until brussel sprouts start to soften and brown.
4. Add the drained pasta to the skillet.
5. With the reserved pasta water, spoon a few tbsp at a time into the egg mixture mixing well. Do this until about 1/4 of the water has been added. Then, add the egg mixture to the skillet and toss with the pasta and brussel sprouts. Add more pasta water if needed. Finish with sprinkling the remaining parmesan cheese over the top.
Enjoy :)

4 Cheese Baked Pasta - Lightened Up
Last night, Bri and I met up with some friends for dinner and trivia. I had never done trivia before and I was pretty pumped. We were terrible! However, the restaurant/bar was great and we had a ton of fun. I will def be trying this out again. I feel like if I continue to go to trivia, I should learn more and more so that I can be better at trivia...right?
I wanted to share this recipe today because it just felt like an easy, pasta sort of day. You know what I mean? This is the kind of dish that I make ahead of time on a Saturday or Sunday and then eat the leftovers for like the whole week. It was super yummy and those BBQ chips on top were one of my finer ideas. You can also vary this dish greatly. Try out different types of cheese, different toppings, different pasta!

Ingredients:
1 lb. whole wheat pasta
1/2 tsp olive oil
4 tbsp butter
1 shallot, chopped
3 cloves garlic, minced
1/4 cup whole wheat flour
2 cups skim milk
1/3 cup marscapone
5 oz gruyere, shredded
8 oz light mozzarella, shredded
8 oz sharp white cheddar, shredded
salt and pepper
1/4 tsp nutmeg
BBQ chips
Directions:
1. Make pasta according to directions, but drain 2-3 minutes before al dente.
2. In a large, oven-proof skillet, heat over medium. Once hot, add in olive oil and butter. Once butter has melted, add in the shallot and cook for 1 minute. Then add in garlic and let cook for 1 minute. Whisk in the flour and continue to whisk constantly for about 2 minutes. Pour in the milk while continuing to whisk and let cook for an additional 2 minutes. Stir in the marscapone until well combined and then add in most of the cheese. Save about 1/2 cup of the shredded cheese. Stir until melted. Season with salt, pepper, and nutmeg.
3. Preheat oven to 375. Pour the drained pasta into the cheese skillet and toss until coated. Sprinkle remaining cheese over the top. Crush the BBQ chips over the top of the pasta and let bake for 30 minutes.

One Pot Caprese Pasta
Today I have a pretty crazy day, but I still wanted to make sure that I shared this amazing recipe with everyone! I have to go to high school, then to camp, then back to the city for my zumba class. I think it's going to be slightly hectic, but that's ok! I have 3 different outfits in my backpack right now...typical?
I am a big Caprese Pasta fan. I am also a big "one-pot" recipe fan. This pasta was so easy and so delicious it will definitely become a staple for our home. All you do is throw all the ingredients into a pot and then you are done! I love this recipe and I would even add some balsamic to drizzle over the top in the future.
I recently made another Caprese Pasta Salad recipe that I found on pinterest. It was not a one-pot deal, but it came out really good so you all should try it! Here is the recipe!
Ok so back to the one-pot recipe. Here is what I did:
One Pot Caprese Pasta

Ingredients:
16 oz whole wheat pasta
1 pint grape tomatoes, halved
1/2 cup basil, chopped
3 cups water
3 cups water
1 cup vegetable stock
4 garlic cloves, minced
4 oz fresh mozzarella cheese, shredded
1/2 tsp salt
1/2 tsp pepper
Directions:
1. In a large pot, place pasta, tomatoes, basil, water, vegetable stock. and garlic. Season with the salt and pepper.
2. Bring the mixture to boil and then reduce heat to simmer. Let simmer for 10-12 minutes or until the pasta is done.
3. Stir in the mozzarella and add more salt and pepper as needed.

Butternut Squash Mac and Cheese
I just submitted my last final and my classes are over! My grad classes that is...My high school classes are done as of June 4th. I am so excited to be done with these grad classes I can't even explain. It is a great feeling and now I can officially start the countdown to the end of the school year and the start of camp! I am going to be working as a camp director again and I am really excited about it. I can't wait for another summer filled with art projects, playing on playgrounds, and going to waterparks!
I made this super yummy macaroni and "cheese" recipe recently and it has been on my mind ever since. I have seen a ton of recipes that sub out cheese for some sort of veggie to make the dish a little lighter and healthier. This recipe uses mashed butternut squash mixed with some cheese to create a delicious and creamy "cheese" sauce. You would never know that there are veggies in this! Bri and I had this for dinner, but then there were enough leftovers for me to have lunch at school the next day too!
I had a squash lying around so I decided to experiment with a new recipe. I wanted to make something quick so I went with a stove-top style recipe. I cooked some pasta, cooked/mashed the squash, and came up with this awesome cheese sauce. You can use your cheeses of choice, but I went with some sharp cheddar and gorgonzola. It was awesome! I can't wait to try other variations of this dish in the future!
Butternut Squash Mac and Cheese

Ingredients:
12 oz whole wheat macaroni noodles
1 medium butternut squash, peeled and cubed
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp cinnamon
3/4 cup vegetable broth
1 1/2 cups skim milk
8 oz of cheddar and gorgonzola (4 oz each), shredded/cubed
1 tsp hot sauce (or more to taste)
1 tsp mustard (or more to taste)
Directions:1. Make the pasta according to directions to al dente, drain and set aside.
2. Heat olive oil over medium in a pot and place butternut squash in. Let cook for 5 minutes or so then add the salt, pepper, cinnamon, and vegetable broth. Cover and cook for 15 minutes or until squash can be easily pierced with a fork. Using two forks or a potato masher, mash the squash until you have a smooth paste. Pour in the milk and cheeses and mix until cheese melts. Stir in the hot sauce and mustard and season with more salt and pepper if desired. Pour the the pasta and stir to coat.

One Pot Whole Wheat Veggie Mac and Cheese
It's official! I am running the Bank of America Chicago Marathon in 2015!!!! I am very excited about this and I am even more excited to be supporting a really great cause: Team Have Dreams. This is an organization that supports people with Autism. I decided to celebrate by going for a 9 mile run. Things started off great, but then I noticed that it was HOT. What is that about? This is Chicago! I swear I can't remember the last time I felt hot while running and I just wasn't ready for it. I ended up having a pretty terrible run and I needed to walk a bunch. Guess I'll have to start getting used to this new weather, though. It is supposed to be 80 degrees today!
I will keep you all posted on marathon training take 2, but for right now, I'm just gonna relax :)
Oh, and tell you about this unbelievable meal! I got really into one-pot meals during the winter. I am super duper busy during the week as are most people so this sorta stuff is great. You literally throw everything into one pot and cook. How great is that? What is really weird is that this a pasta dish! I used whole wheat noodles, threw in my favorite veggies, mixed together some great tasting cheeses and ta-da! It looks like a total mess, but comes out tasting amazing. Plus, the pasta cooks perfectly! I love this dish and it is completely vegetarian so Bri was pretty happy as well!

3 cloves garlic
1 tbsp olive oil
1 container of grape tomatoes, halved
1 cup skim milk
1 cup vegetable broth
2 oz gruyere, cubed or shredded
2 oz colby jack, cubed or shredded
1/2 cup shredded sharp cheddar
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp paprika
hot sauce, to taste
Directions:
1. In a large pot, heat olive oil over medium heat. Add in the minced garlic, sliced mushrooms, and asparagus. Cook for about 5 minutes or until mushrooms start to shrink.
2. Add in all the other ingredients except the hot sauce, and bring mixture to a boil. Stir everything, lower heat to medium-low, and cover and cook for 15 minutes or until the pasta is done. Add in hot sauce at the end if you want!
Enjoy :)

Deconstructed Spring Lasagna
I have been promising big things for this blog for a while now, and now it is time to start following through on that! I miss blogging as much as I did in college and I am going to work on balancing my time better between school, working out, and cooking. These are my favorite things and I want to make sure I give every single one attention! Any bloggers out there with tips on how to balance all of this?
Anyways, in Chicago, it is always exciting when those 60 degree temps finally roll around. Everyone starts walking around in shorts and flip flops! I know 60 isn't "hot," but after what feels like an eternity of winter, it is pretty exciting. Yesterday, I went for an 8 mile run along the lakeshore path and it was just amazing to be outside and not feel sharp pains in my face as the wind hits me. Plus, this weather means that summer is really right around the corner!
In honor of this amazing spring weather we are enjoying, I am sharing a delicious recipe for a Spring Lasagna. I was inspired by How Sweet It Is and I was excited to try a lasagna without all the layering work. This "lasagna" is actually deconstructed. Your just throw everything into a pan all "willy nilly" and cook it just like that! Also, I didn't use lasagna noodles, but you definitely can! You can use whatever fillings your want. I went with some vegetarian options so that Bri could enjoy, but meat lovers could do this as well!
Deconstructed Spring "Lasagna"
Ingredients:
12 oz whole wheat pasta
1 onion, sliced
4 cloves garlic, minced
1/2 cup asparagus, chopped
1/2 cup mushrooms, sliced
1/2 cup packed baby spinach
12 oz light fontina
1 cup shredded light mozzarella
1 cup pasta sauce (Your favorite)
salt and pepper
olive oil
Directions:
1. Preheat oven to 425 degrees.
2. Cook pasta noodles according to directions until al dente. Drain and set aside.
3. In a large cast iron pan, heat a few tablespoons of olive oil over medium heat. Add in the garlic and onion. Cook until onion starts to become translucent and add in the mushrooms and asparagus. Cook for about 5 minutes. Add in the spinach and cook until spinach wilts.
4. Pour in the pasta sauce and about half of the fontina cheese. Stir to combine with the veggies. Then, stir in the noodles.
5. Top everything with scoops of the rest of the fontina cheese and sprinkle with mozzarella. Bake in the oven for about 15 minutes so that the cheese becomes all melty.
Enjoy :)

Vegetarian Brussels Sprouts Lasagna
Happy first day of summer! I always loved June 21st because it is the first day of summer, the longest day of the year, and exactly one month until my birthday! So far, summer is off to a great start. I just finished my first week of camp! This summer, I am the director of three of the day camps and while my days are very hectic, I love what I am doing because I get to spend so much time outdoors or playing with the kiddos. It's a lot of fun even when I feel a little stressed.
I also just finished my second week of marathon training! This week I ran a total of 17 miles and I am feeling really good! I am running the Chicago Marathon in October and I am running with an organization called Access Living. Today, I have a fun lasagna recipe to share. I am not going to post the full recipe here since I want you all to go to the blog where I found it. I did make a few changes though, instead of 2% or whole milk, I used skim because that is what I had on hand, and I also used a light ricotta cheese. Otherwise, I followed the recipe to a T and and it turned out amazing! I made it for me and Bri and we were both huge fans. (Even Bri who is not the biggest mushroom fan!). Eggplant Fontina Pasta
I just ran 10.5 miles. All I could think was: Ok! Now just another 16 to go! I can't believe I'm doing the marathon in October and I am already super nervous and excited for it. I have been getting tons of emails about race information and training schedules and it is all starting to become very real. I feel great after my 10.5 run and this makes me confident that I will get up to that 20 mile point before the big race.
Today I have lots to share. Last night was supposed to be Bri's law school prom, but it was cancelled and in a strange twist of events, we ended up taking in a random cat for the night. The night started with drinks and dinner at Revolution Brewpub. The food and the beer were really good and you should try this place when you are in town! Next, we were supposed to head over to the Rail to meet up with some friends and watch the Blackhawks game, but on the way we ran into a super friendly and clean-looking cat. He did not have a collar and people walking on the street said they had seen that cat wandering around for a few days. He was following us around and so we figured that the poor guy was lost. We decided to take him into a 24 hour emergency clinic to see if he was microchipped. He was! However, the chip information had expired and we couldn't get ahold of his owners. So, we took him back to our apartment, got him all set up in our second bedroom, and posted online about the missing cat. Through all of this, we completely freaked our little guy, Benny, out. Poor guy is terrified of the second bedroom now! Anyways, it was a happy ending and the owners saw our post and came to pick up their cat. Glad that all worked out!
Now, I am getting rehydrated, and then Bri and I are off to grocery shop, attend a birthday party, and then back to the city for a second birthday party. All before Mother's Day tomorrow! Sheesh, we have quite the weekend ahead of us! I am making one of our favorite pasta dishes to have on hand for the week ahead. It is really quick and easy which is perfect considering we have like no extra time this weekend to chill out!
Eggplant Fontina Pasta
Ingredients:
1 lb. whole wheat pasta
1 medium eggplant, peeled and cubed
1 1/4 tsp salt
3 cloves garlic minced
1/2 tsp pepper
6 tbsp olive oil
1/2 lb. fontina cheese, shredded
Directions:
1. Heat 4 tbsp of olive oil in a large skillet. Add in the eggplant, 3/4 tsp salt, pepper and garlic and toss until coated with the olive oil. Cook over medium-high heat until eggplant softens.
2. Cook pasta according to directions until al dente, drain and set aside.
3. Combine the eggplant with the pasta and the remaining salt and olive oil. Toss with the cheese and place into a shallow baking dish. Broil in the oven for a few minutes or until the cheese is melted.

Spinach and Feta Stuffed Shells
I have been on quite the Spinach and Artichoke kick. This has always been one of my favorite combinations and it goes so well with so many different kinds of dishes! For example, I am writing this while I wait for my Spinach and Artichoke Quinoa Casserole to come out of the oven. Today's recipe is for a pasta dish that incorporates spinach and artichoke.
I have to admit, I'm a little bummed out today. Wisconsin basketball is finally over for the season. I was so proud of the team for making it to the final four and putting up such a great fight against Kentucky. I was sad when they lost, but it was an amazing game and now I guess I can focus my energy on those Blackhawks!
In other news, I just started a Zumba class! I used to go to Zumba all the time in college and I have been missing it since graduation. I just joined a local LA Fitness and they offer Zumba classes almost every day! It is such a fun way to work out and I am super excited to keep this up.
Finally, in school news, I officially have a job again next year! I will be returning to the same school as a second-year teacher and I cannot wait! I can't believe this year is almost over (8 more weeks!). Time has flown by and it has been such an amazing learning experience. I spend so much time thinking about how I can better myself as a teacher for my students and I know this means that I am truly passionate and have found the right place. For the summer, I will be working as a camp director for the local park district again and I am excited to break up my high school time with some cute camp experiences. I feel like I've really found my niche and its great!

Ingredients:
your favorite pasta sauce (store bought or homemade)
20 jumbo shells
1 cup shredded light mozzarella cheese
1 cup crumbled light feta cheese
1/2 cup part-skim ritcotta cheese
dash of salt and pepper
9 oz frozen spinach, thawed and squeezed dry
1 can artichoke hearts, drained and chopped
2 garlic cloves, minced
Directions:
1. Preheat oven to 375 and spread sauce in the bottom of a 9 by 13 inch pan.
2. Cook shells for 1 minute less than the directions on the box. Drain and set aside.
3. In a large bowl, mix 1/2 of the mozzarella, feta, ricotta, salt, pepper, spinach, artichoke hearts, and garlic.
4. Stuff each shell with the filling and place in the sauce covered pan. Pour sauce over the tops of your stuffed shells and then sprinkle the rest of the mozzarella over the top. Bake for 25 minutes.

Baked Spinach Cheesy Pasta
I am just loving Scottsdale! Last night I got to catch up with two of my favorite ladies from school. After graduation, these girls moved out here to become middle school teachers and it was so great to see them and catch up! After a day lounging around at the pool, my family met up with Courtney and Glynis for dinner and dessert in Old Scottsdale. I couldn't believe how long it had been since we were hanging out and watching Badger games. I really hope I get to see more of them before the end of this vacation!
Today I have a recipe that is just one of those staples everyone should have in their back pocket. This Baked Spinach Cheesy Pasta is so simple, quick, and delicious. Plus, it's vegetarian so therefore perfect for Bri and I have to have during out busy weeks. I adapted the recipe from Food & Wine.
Baked Spinach Cheesy Pasta
Ingredients:
1 lb whole wheat pasta
olive oil
10 oz frozen spinach, cooked and drained
2 cups low-fat ricotta
5 tbsp grated parmesan
nutmeg
salt and pepper, to taste
6 oz grated fontina cheese
Directions:
1. Preheat oven to 450 and grease a 9 inch round baking dish.
2. Cook pasta according to directions until al dente and drain. Place in baking dish and toss with about 1 tbsp of olive oil.
3. Place drained spinach, ricotta, parmesan, nutmeg, salt and pepper in a food processor and pulse to combine. Stir in half the fontina.
4. Stir the cheese mixture into the pasta. Top with the additional fontina and additional parmesan if desired.
5. Bake in oven for 15-20 minutes or until cheese is melted.

Slow-Cooker Minestrone Soup
I've been really into soup lately. It is great to have when it is so freaking cold out and it is a super easy lunch for me to take to school. Since Bri is a vegetarian and since I am always so busy, I have started looking for vegetarian soup recipes that I can make in my crock-pot. This way, it is a low maintenance meal and we end up with tons of leftovers.
Minestrone soup is one of my favorites and this recipe is just like the Olive Garden minestrone. It is vegetarian and the noodles and beans make it a filling meal. Plus, you can make it in a crock pot! It is perfect!
Slow-Cooker Minestrone Soup
(adapted from Cooking Classy)
Ingredients:
32 oz vegetable stock
1 1/2 cups water
2 14.5 oz cans low-sodium diced tomatoes
3 stalks celery, diced
2 medium carrots, diced
1 small yellow onion, diced
1 tsp dried parsley
2 tsp dried basil
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/2 tbsp sugar
1 small zucchini, diced
1 1/2 cups small shell pasta, whole wheat
5 cloves garlic, minced
15 oz can red kidney beans, drained and rinsed
15 oz can cannellini beans, drained rinsed
14.5 oz can green beans, drained
2 cups packed baby spinach
salt and pepper
parmesan cheese
Directions:
1. Add vegetable stock, water, diced tomatoes, celery, carrots, onion, parsley, basil, oregano, thyme, rosemary, and sugar to your slow cooker. Season with salt and pepper to taste. Cook on low for 6-8 hours.
2. Add in zucchini, pasta, garlic, kidney beans, cannellini beans, green beans, and spinach. Cook for another 40 minutes on high or until pasta is tender. Season more with salt and pepper if needed. Serve with shredded parmesan on top.

Happy Birthday Mommy! Oreo Coffee Ice Cream Cake!
It is about time that I got back here!
I have been really busy getting ready for school and moving to the city! It has been a crazy and exciting time and I have so much to share.
For school, I have been working on my web page, planning the first day, and thinking about my classroom management plan. I have gone in a few times to set up my desk and binders and get acquainted with the staff. I got my own key and had some meetings about benefits. I must admit, I still feel like I have no idea what is going on, but I am excited. Next week, new teacher training starts and I can't wait to meet some of the other new teachers and become more prepared for the start of the year!
I have been exploring restaurants like crazy now that I am in a new place and it has been great. Some of our favorites so far have been Glen's Diner and Margie's Candies. We have been eating out quite a bit since we want to explore, but I have also been cooking in my new kitchen and I can't wait to share some of my creations.
Today, I have to share my latest dessert creation in honor of my Mommy. Yesterday was her birthday and we had an awesome night out in the city. We started out at the Signature Lounge on the 96th floor of the John Hancock building. The view was incredible.
We had appetizers and drinks and it was lovely.
Next, we headed back to our apartment for dinner across the street at Caro Mio. This Italian restaurant is known for its HUGE portions. Also, it is a BYOB so that was fun. Our dinner was fantastic. My mom got salmon, dad got bolognese, Bri got eggplant parmesan, I got pasta primavera, and Zack got the crowd favorite: Gnocchi.
Finally, we headed back to the apartment for dessert. Now, this is where I get excited since I made a dessert that had my mom's name written all over it. I was inspired by a recipe over at BruCrew for Oreo Fudge Cappuccino Ice Cream. My mom loves coffee ice cream and oreos! So, I decided to make an Oreo Coffee Ice Cream Cake! I made coffee ice cream, layered it with crushed oreos and topped it all off with a ganache frosting. It was delicious!
Oreo Coffee Ice Cream Cake
Ingredients:
Coffee Ice Cream:
14 oz Sweetened Condensed Milk
2 cups heavy cream
3 tbsp instant coffee
about 24 crushed oreos
Ganache Frosting:
12 oz semi-sweet chocolate chips
1 cup heavy cream
1 tsp vanilla
Directions:
1. In a large bowl, beat cream, condensed milk, and coffee until combined.
2. Pour into ice cream maker and churn according to directions.
3. Place half the crushed oreos on the bottom of a 9 inch springform pan.
4. When ice cream is done, pour half over the oreos and spread it out to cover the oreos. Then, place the other half of the crushed oreos over the ice cream and pour the rest of the ice cream on top. Place in freezer to harden.
5. Meanwhile, make the frosting. Heat up the cream in the microwave for 2-3 minutes or until just about to boil. Pour over the chocolate chips in a separate bowl and stir until chocolate is melted and combined. Next, pour in vanilla and beat with the mixer until ganache starts to form soft peaks. Pour over your ice cream cake and place back in freezer until ready to serve. To serve, just push the springform pan out and cut into slices.

Next, we headed back to our apartment for dinner across the street at Caro Mio. This Italian restaurant is known for its HUGE portions. Also, it is a BYOB so that was fun. Our dinner was fantastic. My mom got salmon, dad got bolognese, Bri got eggplant parmesan, I got pasta primavera, and Zack got the crowd favorite: Gnocchi.
Finally, we headed back to the apartment for dessert. Now, this is where I get excited since I made a dessert that had my mom's name written all over it. I was inspired by a recipe over at BruCrew for Oreo Fudge Cappuccino Ice Cream. My mom loves coffee ice cream and oreos! So, I decided to make an Oreo Coffee Ice Cream Cake! I made coffee ice cream, layered it with crushed oreos and topped it all off with a ganache frosting. It was delicious!
Oreo Coffee Ice Cream Cake
Ingredients:
Coffee Ice Cream:
14 oz Sweetened Condensed Milk
2 cups heavy cream
3 tbsp instant coffee
about 24 crushed oreos
Ganache Frosting:
12 oz semi-sweet chocolate chips
1 cup heavy cream
1 tsp vanilla
Directions:
1. In a large bowl, beat cream, condensed milk, and coffee until combined.
2. Pour into ice cream maker and churn according to directions.
3. Place half the crushed oreos on the bottom of a 9 inch springform pan.
4. When ice cream is done, pour half over the oreos and spread it out to cover the oreos. Then, place the other half of the crushed oreos over the ice cream and pour the rest of the ice cream on top. Place in freezer to harden.
5. Meanwhile, make the frosting. Heat up the cream in the microwave for 2-3 minutes or until just about to boil. Pour over the chocolate chips in a separate bowl and stir until chocolate is melted and combined. Next, pour in vanilla and beat with the mixer until ganache starts to form soft peaks. Pour over your ice cream cake and place back in freezer until ready to serve. To serve, just push the springform pan out and cut into slices.

Pasta Bolognese: Daddy's Favorite
I am once again up way to early. I have a camp field trip today to a waterpark and then I have people coming over to celebrate the 4th and go to the fireworks! All my friends are putting together a little potluck and I can't wait to share what I am making for it! I am going to make a Veggie Flatbread, but I haven't worked out all the details yet. Please, I have until 5...
I am also planning on running this fine morning before I get ready for camp. We will see how that goes since my knee has been feeling a little stiff. When I am running it feels okay but after I run it stiffens up! I have been stretching/resting as much as I can so I am hoping that this will just go away.
Today I wanted to tell you about the Bolognese Sauce that I made for a special Dad's dinner. I wasn't able to see my dad for actual Father's Day so I made him his favorite dinner for another night! Pasta Bolognese! It was super delicious and you should definitely give this recipe a try. However, make sure you allow plenty of time to make it or make it the day before since it takes so freaking long!
Pasta Bolognese (adapted from the Food Network)
Ingredients:
1 large white onion, roughly chopped
3 medium carrots, chopped
3 ribs celery, chopped
5 cloves garlic
olive oil
salt
3 pounds ground chuck
2 cups tomato paste
3 cups red wine
3 bay leaves
a bundle of thyme (tied together with string)
1 lb. spaghetti
fresh parmesan
Directions:
1. In a food processor, process the onion, carrots, celery, and garlic until you have a smooth paste.
2. Place paste in a large pan coated with oil over medium heat and stir until it reduces and begins to brown, about 20 minutes. Season with salt.
3. Add the beef and continue to cook until browned, another 20 minutes. Season with salt.
4. Pour mixture into a large pot over medium heat and add in the tomato paste. Cook for another 5 minutes. Add in the wine and cook for 5 minutes.
6. Add water to the pot until it is about 1/2 inch above the beef. Add in the bay leaves and thyme and stir to combine. Bring mixture to a boil and then reduce to a simmer. Let simmer for 4 hours and add water, about 2-3 cups at a time, when mixture reduces and looks thirsty. I added water two more times after the first addition. Season with salt.
7. Store the bolognese sauce until ready to use or prepare your spaghetti to al dente and drain. Serve spaghetti with a generous topping of bolognese and garnish generously with freshly shaved parmesan cheese.
