Dark Chocolate Zucchini Bread - Tried out a new recipe!

In the past few months since our wedding, we have been having a really fun time trying out all our new kitchen toys!  I have been having a blast baking and cooking and trying out new recipes.  Recently, I ended up with a lot of extra zucchini because I was going to roast them with some other veggies, but then I had a ton of other veggies so then I saved them for zucchini bread!

I tried out a new recipe from America's Test Kitchen and I adapted it a tad to include dark chocolate chips.  I'm not sure I really believe in not including chocolate when the opportunity presents itself.  And so, I made this amazing Dark Chocolate Zucchini Bread.

This bread came out super amazing.  It was flavorful and stayed together nicely.  It stayed moist for a long time and was delicious with apple butter or regular butter.  This bread is great if you have a lot of zucchini lying around so make it before it goes out of season!

Dark Chocolate Zucchini Bread

Ingredients:
1 1/3 cups brown sugar
1/4 cup canola oil
2 eggs
1 tsp vanilla
2 small zucchini shredded
1 1/2 cups flour
1/2 cup whole wheat flour
1 tbsp cinnamon
1 1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 tsp nutmeg
pinch of cloves
3/4 cups dark chocolate chips

Directions:
1. Preheat oven to 325 and grease a loaf pan.
2. Beat the brown sugar, canola oil, eggs, and vanilla together in a large bowl.
3. Shred the zucchini using a grater onto a paper towel.  Cover with another paper towel and squeeze out as much liquid as possible. Add the zucchini to the wet mixture and beat to combine.
4. Add in the flour, whole wheat flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves.  Beat until just combined.
5. Add in the dark chocolate chips and stir to combine.  Pour into prepared loaf pan.
6. Bake for 65 minutes or until an inserted toothpick comes out clean.

Cookie Dough Stuffed Cupcakes

Today is a very special day! It is on of my best friend and bridesmaid's birthday!  I celebrated with Tamara this weekend up in Oconomowoc, Wisconsin where we went out to a fabulous dinner and then had a good old-fashioned sleepover back at her place.  Tamara and I share a deep appreciation for cupcakes and so for her birthday I baked this outrageous Cookie Dough Stuffed Cupcakes.  Everything is homemade!  I made yellow cake, homemade egg-less cookie dough, and dark chocolate frosting.  Check it out:

Cookie Dough Stuffed Cupcakes

Ingredients:
For the cupcakes:
2 cups flour
1 1/2 cups sugar
1/2 cup powdered milk
1 tbsp baking powder
3/4 cup water
1 tsp vanilla
1/2 cup butter, softened
3 eggs
For the cookie dough filling:
1/2 cup unsalted butter, at room temperature
3/4 cup light brown sugar
1 tsp vanilla
1 1/4 cup flour
1/2 tsp salt
2 tbsp skim milk
1 cup mini chocolate chips
For the frosting:
1/2 cup unsalted butter
3 oz low-fat cream cheese
1 cup dark chocolate chips
1/4 cup skim milk
3-3 1/2 cups powdered sugar
1 tsp vanilla

Directions:

1. To make the cupcakes, whisk dry ingredients together.  Beat in wet ingredients.  Pour into prepared cupcake pan with liners.  Bake at 350 for 15-17 minutes or until an inserted toothpick comes out clean. Let cool.
2. To make the cookie dough filling,  beat the butter with the brown sugar.  Then, ad in the vanilla.  Then, add in the flour and salt until just combined.  Beat in the milk until you have a desired consistency one tablespoon at a time.  Finally, stir in the chocolate chips.  Chill in the fridge for at least 30 minutes. Then, core the cupcakes using a knife or cupcake corer and put the cookie dough inside.
3. To make the frosting, beat the butter and cream cheese together until light and fluffy.  Beat in the powdered sugar and then slowly add the milk and vanilla.  Melt the chocolate in a microwave safe bowl on high, stirring after 30 seconds, until melted.  Beat in the chocolate.  Frost cooled cupcakes!

Clean Out Your Pantry Cookie Bars

I'm moving in THREE days!  I can't believe it!  We are buying our own condo and I couldn't be more excited.  This past week we have been packing up boxes, cleaning, and getting things in order.  I decided that I was going to cook/bake things that I had all the ingredients for already so that I could clean out the pantry/fridge.  This was the inspiration behind these cookie bars and I've gotta say, it was a great plan.

I only had white whole wheat flour left in the pantry so I used that.  I had more brown sugar than regular sugar, so I used more brown sugar.  And, I already had open bags of peanut butter chips and dark chocolate chips.  I figured that with that combo, I really couldn't go wrong.  Then, just for kicks, I threw in some old-fashioned oats as well.  Why not, right?  These cookie bars are super yummy!!!! I may have to host my own edition of chopped: clean-out-your-pantry-style.   It could be the next big reality show!  I would go to different houses of people who are moving and you would have to cook with whatever they had.  The Goal: make something amazing that uses as many ingredients as possible so that the pantry is clean when you are done.  I feel like I am onto something big here.  Feel free to contact my agent...

Anyways, I have been really busy getting ready for the move and I am grateful that I decided to take off half of Thursday and all of Friday so that I can just focus on moving and getting all settled in our new home.  I have an amazing kitchen waiting for me and I can't wait to beak it in!

Clean Out Your Pantry Cookie Bars
(Whole Wheat Dark Chocolate Peanut Butter Bars)

Ingredients:
3 cups white whole wheat flour
3/4 tsp baking soda
3/4 tsp salt
1/2 tsp cinnamon
2 tsp cornstarch
1 cup old-fashioned oats
3/4 cup unsalted butter, room temperature
1/2 cup canola oil
1 egg
1 egg white
1 cup brown sugar
3/4 cup sugar
2 tsp vanilla
1 cup peanut butter chips
1 cup dark chocolate chips
sea salt

Directions:
1. Lightly grease a 13 by 9 inch pan and preheat the oven to 350.
2. In a medium bowl, whisk the flour, baking soda, salt, cinnamon, cornstarch, and oats.
3. In a large bowl, beat the butter, oil, brown sugar and sugar until light and fluffy.  Beat in the egg until well combined.  Beat in the egg white until well combined.  Beat in the vanilla.
4. Slowly incorporate the flour mixture into the wet ingredients until just combined.  Stir in the peanut butter chips and dark chocolate chips.
5. Spread the batter out in your prepared pan and bake for 20-25 minutes.  The cookie bars should be slightly browned around the edge of the pan.  Let cool for 20 minutes.  Cut into bars!

Cheesecake Brownie Cupcakes

Now there is a blog title to get excited about!  These brownies are crazy yummy and they were sort of an accident.

So, on Wednesday my students took a practice ACT during school.  This meant that I just proctored all day and I was able to go home early!  What a win!  Plus, the students did really well!  They started with an average of about 18 on the math section and now their average is above 20!  That is great growth!  I was super proud of them and I had extra time so I decided to bake something for my advisory.  I was also asked to bake for an upcoming Oscar party this weekend.  I figured I would just bake a double batch of something and have enough desserts for both events!

My students told me that they would like brownies or cheesecake.  I decided to just combine the two!  I started baking, but then I realized that I didn't have enough sugar!!! I was feeling super lazy and so instead of going out to buy more sugar, I decided to take a risk and use brown sugar instead.  My laziness ended up being a good thing since these brownies were super tasty and a huge hit!

Now, I am sitting in school and my students just had the brownies.  They loved them and there is only one left!  (Well, actually there is 13 left...I just kept 12 at home for that Oscar party I mentioned earlier).  These brownies are yummy and you should make them!

Cheesecake Brownie Cupcakes

Ingredients:16 tbsp unsalted butter
8 oz unsweetened baking chocolate, chopped
1 plus 1/3 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp cinnamon
2 tsp espresso powder
1 cup sugar
1 1/2 cups brown sugar
4 eggs
2 tsp vanilla
8 oz light cream cheese
1 cup nonfat, plain greek yogurt
4 tbsp sugar
2 tbsp flour

Directions:
1. Preheat oven to 325 and line your cupcake pan with liners.
2. In a small saucepan, place the butter and chopped chocolate.  Heat over medium-low, stirring constantly, until melted and combined.  Remove from heat.
3. In a medium bowl, whisk the flour, salt, baking powder, cinnamon, and espresso powder.
4. In a large bowl, beat the sugars with the eggs and vanilla.
5. In a separate bowl, beat the cream cheese with the greek yogurt, sugar and flour until well combined.
6. Beat the chocolate mixture into the sugar/egg mixture until well combined.  Mix in the flour mixture until just combined.
7.  Place about 2 tbsp of brownie mixture into each cupcake well.  Place about 1 tbsp of cream cheese mixture on top.  Then place about 1 tsp of brownie mixture on top of the cream cheese.  Using a toothpick, swirl the cream cheese and brownie batter.
8.  Bake for 35-40 minutes or until an inserted toothpick comes out clean.  Cool.

Triple Chocolate Mousse Cake

Guys, I am such a grown up.  Bri and I had a meeting last night with our REAL ESTATE AGENT.  We are officially starting our new home search and we couldn't be more pumped about becoming first time homeowners!!! No more of this renting silliness.  We are using words like invest and mortgage.  It's super crazy and I feel old.  

I am also a little fascinated by the fact that I am super excited to have an in unit washer and dryer.  I think this may actually be the determining factor on if you are an adult or not.  Do you get excited about having an in unit washer or dryer? If yes, then congrats, you are an adult.  Seriously, I couldn't be more pumped up about it.  I keep saying things like "I've made it!" and "I can't wait to leave things in the dryer and just grab them as needed."  I feel that this is both adorable and sad, but I am okay with it.

So, to celebrate the beginning of this house hunting journey and my path towards laundry-ease, I am sharing a recipe for Triple Chocolate Mousse Cake.  YUM! Plus, this cake has NO flour.  Just three layers of chocolatey goodness with a dense flourless dark chocolate cake-like base, chocolate mousse center, and white chocolate mousse top.  

This cake was a huge hit.  I brought it in for a staff potluck, and people told me that it was so good I should get paid to make it.  I should start charging people for the delicious things I make.  But, then I would think of it like a job instead of fun, so I am going to stick to making people happy with free treats.  

Today is also my half birthday and while I know that is not actually a thing, it is another small reason to celebrate so here you go:




Follow the link for the recipe at Tastebook since I barely changed anything.  Here are the few suggestions/things that I did to make this cake a success:

1. Find good quality chocolate.  It makes a difference.
2. CHILL.  Let things chill for a LONG time.  Then, putting the cake together works so much better.  
3. I found that my white chocolate layer didn't firm up like it should so in the future I would add a pinch more gelatin and let it cool even longer. 
4., Whenever the recipe said to whip something until soft peaks formed, I whipped until stiff-er peaks formed.  This makes the mousse more airy and light which I love.

Mini Dark Chocolate M&M Skillet Brownies

I know that this is exactly what we don't need right after Halloween, but look at how amazing these brownie skillets look!!!! Plus, you can throw in any candy pieces that you have lying around from trick-or-treating.  My mom gave me and Bri a "Halloween Goody Bag."  So, now I have Justin's Peanut Butter Cups, Pumpkin Spice Latte M&Ms, Halloween Oreos, Halloween Gummies, and more.  It's a little crazy.  I'm trying to eat healthy and here I have a giant bag full of deliciousness.  I just need to make sure not to eat it all at once...

Halloween was super fun.  I was Lois Lane and Bri was Clark Kent.  It was pretty adorable.  We went to a couple halloween parties hosted by friends and overall had a super nice weekend.  

Now, it is back to school time!  

Mini Dark Chocolate M&M Skillet Brownies
(makes two mini skillets)

Ingredients:
10 tablespoons unsalted butter
8 oz bittersweet chocolate, coarsely chopped
1 cup sugar
3 eggs
1 tsp vanilla
pinch of salt
1/2 cup plus 2 tbsp flour
2 tbsp cocoa powder
1 cup dark chocolate M&Ms

Directions:
1. Preheat oven to 350 and lightly grease your mini skillets.
1. In a large pot, melt butter over medium-low heat and stir in chopped bittersweet chocolate until smooth and combined.  Turn off heat and stir in the sugar until well combined.  Next, stir in the eggs until well combined.  Add in the vanilla and salt.  
2. Sprinkle the flour and cocoa powder over your brownie mixture and then stir until just combined.  Stir in the M&Ms.
3.  Divide the batter into your two mini skillets.  Bake for about 25 minutes.

Dark Chocolate M&M Zucchini Bread

Marathon training makes me SO HUNGRY! Seriously, I am hungry all the time.  Plus, my lunch at school is at 1 in the afternoon.  So, when I eat breakfast at 5:30 and run in the morning I feel great, but by the time lunch rolls around, I am practically seeing stars I am so hungry.  I decided it would be a fantastic idea to hide some food in a drawer in my room so that I can discretely munch occasionally.  This was the motivation behind these Dark Chocolate M&M Zucchini Muffins...

This recipe made 24 mini muffins plus a whole loaf pan.  Bri was very excited when he saw what was happening in the kitchen and these guys came out great!  

Dark Chocolate M&M Zucchini Bread
(adapted from The Kitchn)

Ingredients:
1 1/2 cups flour
1 1/2 cups old-fashioned oats
1 1/2 cups sugar
1/2 cup cocoa powder
2 tsp baking soda
1 tsp salt
2 small zucchini, shredded and squeezed dry with paper towels
4 eggs
1 cup non-fat, plain greek yogurt
1 tsp vanilla
1 tsp cinnamon
1/2 cup dark chocolate m&ms

Directions:
1. Preheat oven to 350 and grease a mini muffin pan and loaf pan.  
2. In a medium bowl, whisk the flour, oats, sugar, cocoa powder, baking soda, salt, and cinnamon.  
3. In a large bowl, beat the eggs with the greek yogurt and vanilla until light and fluffy.  Beat in the shredded zucchini.  Add in the dry ingredients and beat until just combined.
4. Stir in the m&ms and then spoon into the prepared muffin tin and loaf pan. 
5. Bake the muffins for about 20 minutes and bake the loaf for about 25-30 minutes.  A toothpick should come out clean from both.  Let cool and enjoy!

New and Improved Cookie Dough Frosted Brownies

Happy Friday! Today I have a really fun recipe to share!  I made Cookie Dough Frosted Brownies a while back, but I changed up the recipe a bit this time and they came out even better than before! Last time, I had way too much cookie dough.  Now, I know that typically doesn't sound like a problem, but it actually overpowered the brownies and I love my brownies.  So this time, I cut the recipe in half and cut out a few other things and it was awesome.  I still had plenty cookie dough frosting to cover those brownies, but you got a good balance of brownie and cookie dough in every bite.  

In other news, I have also been having one great food week.  Last night, I went with my family and Bri to the Little Goat Diner.  This place is so good! If you are ever in Chicago and looking for a casual meal that is also incredibly delicious, this is a great place to go.  My mom and I split their Springy Veggie Quesidillas and the Chinese Chicken Sandwich.  Both items were great and it was one amazing meal.  Today, (after a much needed workout and zumba class) I am going to Budacki's Drive-In where I actually LOVE the veggie dogs.  Plus, if you really want to splurge, get cheese fries, do it.  And then, I am headed to Lizzie McNeill's for some drinks with a few of my teaching buddies.  School hasn't even been out for a week and I already miss them like crazy.  It should be a great day!

Cookie Dough Frosted Brownies

Ingredients:
1/2 cup brown sugar
1/4 cup powdered sugar
6 tbsp unsalted butter, melted
3 tbsp light cream cheese
2 tsp vanilla
skim milk, as needed
pinch of salt
1/2 cup mini chocolate chips

Directions:
1. Make the brownies according to directions and let cool.
2. Make the frosting by beating the melted butter, brown sugar, and powdered sugar together in a bowl.  Beat in the cream cheese and vanilla.  Add in 1 tbsp of milk if the mixture is too thick.  Mix in the salt and the chocolate chips.
3. Frost the cooled brownies with the cookie dough mixture.  Let set in the fridge.  When ready, cut into pieces and serve.

Cream Cheese Brownies

I had a bit of a rough day at school the other day.  It's the end of the year and more students than usual are restless and not putting forth their best efforts/behavior.  It is frustrating for me because I want to see them finish the year strong and get good grades.  However, that is  just not happening with some of them.  I was feeling sad, so when I got home I decided that I needed to bake brownies.

I also went for a 6 mile run so I felt like brownies were a good way to motivate myself to run the full 6 miles and then also have a little treat to help make me feel better.  It helped!  Plus, the next day was better.  Sometimes I guess there is just something in the air at high school that makes students act a little crazy.

These brownies were delightful.  I got the idea for them from browsing the website at America's Test Kitchen.  I adapted their recipe a tad, but overall I followed similar instructions.  They had really great ideas for making the brownies look beautiful and to make sure that the brownie and cream cheese swirls nicely and the cream cheese doesn't sink.  They were pretty tasty and I am pretty excited about having even more brownies waiting for me when I get home!  Bad day or not, these brownies are a great recipe to have for special occasions or just to enjoy a little treat after dinner! 

Cream Cheese Brownies


Ingredients:
2/3 cup flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 tsp espresso powder
4 oz 70% cacao chocolate
8 tbsp unsalted butter
1 1/4 cups sugar
2 eggs
1 tsp vanilla
4 oz light cream cheese
1/2 cup greek yogurt (I used 0% Fage)
2 tbsp sugar
1 tbsp flour

Directions:
1. Preheat oven to 325 and line a 9 by 9 inch pan with foil.  Spray the foil with non-stick cooking spray.  
2. In a medium bowl, beat cream cheese for a few seconds and then microwave for 30 seconds.  Beat in the 1/2 cup greek yogurt, 2 tbsp sugar, and 1 tbsp flour until creamy.  Set aside.
3. In a small bowl, place butter and cut up chocolate.  Microwave at 50% powder for about 1-2 minutes or until the chocolate is melted.  Stir every 30 seconds to check.  
4. In a seperate bowl, whisk the flour, baking soda, salt, cinnamon, and espresso powder.
5. In a large bowl, beat the sugar, eggs, and vanilla until combined, about 2 minutes.  Beat in the chocolate mixture until well combined.  Then, mix in the flour mixture until just combined.  Set aside 1/2 cup of the brownie batter.
6. Spread the brownie batter into  your prepared pan.  Then, spread the cream cheese mixture over the top.  Finally, use the 1/2 cup of reserved brownie batter and place 6 spoonfuls on top of the cream cheese layer so that they are spread out.  Using a knife, swirl the batter by cutting through the layers horizontally and then vertically.  
7. Bake for 40 minutes or until an inserted toothpick comes out clean.  Use the foil to remove the brownies from the pan and let cool for about 1 hour before cutting.

Red Wine Chocolate Cake with Red Wine Chocolate Ganache

It's Thirsty Thursday and the Scandal finale is on tonight!  What better way to celebrate than with a recipe for Red Wine Chocolate Cake!  I found this recipe over at Food & Wine and I adapted it slightly.  It was the perfect way to celebrate a recent birthday and it was an amazingly decadent chocolate cake!  

In other news, I went to my second Cubs game of the season last night.  My brother is in town and it was so fun to hang out with him.  Plus, the cubs won!  It was a pretty chilly night for a game, but we still had a great time.  It was a little weird to be out late on a Wednesday and I'm a little sleepy today, but I'm sure I'll be fine! I guess I should also mention that tonight there is a pretty big basketball game involving a Chicago team...if you're into that...I just can't wait for Scandal :).  I'm sure my sport-loving fiance will keep me updated on the sporting world anyways! 


I hope that you all enjoy this recipe!  Get out a good bottle of red wine, try not to drink too much while you bake, and have fun! 

Red Wine Chocolate Cake with Red Wine Ganache
Ingredients:
Cake:
1 1/4 cups dry red wine (I used a Cabernet Sauvignon)

3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 cup unsalted butter, softened
1 3/4 cups sugar
2 eggs
1 tsp vanilla
Ganache:1 cup chocolate chips (I used a mix of dark and milk)
3 tbsp heavy whipping cream
2 tbsp red wine




Directions:
1. Preheat oven to 350 and grease a bundt cake pan.
2. In a medium bowl, whisk the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy.  Beat in the eggs and vanilla until well combined.
4. Add in 1/3 of the flour mixture to the wet ingredients and mix until just combined.  Then, add in 1/2 of the wine and mix until combined.  Continue with another 1/3 of the flour, then the rest of the wine, and finally the rest of the flour until just combined.  Pour the batter into your prepared pan and place in oven for 45 minutes.
5. While the cake is baking, make the ganache: In a heat-proof bowl, place the chocolate with the cream.  Let the bowl sit over a pot of boiling water and stir once the chocolate starts to soften.  If your mixture doesn't come together, you can add a little more cream.  Once smooth, stir in the red wine and remove from heat.
6. When your cake is done, let cool for 15 minutes and then frost with the ganache.  Let cake cook completely and ganache set.

Monster Cookie Layer Bars

We just had parent-teacher conferences this past week and I can't believe that this means there are only 6 weeks until finals!!! My second year of teaching has just flown by!  Along with that, I have been having a great year with my co-teacher in Geometry and my Algebra Advance students are pretty awesome.  I can't believe they started off as freshmen and now they are like "grown up" sophomores!  This year has been so much smoother than my first one and I have been working hard to incorporate new lessons that are more investigative and model based.  I love that I feel confident enough to try new things and evaluate if they are successful.  I even brought in a GIANT gummy bear to show my students and talk about similarity ratios between the little gummy bears and the big guy.  Today, I am even presenting one of these lessons to a group of teachers!

Along with school ending, I am also getting ready for camp to begin! This is crazy!  I am so excited that summer is right around the corner.

To celebrate this excitement, I am going to share with you all a recipe for one yummy treat.  I love the idea of Monster Cookies because it means you can basically throw whatever you are craving into a cookie.  This recipe, which I adapted from The Girl Who Ate Everything, takes that idea to a whole new level.  Instead of all that work to drop cookies onto a cookie sheet, lets just dump it all into a pan and go with layers! I love combining salty with sweet so I went with some chocolatey things and pretzels and peanut butter.  You can use whatever toppings your little heart desires!

Monster Cookie Layer Bars

Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter
1 14 oz can of sweetened condensed milk (I used light)
3/4 cup old-fashioned oats
1 1/2 cups of the toppings you want

Directions:
1. Preheat oven to 350 and line a 9 by 13 inch pan with foil or parchment paper.  Spray the foil of parchment paper with nonstick cooking spray.
2. In a microwave safe bowl, melt the butter.  Mix the butter and graham cracker crumbs together and press evenly into the bottom of your pan.
3. Pour the sweetened condensed milk over the graham cracker crust and then sprinkle the oats and your toppings over the top.  Gently press this down into the sweetened condensed milk layer.
4. Bake for 20 minutes.  Let cool for 20 minutes and then use the foil to take the layers out of the pan to cool completely.

Happy Pi Day! 3.141592653...

Happy Pi Day everyone! Today is an especially epic Pi day as it is March 14th of 2015!  Since Pi starts with 3.1415 this is the first time this has happened in 100 years and I am pretty excited about it!  For school, I brought in oreo pie and chocolate chip cookie pie for my students and a ton of my kiddos brought in their own circular treats to share.  It was pretty great!

It also happens to be the St. Patricks Day celebration in Chicago and my friend Lauren's bday celebration.  Can today get any more epic?

The answer is yes.  Here is an epically delicious pie for you all!  This is like a "better than sex" pie and it was truly AH-mazing.  I hope you all have a fantastic Pi/St. Pattys/Whatever day and enjoy your weekend!

The Epically AH-mazing Pi Day Pie


Crust:
1 1/4 cup flour
1/2 tbsp sugar
1/4 tsp salt
1/2 cup cold, unsalted butter
1 tsp white vinegar
2-3 tbsp cold water
Filling:
Your favorite hot fudge
1 1/2 cups dark chocolate chips
8 oz light cream cheese
1 cup heavy whipping cream
Your favorite caramel sauce (I recommend salted caramel)
2 cups cool whip topping
Mini PB cups, M&Ms...and whatever other toppings you want!

Directions:
1. Make the crust: place flour, sugar, and salt in a food processor and pulse a few times to combine.  Cut cold butter into cubes and place in food processor with vinegar.  Pulse until you have a sand like combination.  Pour water in, 1 tbsp at a time, while pulsing, until your dough comes together.  Wrap in plastic wrap and chill for at least 1 hour.  Once chilled, heat oven to 400 degrees and roll out pie dough so that you have a large circle.  I usually try to go for a circle with a 12 inch diameter.  Then, place pie dough into a 9 inch pie pan and form crust to your liking.  Place in preheated oven and cook for 10-12 minutes or until dough starts to brown.  Cool
2. To make the filling, melt the dark chocolate in a heat proof bowl.  Once melted, whip with the cream cheese and heavy cream until you have a light and fluffy filling. 
3. To assemble the pie: spread hot fudge into your cooked pie crust so that it covers the bottom.  Then, spread the chocolate mixture on top.  Next, drizzle caramel sauce over the chocolate filling.  Finally, top with the whipped topping and sprinkle extra hot fudge/caramel/other toppings on top.  Place in fridge to chill until you are ready to serve.

Beer Brownies with Spent Grain Flour

Oh jeez, it's been over a month since I posted here! Sorry! I have been so busy with school, grad school, and wedding planning!  Life just gets in the way, you know?

However, I have still been cooking/baking up a storm over here. In fact, I have made some pretty great recipes recently.  For example, for the Super Bowl, I decided to make a bunch of stuff that I was craving and just sit around and eat while I watched the commercials (err...I mean the game?).  I made Vegetarian Buffalo Dip, Homemade Soft Pretzel Bites, and Beer Brownies.

Yep...Beer Brownies!  Also, they just happened to be the best brownies I'd ever consumed.  I adapted the recipe from Joy the Baker and used my own Spent Grain Flour and new favorite, dark beer.  They are just AHHHMAZING!  Finch's Stout for the beer, Spent Grain Flour from the time I homebrewed, and lots and lots of gooey chocolate. How can you go wrong?  I even made this again for Valentine's Day!

Let's talk beer.  I am usually not a Stout kinda girl, but this beer from Finch's is pretty fantastic.  It has this amazing coffee flavor that I just adore.  Plus, Finch's is local (right in the heart of Chicago) and so the Mariano's grocery store down the street carries their beer!  If you are not a beer fan, you can also use coffee and the brownies will still be fantastic, you just can't call them Beer Brownies then!

Beer Brownies with Spent Grain Flour

Ingredients:
1/2 cup flour
1/2 cup spent grain flour
1/4 cup cocoa powder
1/2 tsp salt
4 oz bittersweet chocolate chopped
1/2 cup unsalted butter
1/2 cup dark beer (I used Finch's Stout)
4 large eggs
1 cup sugar
1 cup brown sugar
2 tsp vanilla
1 cup dark chocolate chips

Directions: 
1. Preheat oven to 350 and line a 9 by 13 inch baking pan with foil.  Spray the foil with cooking spray.
2. In a medium bowl, whisk the flour, spent grain flour, cocoa powder and salt.
3. Place a heat-proof bowl over a pot of boiling water with the butter and bittersweet chocolate.  Stir until melted.  Remove from heat and stir in the beer.
4.  In a large bowl, beat the eggs with both sugars until pale yellow and well combined.  Pour in the warm chocolate mixture while continuing to stir.  Beat until combined and then mix in the dry ingredients until just combined.  Stir in the chocolate chips.
5. Pour the batter into your prepared baking pan and bake for 40 minutes.  Let cool for 20 and then cut into pieces.

Slow Cooker Fudge

Well, it's time to go back to school and I don't know about you, but I needed a little something sweet to brighten my day.  The Monday after winter break is typically pretty rough, so whip up a batch of this yummy fudge so that you can shake off the blues a bit.  For high school, the Monday after Winter Break also marks the beginning of getting ready for finals.  Let me tell you, it is not pretty.  Student minds are still on break (and lets be honest, so are teacher minds) and we all have to get ready to start studying pretty intensively.  I try to make class as interactive and fun as possible so that students actually want to come to class....we will see how it goes!

This fudge was absolutely delish!  It was the perfect mixture of chocolate and with the sea salt sprinkled on top it became truly special.  I made this for my new years party and everyone was raving about it.  Plus, it is crazy easy to make! You don't need a candy thermometer or anything.  simply dump the ingredients into a crock pot, stir, and then pour into a pan to set and cool!  Done! When, I saw the recipe over at Creme de la Crumb, I was skeptical.  I thought this fudge was going to take forever, but then I saw that you only have to wait an hour and I was thrilled! I don't like waiting for dessert...

Slow Cooker Fudge

Ingredients:
1 cup milk chocolate chips
1 cup dark chocolate chips
1/4 cup heavy whipping cream
1/3 cup honey
1/2 cup white chocolate chips
sea salt for topping (optional)

Directions:
1. Place milk chocolate, dark chocolate, honey and cream into your crock pot and cook on high for 1 hour.
2. Line an 8 by 8 baking dish (or a smaller pan for thicker fudge) with foil.
2. After 1 hour, stir in the milk chocolate chips until you have a smooth and creamy mixture.  Pour your chocolate mixture into your baking pan, sprinkle with salt if you are using it, and let the fudge set at room temperature.  Once set, cut into squares.

Cookie Dough Frosted Brownies

I can't believe I am a month away from race day! I just finished an "easy" 14 miles.  You may be wondering...easy?  Well, after running 18 last week, today seemed like a breeze.  Plus, the weather was chilly and beautiful.  This made the run a whole lot more pleasant than those others that were in 80 degree heat with crazy humidity!  I feel great right now! I can't believe that next week is the 20 mile run! 20 miles is the longest run before the actual marathon and I am only one week away!

Today I figured we should celebrate!  I am pumped about my running going so well, but I am also grateful for an amazing start to the school year.  So far classes have been great, I love my co-workers, and my students have been a joy so far!  (Let's hope it stays that way!)  I'm also excited about the fact that I have finally finished reading all the current Game of Thrones books.  This was a HUGE project as each book is about 1000 pages, but I finally finished and I can't wait for the next book to be released!  All in all, a celebration is in order and what better way to celebrate than with delicious brownies?  I made my typical Dark Chocolate Brownies, but then I topped them with a layer of cookie dough frosting.  YUM!!!! Bri has already asked that I make these for his birthday this year and thats not for another 3 months!

Cookie Dough Frosted Brownies
Ingredients:
Brownie Recipe
Frosting:
1 cup brown sugar
1/2 cup sugar
12 tbsp unsalted butter, melted
2 tbsp skim milk
2 tsp vanilla
3 tbsp low-fat cream cheese
pinch of salt
3/4 cup chocolate chips

Directions:
1. Make brownies according to directions (or make your own favorite recipe). Let cool completely.
2. In a large bowl, beat sugar, brown sugar, and melted butter until well combined and sugar starts to dissolve.  Beat in the milk, vanilla, cream cheese, and salt until well combined.  Stir in the chocolate chips.  Spread the frosting over the brownies.  You will have a very thick layer.
3. Cover in tinfoil and place in fridge for a few hours to ensure that the frosting sets.  Once chilled, cut into squares.

Chocolate Chip Oreo Cheesecake Cookie Bars

I just ran 13 miles! I can't believe that I am at this point again.  The last time I did this, I was training for a half marathon and 13 was the goal.  Now, I am only at the half-way point!  I finished my 13 feeling really great, but then thought, "Only 13 more to go!"  I am really enjoying my marathon training.  It has allowed me to become really focused on my health.  I am sleeping better, feeling great, and I've been eating well!  I even lost a few pounds!  It has helped shape my summer into something pretty special.

Now, I know I just said that I've been eating well, but with all this running, sometimes you need to splurge a little!  For example, today I am going to the Highwood Craft Beer Festival and I am really excited to try some good beers and hang out with some good friends.

Also, I have this recipe to share today which just sounds ridiculous.  I mean I could have just made cookie bars or I could have just made oreo cookie bars.  But no, I went and made Chocolate Chip Oreo Cheesecake Cookies Bars.  Cause, why not?

Chocolate Chip Oreo Cheesecake Cookie Bars

Ingredients:
Cookie Dough:
1 cup butter, at room temperature
1/2 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 3/4 cups flour
1 1/2 cups oreo chunks
1 cup dark chocolate chips
Cheesecake:
8 oz low-fat cream cheese
1/2 cup sugar
1 egg
1 tsp vanilla

Directions:
1. Preheat oven to 350 and line a 9 by 13 inch pan with foil.  Grease the foil.
2. Cookie Dough: In a medium bowl, whisk the flour, baking soda, salt, and cinnamon.  In a separate, large bowl, beat the sugar, brown sugar, and butter until light and fluffy.  Beat in the eggs, one at a time, and then the vanilla until well combined.  Slowly beat in the flour mixture until just combined.  Stir in the oreo chunks and chocolate chips.
3. Cheesecake: In a large bowl, beat the cream cheese with the sugar until combined. Beat in the egg and vanilla until combined.
4. Take half the cookie dough and press it into the bottom of your pan until you have an even layer.  Pour the cream cheese mixture over the cookie dough layer until it is covered.  Crumble the rest of the cookie dough over the cream cheese mixture.  Bake for 30 minutes or until cream cheese layer is no longer wobbly.  Let cool.

Homemade Peanut Butter Cups

I may or may not be being a bad teacher right now.  It is finals week, and I am currently sitting in the 2nd period final.  2nd period is my Math Lab and so it is not a "math class" and I don't have a final to give.  Instead, I am sitting in a "supervision" where I have to observe students in the cafeteria and keep them from leaving.  It's tough work, but someones got to do it :)

I have some work to do for next semester, but I already graded the three finals from yesterday and I decided that a therapeutic blogging break was in order before I got back to more work.  Plus, I made homemade Peanut Butter Cups and they are just too cute and too yummy to keep hidden from you all.

Plus, I made a major life change yesterday! Well, major and exciting for me.  This is probably too much build up for normal people, but I am not one of those.  I am a crazy enthusiastic reader.  I love books.  I love reading for fun and I have always kept a book next to my bed.  Even in college when I didn't have any time, I still tried to get in 5-10 minutes every night of reading.  I love the way books feel, I love the way a library smells, and I am a tad crazy.  I get stressed when I don't have a new book in mind once I finish one.  Now that I ride the train for an hour every morning and another hour every afternoon, I am going through books like crazy.  I like to buy my books because I like collecting them, rereading them, and lending them out to friends.  So, I am running out of space.  Also, I am running out of money!

For the holidays, I got a ton of money in amazon gift cards and last night I finally broke down and purchased a kindle.  I was holding out because I really love holding a book, but since it is becoming such a passion of mine to read and collect books, I figured this would be a good move.  I am excited to get my new toy and to read more!  I have no idea how these guys work and so if anyone out there has any recommendations, please let me know! And now, back to my delicious treat for the day!

Homemade Peanut Butter Cups

Ingredients:
1/2 cup creamy, natural peanut butter
2 tbsp unsalted butter, softened
pinch of salt
1/2 cup powdered sugar
9 oz dark chocolate chips
9 oz milk chocolate chips
1 tbsp unsalted butter

Directions:
1. In a microwave safe bowl, melt 1 tbsp butter, dark chocolate, and milk chocolate in the microwave stirring after every 30 seconds until smooth.
2. In a bowl, beat peanut butter, 2 tbsp butter, and salt.  Beat in powdered sugar until well combined.
3. Line a mini muffin pan with paper liners.  Drop 1 tbsp of chocolate into the bottom of each one.  Then drop 1 heaping tsp of the peanut butter mixture into the center of the chocolate.  Then drop enough chocolate on top to cover the peanut butter and fill to the top.  Place in fridge to chill until hardened.

Dark Chocolate Chip Banana Bread

My cooperating teacher during my high school student teaching brought in banana bread a couple of times to share with the math department.  This is the story of how I discovered the best banana bread ever!  Seriously, it is amazing! At the end of the year I asked her for her recipe because I just knew I could not live without this bread in my life.  She said that her secret was that she uses a TON of bananas.  Yep, that's it!  So, I've been saving up bad bananas in my freezer for a while now and last night I finally had enough to make the banana bread!

Dark Chocolate Chip Banana Bread 

Ingredients:
2 cups flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
pinch of cloves
7 medium bananas, mashed
1 cup sugar
1/2 cup canola oil
2 eggs, lightly beaten
1 tsp vanilla
1/2 cup dark chocolate chips (or whatever mix-ins you prefer!)

Directions:
1. Preheat oven to 350 and lightly grease a 9 by 5 inch loaf pan.
2. In a medium bowl, whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In a large bowl, beat sugar with oil.  Beat in the eggs and the vanilla.  Beat in the mashed bananas.  Slowly beat in the flour until just combined.  Stir in the chocolate chips.
4.  Pour the batter into your loaf pan and bake for 55-60 minutes.

22nd Birthday Celebration!

I don't know 'bout you...

Oh! So this is what T Swift has been talking about.  I totally know what it feels like to be 22 now :).

Today is my 22nd birthday! My mom keeps saying that she can't believe how old I am.  Frankly, I can't believe how old I am.  Bri gave me a really sweet card that talked about some of the things that have happened in the last year like running a half marathon, graduation, getting a job, and signing a lease on an apartment.  I can't believe I am old enough to be doing all that! I am so scared and excited about what the future holds and this birthday is a reminder of the fact that I am pretty sure I'm an adult now.

Last night, I had a really fun celebration with some of my friends downtown.  We went to RJ Grunts for dinner and then hit up a couple of bars in Lincoln Park.  It was a great night and we all had a really fun time!

Now, I am getting ready for a little birthday zumba with my mom and then grocery shopping for a birthday bbq!  We are having friends and family over tonight for a grill out and I am excited to keep the celebration going!  I also made my favorite desserts to share: Red Velvet Cupcakes and Homemade Funfetti Cupcakes.  I brought some of these in for my counselors at camp, made Homemade Funfetti Cupcakes for my campers, and now I have leftovers for today's party!

For the Red Velvet, I did the same recipe as the cake version, poured the batter into cupcake pans, and baked them for 12-18 minutes.  12 for the mini cupcakes and 18 for the big ones.  Then, I frosted them with my favorite cream cheese frosting:

16 oz light cream cheese
1/2 cup unsalted butter, at room temperature
2 1/2 - 3 cups powdered sugar
1 tsp vanilla
milk or half and half as needed

Simply beat together and frost!

For the Funfetti, I followed the exact same recipe as last year and they came out super delicious! The campers were raving!

Oreo Stuffed Brownies

Happy Sunday! I had a slight change of plans in regards to this weekend...

And by slight, I mean HUGE! I was supposed to hang with DTS on Friday night, run the Crazylegs Race Saturday morning, go to Spring Formal for DTS Saturday night and plan my lessons for the week today.

Instead, I got interviews! This is exciting, but it meant changing my life around quite a bit.  I had an interview Friday morning, and then I found out about two more interview on Monday and one on Tuesday! All of them are in the Chicago-area, so I decided to stay at home this weekend instead of driving back and forth a ton.  My Friday interview felt pretty good and then Friday afternoon, I left for Champaign with my parents to see my little bro run his first Half Marathon on Saturday! He totally killed it! Finished in 1 hour and 42 minutes! Thats fast! I'm hoping for a time around 2 hours! Then, we hung out in Champaign, had lunch and dinner, and even a little froyo for dessert! I've been keeping up on my runs by using the lovely work out facility at the hotel.  I'm also working through a few more applications and getting ready for my other three interviews tomorrow and Tuesday!

I also have a yummy recipe for you today.  And by yummy, I mean, insanely delicious.  I made brownies, but then I decided to put a layer of oreos in the middle.  It was a pretty darn good idea if I say so myself.  The brownies were amazing and the oreos provided an awesome little surprise in the middle.  This is my all time favorite brownie recipe and I love coming up with little ways to mix it up!

Oreo Stuffed Brownies





Ingredients:
8 oz bittersweet chocolate, chopped
1/2 cup + 2 tbsp unsalted butter
2 cups sugar
4 large eggs, lightly beaten
2 tbsp instant espresso powder
2 tsp vanilla
1/8 tsp salt
1 cup flour
1 10 oz package dark chocolate chips
Oreos

Directions:
1. Preheat oven to 350 and line the inside of a 13 by 9 inch baking pan with foil.  Let the foil hang over the ends of the pan.  Grease the foil.
2. In a large saucepan, over very low heat, melt the butter and bittersweet chocolate, stirring constantly with a wooden spoon. Once melted, stir in the sugar until well combined.  Next, stir in the eggs until well combined.  Then, mix in the espresso powder, vanilla, and salt.  Fold in the flour until just combined and then fold in the chocolate chips.
3. Pour half the batter into the prepared pan.  Place oreos on top of the batter.  Pour the rest of the batter over the oreos and spread out to make it even.
4. Bake for about 40 minutes.  The sides will be set and the center will be just a little wet still.  Let cool for 15 minutes.  Using the ends of the foil, lift the brownies out of the pan and place on a wire rack to cool completely.
