Kissed Peppermint Crinkle Cookies

Lately, I have been all about cookies! I love the holidays and somehow I just end up craving cookies.  Now, most people (the normal ones) actually crave eating the cookies.  Me? Nope, I crave baking the cookies.  Sure, I have to taste test them when they are done, but what really excites me is the actual baking process.  I also love how baking brings people together.  Whenever I head down to the kitchen to bake, people stop by to chat and I love it.

One day, at Target, I saw the peppermint and mint truffle kisses.  I was also shopping with my mom.  I told her that I just had to buy them and so she got them for me! It was great! Then, I set out on a search to make something fabulous with these fun holiday kisses.  Kissed Peanut Butter Blossoms are a super popular holiday cookie and so I decided to make these, but with a little twist! I found a yummy looking recipe for Chocolate Crinkle Cookies and then I adapted it to go with my minty holiday kisses.

Kissed Peppermint Crinkle Cookies
Ingredients:
1 cup cocoa powder
1 1/2 cups sugar
1/2 cup canola oil
4 eggs
1 tsp vanilla
1 tsp peppermint extract
2 cups flour
2 tsp baking powder
1 1/2 tsp espresso powder
1/2 tsp salt
powdered sugar for rolling the cookies in

Directions:
1. In a medium bowl, whisk the flour, baking powder, espresso powder, and salt.
2.  In a large bowl, beat the cocoa powder, sugar, and canola oil until well combined.  Beat in the eggs until well combined.  Finally, beat in the vanilla and peppermint.  Mix in the dry ingredients until just combined.  Cover and refrigerate the dough for 4 hours or overnight.
3.  Preheat oven to 350, place parchment paper on a few cookie sheets, and remove the cookie dough from the fridge.
4.  Pour some powdered sugar into a wide bowl.  Roll tablespoon sized balls of cookie dough in the powdered sugar and place on prepared cookie sheets.
5.  Bake the cookies for about 10 minutes.  While the cookies are baking, unwrap you kisses.  Press the kisses into the warm cookies and let cool.

Peppermint Brownies

Yet another week in Middle School has gone by and I can't belive that we are only 2 weeks away from winter break! This week, we started Looking for Pythagoras.  I think it is pretty cool how students are led to discover the Pythagorean Theorem and I think that this is going to be a really great unit to teach.

In other news, I just found out that my original Student Teaching placement for the Spring is not going to work as the teacher I was going to work with has recently decided to accept another job.  This is very exciting for him, but I had a little bit of a panic attack.  However, the school of education found another placement for me and it looks like all will be well.  I am going to be at a different school teaching geometry, algebra 2, and pre-calculus.  This sounds super awesome and I am crazy excited.  I am meeting with my new cooperating teacher next week and I can't wait to check out the new school!

This week was also exciting because I made Peppermint Brownies for the DTS study night.  Then, I had so many leftovers that I brought them in for a little teacher treat at school.  I love sharing these things with the people I care about and it was so exciting seeing how happy everyone was after having these guys.  This past summer, I tested a bunch of brownie recipes and came up with the best one: Dark Chocolate Fudge Brownies.  Then, I just adapted this recipe after being inspired by the Galley Gourmet.  You have to make these! They are a great holiday treat!

Peppermint Brownies

Ingredients:
For the Brownie Layer:
10 tbsp unsalted butter
8 oz. unsweetened bakers chocolate
2 cups sugar
4 eggs, lightly beaten
2 tbsp instant espresso powder
1 tsp vanilla
1 tsp peppermint extract
pinch of salt
1 cup flour
10 oz dark and mint chocolate chips
For the Peppermint Frosting Layer:
8 tbsp unsalted butter, room temperature
2 cups powdered sugar
2 tbsp skim milk
1/2 tsp vanilla
1/2 tsp peppermint extract
For the Topping:
4 tbsp unsalted butter
3/4 cup semi-sweet chocolate chips
crushed candy canes

Directions:
1. Preheat oven to 350 and line a 13 by 9 inch baking pan with foil.  Lightly grease the foil.
2. In a large saucepan over low heat, melt the bakers chocolate with the butter.  Stir frequently until smooth and then stir in the sugar until well combined.  Stir in the eggs until well combined.  Next, stir in the espresso powder, vanilla, peppermint extract, and salt.  Mix in the flour until just combined.
3. Pour the brownie batter into your prepared pan and bake for 40 minutes or until an inserted toothpick comes out clean.  Let cool completely
4.  Make the frosting by beating the butter, powdered sugar, milk, vanilla, and peppermint extract until well combined and fluffy.  Spread over the cooled brownies.
5.  To make the topping, melt the butter and the chocolate in the microwave for 30 seconds. Repeat until mixture is melted and smooth.  Spread over the frosting layer and then sprinkle the crushed candy canes on top.  Place the brownies in the fridge to set. Once set, cut into squares and serve!

Maple Pumpkin Souffles with Maple Whipped Cream

If you are ever in St. Louis, you need to go to Jilly's Cupcake Bar & Cafe.  I have been to St. Louis a ton and I can't believe that I just went for the first time!  They were winners on Cupcake Wars and they have been ranked one of the best cupcakes in America on The Daily Meal.  Bri and I went there for lunch and had food as well as cupcakes.  Everything was amazing, but beware, the cupcakes are gigantic! I was amazed at how big they were.  However, the cake and frosting is surprisingly light.  Somehow I managed to devour the entire thing.  We got the Reese's Chunkage and Peppermint Stick.  It was crazy good.




Now, I know that October is way over, but today's recipe is sort of like a flashback.  During October, I went a little pumpkin crazy.  I love pumpkin and so I made a ton of stuff with it.  However, I still had one can of pumpkin left over and so today's recipe had to happen.  The "future teachers" were told that we should treat ourselves in some way after the recruitment fair.  My mind immediately traveled to dessert.  I came home and Casey and I made Pumpkin Souffles and then topped them with maple whipped cream.  This recipes is really good, super simple, and amazingly light (sort of like those cupcakes).  I guess they our on my mind because I love little treats that don't make you feel absolutely terrible after you eat them.  In fact, these pumpkin souffles could be a breakfast item.  They have no flour and use light maple syrup instead of sugar.  Crazy right?  You have to try these!


Pumpkin Souffle (adapted from Serious Eats)


Ingredients:
4 eggs, separated
3/4 cup pumpkin puree
3 tbsp light maple syrup
pinch of nutmeg
pinch of salt
3/4 cup heavy whipping cream
2 tbsp maple syrup

Directions:
1. Preheat oven to 375 and lightly grease 6 6 oz ramekins.
2. In a large bowl, beat the egg yolks, pumpkin, and maple syrup.
3.  In a separate bowl, beat the egg whites until soft peaks form.  Mix a heaping spoonful of the egg whites into the pumpkin mixture and stir to combine.  Then pour the pumpkin mixture into the egg whites and, using a spatula, fold gently until just combined.  Divide the batter amongst the ramekins.
4.  Place ramekins on a baking tray and place in oven.  Immediately reduce heat to 350 and bake for 25 minutes.
5.  While they are baking, in a large bowl, beat the cream until stiff peaks.  Mix in the maple syrup.  Top finished souffles with the whipped cream.
