Guest Blogger! A story of Fresh Pasta, Eggplant Involtini and Braised Chicken Thighs

My good friend, Shantanu, is an excellent chef. Last Friday, he invited us over for dinner because he "felt like making fresh pasta." I was super excited about this and I readily agreed to come over and help. We made:
  • Fresh Pasta
  • Eggplant Involtini
  • Braised Chicken Thighs



Sigh...it was a lovely meal and although it wasn't ready for 2 hours, it was a super fun night with some great friends and amazing food. So, without further ado, here is Shantanu:



Full disclosure: I’m the reason we didn’t have dinner ready until 9:30 last Friday, but to be fair, it was a weeknight, dinner was delicious, and I had a food craving to take care of.

Food cravings are definitely a thing, one that I experience way too often. Usually, it’s something that’s full of grease and flour, of minimal nutritional value, and almost always involve fried chicken. This time though, while being a bit heavy on the carbs, the food I was craving was just indulgent enough to be worth all the extra calories. And then after a long week of the chicago cold, nothing really warms you up like a bowl of fresh, homemade pasta.

Fresh pasta is one of those foods that’s incredibly simple, it’s four ingredients including the water to boil it in and some salt for seasoning, and yet so eye opening. How making a giant mess with flour and eggs leads to flowing, delicate strands, with just the right amount of bounce to each bite is almost magical (although really, it’s more science, but I’m done with work for the week and don’t have to do any more science until Monday).

While I very well could have just sauteed some shallots, garlic, red chili flakes, and tomatoes in olive oil and tossed in batch after boiled batch of freshly cut spaghetti, cracked open a beer and called it a night, pasta is more fun to share with friends. Especially friend’s that I’d planned to make dinner for but haven’t gotten around to it. Double-especially when one’s a vegetarian and you have the perfect reason to make a vegetarian meal.

As often as I cook for friends, I rarely have to cook for vegetarians. I’d always felt a bit of pity for Brian, often times the vegetarian part is merely a collection of side dishes, or is presented as the “option” while meat is the focus of the dish. Therefore, I decided to make this meal a vegetarian meal, that happens to have a meat option, because if you don’t some of your non vegetarian friends will text you asking if they can bring a steak for you to make for them. To be fair, I was flattered, because I can make a pretty mean steak.

If there was a vegetable equivalent of flank steak, I’d say it’s the eggplant. It responds well to being heavily salted, can be grilled, or rolled and stuffed, and has a nice meaty quality to it. I’d also say both are equally nutritious, although a bavette might be more nutrition for your soul whilst eggplant is actually nutritious. One of my favorite ways to prepare eggplant that goes well with pasta, while avoiding breading and frying it, is to make eggplant involtini.

Since I did have to have a meat option, I went with the foolproof chicken thighs. Because I planned to cook them sous vide, I started preparing those first. I was hoping to get them into the water bath before everyone arrived, but sadly Brian had to witness me deboning, stuffing the thighs with rosemary and basil, and folding them tightly in the skin. 

Once vacuum sealed, they still look pretty unappetizing; if he had any doubts about being vegetarian, I think they were gone at that point.

Once that was started, I could focus on the next longest item to prepare, the pasta dough. Preparing the dough itself is quite quick, however I could use time productively to drink wine and eat some cheese, which has the side benefit of letting the dough relax and develop some gluten. To make the dough, I heavily flour my counter (and my floor, and my apron) and pour about two cups of flour in a mound, making a crater in the middle large enough for four egg yolks and two whole eggs. Swirling the yolks and whites around brings the eggs together, and slowly pulls in more and more flour. The swirling goes on until the liquid resembles more of a batter, at which point flour can be added in a bit more aggresively, and once it comes together, the kneading can begin. I’m not much of a baker, but to knead my dough I do a simple fold, push, and quarter-turn. Fold, push, quarter-turn; fold, push, quarter-turn. This goes on, until the dough feels like the sticky part of a post-it, at this stage it’s almost done, so I let Jodie handle the kneading while I went off to make some tomato sauce. Incorporate a bit more flour until the dough is just tacky, and put aside. To store the dough, I wrap in plastic wrap and set on the cleanest part of the counter



With the dough done, I got the guests going to make the filling. Some lemon zest, ricotta cheese, and fresh basil all came together in what could make a pretty decent dip on it’s own. But then after I fried up the eggplants a little to soften them, they got stuffed with the cheese and placed in a pan with the tomato sauce, with some more drizzled on top and fresh mozzarella slices to melt all over them, and got tossed into a hot oven.

Meanwhile, I consumed enough wine and cheese for a bit so it was time to roll out the pasta. Again, flour absolutely everything and cut the dough into quarters. I slowly run it through the machine at the widest setting, tri fold, rotate, and pass through again. I do this a few times, helping knead the dough, developing it a bit before stretching it out. As the rollers get closer, the pasta gets longer, eventually ready to be cut into linguine. Arrange in little nests after it’s cut, and then toss them into boiling water.

While getting the water boiling, I sauteed some garlic and red chili flakes in olive oil, keeping it warm. Once the pasta is cooked, taking only a few minutes, I toss it into the pan with a nice ladleful of starchy pasta water, helping to bind the now flavored oil to the noodles.

Last thing to be finished off is the chicken, which I pulled out of the vacuum bags, perfectly cooked, and quickly seared it off, with a bit of help from the searzall. True fact: almost everything is improved by a blast with the searzall.

And at that point, I think we were all had enough wine and were hungry enough to not give much of a damn about plating, and just dove in. It came out pretty great, hopefully the rest of the crew thought so as well! And if it wasn’t, I don’t think Jodie will ever let me post on this blog again. (Jodie here...this is totally untrue :))

Eggplant Involtini

I have a recent obsession with America's Test Kitchen.  Everything that I have made from their site has been crazy delicious and easy to do!  This recipe was no exception.  It was like an eggplant parmesan meets a lasagna roll-up and it was super yummy.  It didn't take very long to make and it ended up yielding a ton of leftovers.  Who isn't a fan of that?

I'm also pretty pumped because today is Friday and I survived my first week back at school after winter break!  Tonight we have a holiday party for school and we are going to see a show at Second City!  I can't wait! 

So, while I will be dining out tonight and seeing a show, I figured you might be looking for a special dinner to make and this one is a must!



Follow the link for specific instructions, but here are a few things that I changed/noticed while I was cooking:

1.  I ended up with more lasagna rolls than they said I would (like 18 instead of 12)
2. Instead of white bread, I used whole wheat breadcrumbs
3. Instead of whole-milk ricotta, I used 8 oz of part-skim ricotta
4. So, instead of using a food processor, I simply mixed the breadcrumbs, ricotta, parmesan and basil together in a bowl.  

Other than this, I followed the instructions exactly and my eggplant involtini came out amazing!

Spinach Pesto Eggplant Burger with Mozzarella

So camp has started, but there has been a ton of rain this week.  This means that camp doesn't really feel like camp yet.  We had a nice day yesterday at a water park, but today it is all rainy again!  I am running out of ideas for fun/interesting indoor games!  At least the kids are having fun since it is the first week and therefore exciting/new.  I just hope that this soggy summer gets a little more sunny! 

Camp means that I have a ton more time to cook!  I love this! I came up with this fun Veggie Burger recipe after making some Spinach Pesto.  Bri is a vegetarian and we just went out to dinner at Smoque so I felt like I had to make it up to him with this amazing veggie sandwich! 

Spinach Pesto Eggplant Burger with Mozzarella

Ingredients:
4-5 pretzel buns
1 medium eggplant
8-10 tbsp spinach pesto
fresh mozzarella, sliced
salt and pepper
olive oil

Directions:
1. Heat a pan over medium heat and add 1 tbsp of olive oil.  Place eggplant slice in the pan and cook for about 3-4 minutes on one side.  Flip, pour a little more olive oil in the pan and season with salt and pepper.  Continue to cook for another 3-4 minutes.  If you need to, continue to cook both sides until eggplant starts to soften.  


2. Toast the bun in the toaster and then place on a place.  Spread 1-2 tbsp of the pesto on one side and place mozzarella slices on the other.  Place eggplant slice on top of mozzarella and then put the side with the pesto on top.

Veggie and Black Bean Enchiladas

I just love enchiladas.  They are a great way to get a ton of veggies into your dinner and they are so tasty! I am trying to be a little healthier now that it is summer and I am beginning to really focus on my wedding.  I want to get in shape and lose a few pounds, but I don't want to go crazy since I still have more than a year!  So, my plan is to incorporate veggies into all my meals, portion control, and stay away from all those delicious desserts (which is going to be the biggest challenge!).  This meal was a great way to kick of my healthy-eating plan and I am definitely going to be making these again soon! 

Veggie and Black Bean Enchiladas

Ingredients:
8 whole wheat tortillas or gluten-free
1 can red enchilada sauce
1 can black beans, drained and rinsed
extra virgin olive oil
1 eggplant, peeled and diced
1 zucchini, quartered
1 squash, quartered
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper
pinch of cayenne
1/2 red onion, chopped
your favorite salsa
your favorite shredded cheese, I used a blend
3 green onions, chopped (optional)
1 avocado, sliced (optional)

Directions:
1. In a large pan, pour 1 tbsp of olive oil and heat over medium.  Add in the eggplant, zucchini, and squash.  Season with cumin, salt, pepper, and cayenne.  Toss to combine and cook until veggies start to soften.  Add in olive oil as needed.  Set aside.
2. Preheat oven to 350 degrees and pour a little enchilada sauce in the bottom of a 9 by 13 inch pan.  
3. In each tortilla, place a couple spoonfuls of the veggie mixture, a spoonful of salsa, some black beans, shredded cheese, and chopped red onion.  Roll the tortilla and place seam down in the prepared pan.  
4. Once all the tortillas are done, pour the rest of the enchilada sauce over the tops and sprinkle with some more cheese.  Cover in tinfoil and place in oven for 20-25 minutes or until cheese is melted.
5. Top with some green onion and avocado slices.

Eggplant Fontina Pasta

I just ran 10.5 miles.  All I could think was: Ok! Now just another 16 to go!  I can't believe I'm doing the marathon in October and I am already super nervous and excited for it.  I have been getting tons of emails about race information and training schedules and it is all starting to become very real.  I feel great after my 10.5 run and this makes me confident that I will get up to that 20 mile point before the big race.

Today I have lots to share.  Last night was supposed to be Bri's law school prom, but it was cancelled and in a strange twist of events, we ended up taking in a random cat for the night.  The night started with drinks and dinner at Revolution Brewpub.  The food and the beer were really good and you should try this place when you are in town! Next, we were supposed to head over to the Rail to meet up with some friends and watch the Blackhawks game, but on the way we ran into a super friendly and clean-looking cat.  He did not have a collar and people walking on the street said they had seen that cat wandering around for a few days.  He was following us around and so we figured that the poor guy was lost.  We decided to take him into a 24 hour emergency clinic to see if he was microchipped.  He was! However, the chip information had expired and we couldn't get ahold of his owners.  So, we took him back to our apartment, got him all set up in our second bedroom, and posted online about the missing cat.  Through all of this, we completely freaked our little guy, Benny, out.  Poor guy is terrified of the second bedroom now!  Anyways, it was a happy ending and the owners saw our post and came to pick up their cat.  Glad that all worked out!

Now, I am getting rehydrated, and then Bri and I are off to grocery shop, attend a birthday party, and then back to the city for a second birthday party.  All before Mother's Day tomorrow! Sheesh, we have quite the weekend ahead of us!  I am making one of our favorite pasta dishes to have on hand for the week ahead.  It is really quick and easy which is perfect considering we have like no extra time this weekend to chill out!

Eggplant Fontina Pasta

Ingredients:
1 lb. whole wheat pasta
1 medium eggplant, peeled and cubed
1 1/4 tsp salt
3 cloves garlic minced
1/2 tsp pepper
6 tbsp olive oil
1/2 lb. fontina cheese, shredded


Directions:
1. Heat 4 tbsp of olive oil in a large skillet.  Add in the eggplant, 3/4 tsp salt, pepper and garlic and toss until coated with the olive oil.  Cook over medium-high heat until eggplant softens.
2. Cook pasta according to directions until al dente, drain and set aside.
3. Combine the eggplant with the pasta and the remaining salt and olive oil.  Toss with the cheese and place into a shallow baking dish.  Broil in the oven for a few minutes or until the cheese is melted.

Eggplant Rollatini

I love Sundays.  This Sunday is a little bittersweet though.  On Friday, after school, I drove straight up to Wisconsin to visit one of my best friends, Tamara.  Tamara is also a teacher and we became besties while in college together.  I truly think we're soul-mates.  We met because when asked to draw a picture of something that represented who we are, we both drew cupcakes.  Seriously.  So it was just wonderful to be able to spend the weekend with her.

She is a basketball coach and so I got to see a bunch of games this weekend.  It was really neat to see her school and her teams playing and it was also relaxing since I got to just sit around and chill out!  I met some of the teachers she works with and it was just nice to see what she has been up to.  On Saturday, we had a great night catching up over some homemade butternut squash risotto, bruschetta, and wine.  We watched movies and had some quality girl time.  I couldn't believe how much I missed those nights from college and it made me nostalgic.  However, it also made me so grateful how close she still is and how easy it was to pop in for a visit.  Friends like this are one in a million and I am so thankful for her and this great weekend.

This is why I am feeling slightly bittersweet on this Sunday.  I had to say goodbye.  But, then I went home to my family, went for a run outside (since its incredibly above freezing today!) and got to spend some time hanging out and just catching up on schoolwork for the coming week.  Finals start Thursday, and so I am organizing my review materials, reviewing the finals, and getting ready for the new semester!  I can't believe second semester is basically here!  This year is flying by!

Anyways, besides that risotto recipe that I linked to (definitely try it!) I have a new recipe to share! THis is going to be consistent with my attempt to eat healthy and lose a little bit of weight.  It is a recipe for baked Eggplant Rollatini.  This looks like lasagna roll-ups, but instead of noodles, you use eggplant!  The extra veggies combined with the delicious cheese and spinach filling is just amazing!  If you are looking for a great meal that is healthy and can feed a crowd (or give you tons of leftovers) this is a great one to try!

Baked Eggplant Rollatini
(adapted from Skinnytaste)


Ingredients:
2 eggplant sliced lengthwise into 1/4 inch slices
salt and pepper
your favorite marinara sauce
1/2 cup light ricotta cheese
1/2 cup grated Parmesan Romano
shredded light mozzarella
10 oz frozen spinach, cooked and drained
1 egg, lightly beaten
2 garlic cloves, minced

Directions:
1. Place sliced eggplant on paper towels and sprinkle both sides with salt.  Let sit for 15 minutes and then pat dry.
2. Preheat oven to 400 and place eggplant slices on a lightly greased pan.  Season with salt and pepper and cook for 8-10 minutes or until eggplant slices are slightly softened.  Pat dry again with a paper towel.   
3. In a medium bowl, mix the ricotta cheese, parmesan cheese, cooked spinach, egg, and garlic.  Season with salt and pepper. 
4.  Pour some sauce into a 13 by 9 inch pan and spread it out to cover the bottom.  Take each eggplant slice and spread some of the cheese mixture down the middle.  Roll up the slice as tightly as you can.  Place into the pan.  Repeat with all of the eggplant slices.  Pour some sauce over the top of the eggplant rolls and then sprinkle mozzarella cheese over the top.  
5.  Bake for 60 minutes or until eggplant is very soft and cheese has completely melted.

Eggplant "Meat"balls

I have not been having the best luck these days...

My foot started hurting pretty bad after a zumba class the other day.  I tried running the next day, but it was worse! So, I went to the doctor and found out that I have tendonitis in my foot and I can't run for 3-4 weeks! I'm so bummed.  This was not how I wanted to end my summer.

Then, yesterday I woke up to discover that my eyelid was so swollen that I couldn't open my eye all the way.  It became less puffy as the morning went on, but it was still visibly swollen.  On top of all this, the skin around my eyes was really red and dry.  I had no clue what was going on!  Luckily, or coincidentally, I had an eye doctor appointment scheduled for that day.  I found out that, thankfully, there's nothing wrong with my eyes, and it's a skin problem.  So, now I can't wear eye make up, I have to go to a dermatologist, and I look sort of like a scary zombie.  Plus, I limp, which just adds to the zombie effect.

However, I did make some freaking awesome vegetarian meatballs.  My friends and I had a Godfather night, where we made pasta, meatballs, cannoli, and watched the Godfather.  A few of my friends and my boyfriend are vegetarians, so I decided to just make vegetarian meatballs!  I had heard of eggplant meatballs and so I decided to give it a try! They turned out to be really simple, super yummy, and even the meat eaters enjoyed them!

Eggplant "Meat"balls (adapted from HealthyDelish)

Ingredients:
2 medium eggplants
1/2 cup italian seasoned breadcrumbs
1/4 cup shredded parmesan cheese
1 egg, lightly beaten
1 tsp kosher salt

Directions:
1. Peel the eggplants and then shred them with the coarse side of a grater.  Sprinkle the shredded eggplant with the salt and toss to combine.  Drain out as much water as you can by squeezing the shredded eggplant with your hands.  I created 5 large balls of eggplant that I squeezed water out of and then placed on paper towels to drain some more.
2. Preheat oven to 350.
3. Place the eggplant, breadcrumbs, parmesan, and egg in a medium bowl.  Stir with a spoon until well combined.  Using a medium cookie scoop, scoop out balls of eggplant and place on a lightly oiled baking sheet.   This recipe will make about 20-24.  Mold balls into tight "meat"balls and bake for 15 minutes.  Turn each meatball over and continue to bake for another 10 minutes.  Serve over pasta!

Eggplant Rollatini

This appetizer was fantastic and we got to make it a week ahead, freeze, and then simply stick in the fridge the day before.  It was easy and delicious.  It's also a vegetarian option so it was perfect for The Dinner Party which included a couple people who were looking for meat free options.

Eggplant Rollatini is something that Chris sort of made up after having something similar at a nice French restaurant.  It's eggplant rolled up with a cheese and spinach mixture, coated in a bit of flour, egg, and breadcrumbs, and then deep fried for a minute to get it a little crispy.  Can you say yum? It's so good!

Eggplant Rollatini



Ingredients:
1 cup ricotta
1/2 cup Boursin with Garlic and Fine Herbs
10 oz. frozen spinach, thawed and with all the water squeezed out
1/2 cup artichoke hearts, drained and roughly chopped
2 tbsp fresh basil, chopped
1/2 cup grated parmesan cheese
3/4 tsp Italian seasoning
salt and pepper
2 medium eggplants
olive oil
1 cup flour
2 eggs
1 cup breadcrumbs
marinara sauce, for serving
1 cup mozzarella cheese, for serving
1/2 cup shredded parmesan cheese, for serving

Directions:
1. Peel the eggplant and then cut into rounds that are about 1/2 inch thick.  Place on a paper towel and sprinkle with salt.  Let sit for about 15 minutes so that the eggplant dries out a bit. Rinse and pat dry.  Place back on the paper towel.
2. Heat a large pan over medium heat and coat with olive oil.  Saute the eggplant, adding more oil as needed, until soft, about 5 minutes on each side.  You want the eggplant soft enough to roll. They can turn slightly brown.  Place on a paper towel lined pan and sprinkle with salt and pepper. Let cool.
3. Mix the ricotta, Boursin, parmesan, Italian seasoning, spinach, basil and artichoke hearts in a medium bowl.  Season with salt and pepper.
4. Spread the cheese mixture on each eggplant slice (if the slices are really small, you can stick two together using the cheese as glue to make a larger slice).  Roll the eggplant up.
5. Get three plates or small wide bowls, and place flour in one, two eggs (lightly beaten) in the second one, and breadcrumbs in the third.  Season the flour and bread crumbs with pepper, salt, and Italian seasoning.
6. Using tongs, pick up each eggplant roll and coat with flour, then egg mixture, and finally breadcrumbs.  Place on a wire rack.  Let sit for about 15 minutes so that they have time to set.
7. Using a pan or deep fryer, heat enough oil to cover an eggplant roll to 360 degrees.  Deep fry each roll until golden brown, about 3-4 minutes.  Place on a wire rack over a paper towel.  This will allow the grease to drain off without the eggplant sitting in it.  At this point you can continue to the next step, or place in the freezer until ready to serve.
8. When ready to serve, heat oven to 325, place eggplant rolls in a casserole dish, and heat for 15 minutes.  Heat marinara sauce in a small saucepan, drizzle marinara over the eggplant and then sprinkle with the mozzarella and parmesan cheese.  Place back in oven and heat until the cheese is melted. Serve :)

Sometimes I'm a Vegetarian

Today I got this interesting Living Social offer for a restaurant in Madison that has only vegetarian food! I thought this was a fascinating concept and I considered purchasing the deal (I love coupons).  Also, my boyfriend is a vegetarian so I thought this might be a nice place to take him for dinner when he visits! All this sounds good and is probably making you think that I snatched up that coupon right then and there...but I didn't because I really don't have money right now...I guess I will have to cook up some great vegetarian food instead!

Being someone who loves to cook can be pretty frustrating when considering the dietary habits of the people I love to cook for.  I am NOT picky...at all.  Seriously, I am willing to try almost any kind of food.  Therefore, it is slightly frustrating when people can't or won't try my food!  I love to cook with Brian, but I have to get a little creative because he is a veggie.

One of our first dishes that we created together and found that we both loved was Eggplant Parmesan.  Since then we have tried different variations, but I think we have settled on a favorite.  Martha Stewart's Baked Eggplant Parmesan is AMAZING.  It's so good and it's baked so it's good for you!  Also, it's pretty easy to make!


Baked Eggplant Parmesan (adapted from Martha Stewart)

Ingredients:
Olive oil spray for baking sheets
2 large eggs
3/4 cup plain dry breadcrumbs
1 cup finely grated Parmesan
1/2 tsp dried basil
1 tsp dried oregano
salt and pepper to taste
2 large eggplants (2.5 pounds) peeled and sliced into 1/2 inch rounds (tip: get firm/plump eggplants)
48 oz chunky tomato sauce (or more if you are cooking for Brian who is obsessed with tomatoes)
about 1 1/2 cups shredded low-fat mozzarella


Directions:
1. Preheat oven to 375 degrees. Spray 2 baking sheets with olive oil; set aside. In a wide, shallow bowl, whisk together eggs and 2 tablespoons water. In another bowl, combine breadcrumbs, 3/4 cup Parmesan, oregano, and basil; season with salt and pepper.
2. Dip eggplant slices in egg mixture, letting excess drip off, then dredge in breadcrumb mixture, coating well; place on baking sheets.  (You might need more egg or breadcrumb mixture depending on the size of your eggplant). Bake until golden brown on bottom, 20 to 25 minutes. Turn slices; continue baking until browned on other side, 20 to 25 minutes more. Remove from oven; raise oven heat to 400 degrees.
  3. Spread 2 cups sauce in a 9-by-13-inch baking dish. Arrange half the eggplant in dish; cover with 2 cups sauce, then 1/2 cup mozzarella. Repeat with remaining eggplant, sauce, and mozzarella; sprinkle with remaining Parmesan. Bake until sauce is bubbling and cheese is melted, 15 to 20 minutes. Let stand 5 minutes before serving.
4. Serve over pasta (we made green beans too!)
