Chocolate Chip Banana Bread Donuts

I love greek yogurt.  I think it is super tasty and I can't get enough of it!  Recently, Chobani was kind enough to send me a case of their greek yogurt! I was so excited to try all the fun flavors and I couldn't wait to get creative with them!

The middle school that I am at had an adorable holiday breakfast party.  We all got to school at 6:30 in the morning and had a great breakfast.  There were made-to-order omelets, eggnog french toast, fruit and a ton of yummy baked goods. Everyone pitched in in some way.  My contribution was a batch of chocolate chip banana bread donuts!  This recipe is easy to make and does not take a ton of time.  This was key as I had a very busy schedule and needed to bake something quickly.  Plus, I got to use some greek yogurt and whole wheat flour in these!  And, since the donuts are baked instead of friend, this is a pretty good breakfast treat!  The donuts were a hit! They are really cute and, of course, delicious!

Chocolate Chip Banana Bread Donuts (adapted from Janie's Kitchen)

Ingredients:
1 cup mashed ripe bananas (about two bananas)
1/2 cup sugar
1/2 cup non-fat greek yogurt (I used my Chobani!)
1/4 cup unsalted butter (melted)
2 eggs
1 tsp vanilla
2 cups white whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 cup semi-sweet chocolate chips
cinnamon and sugar for topping



Directions:
1. Preheat oven to 325 and lightly grease a mini donut pan.  This recipe will make 36 mini donuts.
2. In a medium bowl, whisk the flour, baking powder, baking soda, salt, and cinnamon.
3.  In a large bowl, beat the banana, sugar, and yogurt.  Mix in the butter, eggs, and vanilla until well combined.  Mix in the dry  ingredients until just combined.  Stir in the chocolate chips.
4.  Fill the donut pan up to the top and sprinkle some sugar and cinnamon over each donut.  Bake for about 10 minutes.  Let cool.
