Oatmeal Raisin Cookies (adapted from this recipe for oatmeal cranberry white chocolate cookies)
(makes 12-14 large cookies or about 20-24 small cookies)
Ingredients:
2/3 cup virgin coconut oil
2/3 cup packed light brown sugar
2 eggs
1 tsp vanilla
1 cup whole wheat flour
1/2 cup all-purposed flour
1 1/2 cup old-fashioned oats
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 heaping cup raisins
Directions:
1. Preheat oven to 375 and line baking sheets with parchment paper.
2. Whisk flours, oats, baking soda, salt, and cinnamon in a medium bowl.
3. In a large bowl, beat coconut oil and sugar until well combined. Beat in the eggs and the vanilla until well combined. Slowly incorporate the flour mixture until just combined. Stir in the raisins.
4. Drop spoonfuls of the batter on the prepared baking sheets and bake for about 10-15 minutes. My cookies were HUGE and so they took 15 minutes, smaller cookies won't take as long.
Enjoy :)
If anyone has any good recipes that could use coconut oil please please please send them my way! And HUGE thank you to Fatima for introducing me to this stuff :)

Yum! Berries sound like a great addition!
DeleteCoconut is my favorite oil. It's so rich, and the texture is almost velvety. Did you taste some just straight? Delicious... Not that I'm suggesting that I eat it out of the jar or anything :-)... Oh yea, that reminds me, and it bakes beautifully too!
ReplyDeleteI haven't tasted it plain...I'll have to try that soon!
DeleteI didn't have any coconut oil, so I used veg oil and shredded coconut instead. Boyfriend loved em. :)
