Kissed Peppermint Crinkle Cookies

Lately, I have been all about cookies! I love the holidays and somehow I just end up craving cookies.  Now, most people (the normal ones) actually crave eating the cookies.  Me? Nope, I crave baking the cookies.  Sure, I have to taste test them when they are done, but what really excites me is the actual baking process.  I also love how baking brings people together.  Whenever I head down to the kitchen to bake, people stop by to chat and I love it.

One day, at Target, I saw the peppermint and mint truffle kisses.  I was also shopping with my mom.  I told her that I just had to buy them and so she got them for me! It was great! Then, I set out on a search to make something fabulous with these fun holiday kisses.  Kissed Peanut Butter Blossoms are a super popular holiday cookie and so I decided to make these, but with a little twist! I found a yummy looking recipe for Chocolate Crinkle Cookies and then I adapted it to go with my minty holiday kisses.

Kissed Peppermint Crinkle Cookies
Ingredients:
1 cup cocoa powder
1 1/2 cups sugar
1/2 cup canola oil
4 eggs
1 tsp vanilla
1 tsp peppermint extract
2 cups flour
2 tsp baking powder
1 1/2 tsp espresso powder
1/2 tsp salt
powdered sugar for rolling the cookies in

Directions:
1. In a medium bowl, whisk the flour, baking powder, espresso powder, and salt.
2.  In a large bowl, beat the cocoa powder, sugar, and canola oil until well combined.  Beat in the eggs until well combined.  Finally, beat in the vanilla and peppermint.  Mix in the dry ingredients until just combined.  Cover and refrigerate the dough for 4 hours or overnight.
3.  Preheat oven to 350, place parchment paper on a few cookie sheets, and remove the cookie dough from the fridge.
4.  Pour some powdered sugar into a wide bowl.  Roll tablespoon sized balls of cookie dough in the powdered sugar and place on prepared cookie sheets.
5.  Bake the cookies for about 10 minutes.  While the cookies are baking, unwrap you kisses.  Press the kisses into the warm cookies and let cool.

  4. I agree with you; I'm more excited about baking sweet treats than actually eating them! Most of the time I just bring what I bake to work and give them to co-workers. :) These cookies look delicious; thanks for sharing on Foodie Friends Friday!
