Flourless Peanut Butter Cookies

I am not feeling so hot today.  I only have three more days of school until winter break, but I am melting down.  I am clearly fighting off a cold and I just feel awful.  I am crazy tired and I can't wait to sleep...like all day.  What worries me most, is that I just don't have time for a cold.  I did not leave room in my schedule for that sort of nonsense and so I really can't get sick.  I have three days of school, then a wedding, and then a trip to South Carolina.  No time for being sick!

So, here I am, trying my best to breathe through my nose and not hack up a lung.  Also, I am not acknowledging my exhaustion or impending headache.  I am going with the theory that all of these things are just in my mind and that I am not actually feeling them.  Has this method worked for anyone?

Also, I figured that I should share something amazing today so that I might feel a little more amazing.  I already mentioned that I was on a cookie kick and so today I have another cookie recipe!

My last big event as fundraising chair for my fraternity was a bake sale (of course.) I had a bunch of ideas, but I knew I wanted at least one gluten free option.  Here it is! Gluten free peanut butter cookies.  I adapted a recipe from the Food Network and it was amazing! These cookies were the perfect flavor.  They are soft on the inside and slightly crispy on the outside.  Plus, they are so simple! Next time I make them I might even add some jelly to make thumbprint cookies or chocolate chips to spice things up a bit.

Flour-less Peanut Butter Cookies 

Ingredients:
1 cup natural, creamy peanut butter
1 cup sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt

Directions:
1. Preheat oven to 350 and line a baking sheet with parchment paper.
2.  Place all the ingredients in a large bowl and beat with an electric mixer until well combined.
3.  Scoop out tablespoon sized balls of cookie dough and place on the prepared cookie sheet.  Using a fork, press down on the dough to flatten it slightly.  Do this in perpendicular (yay math) directions to create that classic peanut butter cookie design.
4. Bake for 10 minutes and let cool.
