Oatmeal Raisin Cookies-with a twist!

I recently won a blog giveaway from Fatima over at Magnolia 75: The Baking Lounge! The other day I received my Virgin Coconut Oil in the mail and since then I have been thinking of ways to use it!


I'm not sure why, but this morning I woke up craving Oatmeal Raisin Cookies.  The other night my family and I went to a new frozen yogurt place in town and I tried the oatmeal cooking frozen yogurt, that might have been the cause of my inspiration.  So, this afternoon, I literally took a recipe I used before and instead of butter, I used the coconut oil.  I also made some changes to the other recipe to make them cinnamon raisin themed instead of cranberry white chocolate chip.  And there you have it, Oatmeal Raisin Cookies using Virgin Coconut Oil! This stuff is supposed to be fabulous and super healthy.  I don't know much about it, but I'm excited to learn.

Oatmeal Raisin Cookies (adapted from this recipe for oatmeal cranberry white chocolate cookies)
(makes 12-14 large cookies or about 20-24 small cookies)



 Ingredients:
2/3 cup virgin coconut oil
2/3 cup packed light brown sugar
2 eggs
1 tsp vanilla
1 cup whole wheat flour
1/2 cup all-purposed flour
1 1/2 cup old-fashioned oats
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 heaping cup raisins

Directions:
1. Preheat oven to 375 and line baking sheets with parchment paper.
2. Whisk flours, oats, baking soda, salt, and cinnamon in a medium bowl.
3. In a large bowl, beat coconut oil and sugar until well combined.  Beat in the eggs and the vanilla until well combined.  Slowly incorporate the flour mixture until just combined.  Stir in the raisins.
4. Drop spoonfuls of the batter on the prepared baking sheets and bake for about 10-15 minutes.  My cookies were HUGE and so they took 15 minutes, smaller cookies won't take as long.

  2. The coconut oil is an awesome ingredient to have. I feel in love with mine from the first time I used it. Just knowing it is in these cookies along with some other tasty ingredients indicates a winner to me. Delicious post!

  4. YAY! I made oatmeal berry cookies with coconut oil too!! (ah..like minds). These are awesome I like the heaping cup of raisins, I don't know how some recipes call for only 1/2 cup pshh. Also only 15 minutes this recipes is a winner :)

  5. Coconut is my favorite oil. It's so rich, and the texture is almost velvety. Did you taste some just straight? Delicious... Not that I'm suggesting that I eat it out of the jar or anything :-)... Oh yea, that reminds me, and it bakes beautifully too!

  6. I didn't have any coconut oil, so I used veg oil and shredded coconut instead. Boyfriend loved em. :)
