National Peanut Butter and Jelly Day

Today, April 2nd, is National Peanut Butter and Jelly Day!!!!

I am in St. Louis visiting my boyfriend because it is my spring break! Unfortunately, it is not his spring break and so he had to go to class this morning. 

I kicked off my day with an amazing 6.3 mile run in the park and now I am going to make Bri a surprise PB&J lunch!  PB&J has to be one of the greatest inventions of all time.  You know, next to computers and cell phones.  A while ago, I was at work and (of course) browsing pintrest.  I came across a picture of PB&J Sushi.  I thought it was a really cute idea! Then, today, I was looking at some inspiring PB&J recipes and found this one on Food Network for PB&J Roll-Ups.  I decided to combine the two ideas into a crazy PB&J Sushi Roll-Up!

PB&J Sushi Roll-Ups (adapted from allrecipes and Food Network)




Ingredients:
2 slices whole wheat bread
1 heaping tbsp low-fat cream cheese
1 heaping tbsp of your favorite jelly (I used cherry preserves)
Your favorite peanut butter (mine is Natural Creamy by Skippy)

Directions:
1. Cut off the crusts from the bread and flatten using a rolling pin (or a coffee mug...that's what I used).  Spread peanut butter on each slice.
2. Mix the jelly and cream cheese together and then spread on top of the peanut butter.  Now, just roll up the bread and cut into cute little sushi-like rolls.

  2. Very cute sushi! I'll have to try that with my son. He's six and pretty darn good at using chopsticks, too!

    I just came from St. Louis visiting my family for Easter. Thats where I'm from (go Bilikens!). Enjoy all that wonderful city has to offer...its the best!
