Chocolate Chip Banana Bread Muffins

Did I mention that I like mini things? I'm pretty sure I have multiple times, but here I go again.  I just bought the cutest mini muffin pan and I can't wait to use it.  I found a great recipe for petite banana bread loaves and it suggested making muffins too.  I decided this was the perfect way to get ready for DTS Study Night and break in my mini muffin pan!

Mini Chocolate Chip Banana Muffins (inspired by Skinny Taste)

Ingredients:
3 ripe bananas
1 1/4 cups flour
3/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 tbsp butter
1/3 cup brown sugar
2 egg whites
1/3 cup plain applesauce
1/2 tsp vanilla
1 1/2 cups semi-sweet chocolate chips

Directions:
1. Preheat oven to 325 degrees.  Spray mini muffin pan with cooking spray.  (I was able to make 24 mini muffins and 6 large ones).
2. In a small bowl, mash the bananas.  In a medium bowl, mix the flour, baking soda, salt and cinnamon.
3.  In a large bowl, cream butter and sugar.  Add in egg whites, bananas, applesauce, and vanilla.  Mix until well combined and mixture is thick.  Add in the flour mixture and mix until just combined.  Stir in chocolate chips.
4.  Pour batter into the muffin pans and bake.  Mini muffins will take about 20 minutes and large muffins will take around 23-25 minutes.
