No Class? Ok! Let's make cookies!

In the School of Education at the University of Wisconsin, you take all of your classes with the same 30 people known as your learning community.  This could be a recipe for disaster.  However, my learning community (also referred to as LC2) has turned into a sort of crazy family for me.  I seriously have found the most amazing friends in this group and cannot believe what good luck I have had being surrounded by these people for the entire semester.  With a group of 30, I feel as though the odds of every single person being fantastic is decently low (or maybe I've just had bad luck in the past).  But, seriously, I love everybody and I can't help feeling super lucky because of this.

Today is our last day of our Curriculum and Instruction class.  We have spent the semester learning about students with disabilities and inclusive schooling.  This class has been incredibly beneficial for learning to to cater a classroom to diverse learners and the skills I will take away from this class will be so helpful for when I am teaching.  We were supposed to have an English as a Second Language Seminar in the morning before our class, but unfortunately it got cancelled.  As I read the e-mail explaining how there will not be class, I immediately decided that this was a sign to bake!  I want to make something special for these 30 people to celebrate our last day and surviving (well almost) this first semester in the School of Ed.

I LOVE my chocolate chip cookies, but I wanted to spice it up a bit.  I've been feeling festive with the holidays right around the corner and those Cranberry Bliss Bars from Starbucks have been calling my name.  I decided to incorporate some of those flavors into my cookies and make: Cranberry White Chocolate Cookies.

Cranberry White Chocolate Cookies 

Ingredients: 
3 cups flour
3/4 tsp baking soda
3/4 tsp salt
1/2 tsp nutmeg
2 sticks butter, softened
3/4 cup sugar
1 cup brown sugar
1 tbsp vanilla
1 egg
1 egg white
1/2 cup white chocolate chips
1/2 cup dried cranberries

Directions: 
1. Mix and set aside flour, baking soda, salt, and nutmeg.
2. In large bowl, mix butter, sugar, brown sugar, and vanilla.  Add egg and egg white to mixture.
3. Gradually add in flour mixture and mix until incorporated.  Gradually stir in chocolate chips and dried cranberries.
4. Drop on ungreased cookie sheet. Bake at 350 degrees for 15 minutes.

  1. These look delicious! Mostly cause I love cranberries but also cause I'm currently sitting in the library trying to study and would much rather just eat ALL your cookies! :P Have a nice Saturday! :)
